Pasta Carbonerano, a mix between carbonara and nerano. A truly surprising and delicious combination of Roman and Neapolitan tradition for this recipe created by the chef Francesco Volpe. It’s not the classic carbonara with courgettes as together with the grated pecorino we will also add the provolone del monaco, typical of Nerano pasta, to give an even richer and more delicious flavour. Pasta Carbonerano

Ingredients for Carbonerano

  • Pasta 240 gr
  • 3 egg yolks
  • One pack of diced smoked bacon
  • Pecorino to taste
  • provolone del monaco to taste
  • Courgettes 500 gr
  • Salt Pepper Oil to taste
  • Onions to taste (half would be fine)

Proceedings for Carbonerano

The preparation of this recipe is really very simple. It resembles the classic bacon and egg with some variations. To prepare this dish, start by cutting the courgettes into round slices about one centimeter wide and brown them in a pan with onion and bacon and just a drizzle of extra virgin olive oil as the melted bacon fat will give even more flavor to the courgettes.

For the egg cream same procedure as bacon and egg therefore only egg yolks with pecorino and pepper but also the addition of grated provolone del monaco. Add the pasta to the pan with coarse salt and, halfway through cooking, drain it into the pan with the courgette and bacon seasoning. We then continue cooking, adding if necessary a few ladles of pasta cooking water so that it is almost risotto in the courgette and bacon sauce. Once the pasta is cooked, turn off the heat and add the egg mixed with the cheeses and stir. It is important that the heat is off so as not to overcook the cream, this way it will have the right consistency. Plate and serve. Enjoy your meal

If you like standard Chex snack mix, you’ll love this spicy buffalo version even more. How do I know? My mom makes traditional Chex mix around the holidays every year, and this year is no different. But, when I made this Buffalo Ranch Chex Mix she immediately said I would need to make more and wanted to know if she could have the recipe.

Ingredients for Harvest Chex Mix

  • Rice Chex Cereal- this is the one I used in this recipe, but you can also use Corn, Wheat or even Honey Nut Chex in this recipe as well.
  • Pretzels-the mini twists are the best
  • Bugles-these are those super salty, tasty horn shaped chips. They add a delicious saltiness to this recipe and are easily found in the chip section at your local grocery store.
  • Peanuts-dry roasted peanuts
  • M & Ms-you could go for any variety for this recipe if you are feeling adventurous
  • Reese’s Pieces candies
  • Harvest Mix-the candy corn mixture that has pumpkins and different colors of candy corn

Pumpkin Spice Coating Ingredients

  • Butter
  • Brown Sugar
  • Vanilla
  • Pumpkin Spice

How to make Harvest Chex Mix

In a large mixing bowl combine the cereal, pretzels, Bugles and peanuts. Toss to combine and mix them up.

Place the butter and brown sugar in a microwave safe bowl. Microwave on high for 1 minute, stirring half way.

Add the vanilla and pumpkin spice to the melted butter and brown sugar mixture.

Pour the pumpkin spice mixture over the cereal mixture in the bowl and toss with a wooden spoon or spatula until everything is coated.

Prepare a baking sheet by lining with parchment paper or spraying with cooking spray. Pour the cereal mixture out evenly onto the baking sheet and bake in a 275º F oven for 30 minutes, stirring after 15 minutes.

After it is done baking, remove from the oven and allow to cool on the baking sheet. Pour into a large serving bowl and add in the rest of the candy. Toss to combine and enjoy!!

Instructions

  • In a microwave safe bowl, combine the butter and brown sugar. Place in the microwave and cook for one minute, stirring half way. Remove from the microwave and stir in the vanilla and pumpkin spice

  • Pour the pumpkin spice mixture over the cereal mixture and stir to evenly coat.

  • Pour out onto the prepared baking sheet and bake for 30 minutes, stirring after 15 minutes.

  • Remove from the oven and allow to cool. Place in a serving bowl and toss in the Reese’s, M & Ms and Harvest Mix.
