Two plates with homemade slow cooker meatballs

Homemade Italian meatballs and sauce is one of my absolute favorite dinners. There’s pretty much nothing better than walking into the kitchen and smelling slow cooker meatballs that have simmered all day. It’s so cozy and comforting!

This slow cooker meatball recipe is super easy to make but seriously rich and flavorful. Serve them over pasta or zucchini noodles, on bread, or even on top of a salad!

Crockpot Meatballs

This slow cooker recipe is one of my favorite ways to get a healthy dinner on the table without much fuss.

I love using my crock pot on weeknights because I can start dinner in the morning and let it cook for me.

A few months ago, I would have said I like to start the slow cooker in the morning before I leave for work, but even now while I’m working from home it’s still nice to not have to worry about cooking come dinner time. I feel like I’m being pulled in a million directions these days, so one less chore that I have to do on a set schedule is always nice!

If you enjoy making healthy meals in your slow cooker too, be sure to keep your eyes peeled – I have a huge announcement coming in a few days that I just know you’re going to love.

What kind of ground beef should I use for meatballs?

For these crock pot meatballs, I use 93% lean ground beef. It strike the perfect balance of being tender and flavorful without being too greasy. You can get away with a higher fat content when making meatballs on the stovetop since the grease can be drained away, but for the slow cooker, lean is definitely the way to go.

For this particular recipe I decided to keep things simple and use only beef. You can also make spicy pork meatballs or use even ground turkey.

The Gardein products I use in this video were sent to me by Conagra. I was also supplied with a Breville Combi Wave to cook my recipes.

Our family loves meatballs so I love having a variety of ways to serve them. This pineapple teriyaki sauce recipe is a winner! It’s so simple to make (in the microwave!) and I’ve served it here on skewers as an appetizer, but we also love it over rice for dinner.

Ingredients for Teriyaki Meatballs

Here’s what you’ll need to make this recipe: 12-16 oz bag of frozen meatballs– I used Gardein Meatless Meatballs since I’ve been trying to follow a “Meatless Monday” routine. My kids aren’t even aware the meatballs don’t actually contain meat- they taste great! I love that they’re high in protein as well. If you haven’t tried Gardein products, stop by the freezer aisle and check them out!

Pineapple chunks – I used a 20-oz can, but you can also cut up fresh pineapple. You’ll need about 2.5 cups of 1″ cubes Bell pepper– cut into 1″ squares Teriyaki Sauce Ingredients– you’ll need cornstarch, soy sauce, brown sugar, minced garlic and ginger, and then pineapple juice

How to make Pineapple Teriyaki Meatballs

Combine frozen meatballs, pineapple and pepper in a medium sized baking dish. Preheat oven to 450° F. I used my Breville Combi Wave 3-in-1 to cook this entire recipe. It’s the size of a toaster oven but does SO much more! It’s an air fryer, convection oven and inverter microwave all in one appliance. It was so simple to use it for heating the sauce, then cooking the meatballs all in a small, countertop appliance.

Make the Teriyaki Sauce

Whisk together cornstarch and soy sauce in a 2 cup measuring cup. Add in brown sugar, garlic, ginger and pineapple juice. Whisk, then microwave for 2 minutes. Whisk until smooth and return to microwave for another 2 minutes, until sauce is bubbling and beginning to thicken.

Lion’s Head Meatballs – They Look Good Enough to Eat You by Gordon Ramsay

Lion’s Head Meatballs – They Look Good Enough to Eat You

I’m a big fan of meatballs, and a really big fan of really big meatballs, so you can imagine my excitement when I heard about something called Lion’s Head Meatballs, which were described as not only extra large in size, but also supposedly looked like the head of a lion. As it turned out, only half those claims were true, but they were so tender, and so tasty I quickly forgave any visual exaggerations.
