These Chicken Nachos are the best because of the homemade cheese sauce – it’s incredible! This cheese sauce is one that we make often at our house for lots of different recipes, and it fits in perfectly with this dish.  I prefer using a cheese sauce in nachos instead of just using shredded cheese because the consistency is so creamy and you don’t have to worry about the cheese not melting completely!

And I just can’t bring myself to use the really processed nacho cheese sauce you can buy in a can. This recipe uses real cheese in the recipe, along with a few other very simple ingredients, and it only takes a few minutes to make.

My kids love nachos, and I love them because you can add as many veggies and toppings as you want, or you can keep them extremely simple and they are still delicious. Many times we end up having half of the tray of nachos be completely loaded, while the other half is pretty plain…and everyone is happy. Fast, simple, delicious dinner recipe that the whole family loves!

What type of chicken to use in chicken nachos?

I like to use a rotisserie chicken because it is so convenient and flavorful, but you can make your own cooked and shredded chicken very easily. My favorite way to cook chicken is in a slow cooker.

HOW TO MAKE SHREDDED CHICKEN

  • 4 boneless, skinless chicken breasts
  • 1 14.5-oz can chicken broth
  • salt & pepper

Add chicken to a 4-quart slow cooker and pour the chicken broth on top. Add a few shakes of both salt & pepper. Cover and cook on low for 6 hours and remove chicken & shred with 2 forks. At this point, the chicken should fall apart fairly easily and be super moist and tender.

Homemade Cheese Sauce recipe:

  • 1 1/2 TBSP butter
  • 1 Tbsp cornstarch
  • 1/2 tsp salt
  • 1 cup milk
  • 2 cups shredded cheese (I prefer to use a Mexican blend, but regular cheddar or cheddar/jack cheese is great too!)

Black beans, chicken and jalapenos

Nachos

  • 7-8 oz tortilla chips (about half of a regular sized bag)
  • 2-3 cups chicken, cooked and shredded
  • black beans, rinsed and drained
  • sliced olives
  • tomatoes, diced
  • jalapenos, de-seeded and diced
  • guacamole
  • sour cream

How to make Chicken Nachos with Homemade Cheese Sauce

  1. To make the sauce, melt the butter over medium heat in a small saucepan. Add the cornstarch and salt and stir until well combined. Add the milk and stir constantly until boiling. Continue to stir and boil for one minute. Reduce heat to low and add the cheese, stirring until cheese is completely melted. Keep on low heat until ready to add to the nachos.
  2. Heat the chicken, black beans and jalapenos over medium heat in a saucepan until heated through.
  3. Arrange the tortilla chips on a large jelly roll pan. Pour the cheese sauce over the chips, and then add the chicken/bean mixture. Sprinkle the remaining ingredients on top (tomatoes, olives, guacamole, etc) and then serve immediately.
  4. If you want the chips to be a little more crispy and you want the tomatoes, olives, etc. heated also, you can place the whole tray in the oven at 400° for about about 8-10 minutes. Make sure to bake before adding sour cream or guacamole. This step is totally optional as the cheese, chicken and beans will be heated up and warmed already, even without the oven!

Excellent Mexican is always in demand at my house. But I prefer to cook once and eat several times, so this recipe produces enough for four servings. It is easy to double and does store well.

There are many versions of crock pot chicken tacos. Some use just dry spices, commercial taco mix, or salsa. All are good I’m sure, but I don’t want shredded chicken with a little add on taste, I want to taste the whole thing.

A great crock pot recipe is gold in most kitchens. The five rating might be a little generous, but we loved it.

Pro Tips: Recipe Notes for Crock Pot Chicken Taco/Nachos

I wanted this to come out spicy and not too wet. The chicken would release some moisture so only one can of Rotel, some dry spices, and the leave the top ajar for the last hour or so to dry out some more.

Rotel vs. Salsa

Actually, for this recipe, I have used both with excellent results. While not exactly the same thing and I wouldn’t use straight Rotel as a chip dip, just use a salsa you love, and you will love the results.

If it is a spicy salsa, you will need to dial back the spices a bit.

The Crock Pot

I used my 3 1/2 qt crock pot. A larger crock pot would work and can make a double ore ddd triple recipe. If you double the recipe, you should use a bigger pot.

Start with two medium-size skinless boneless chicken breasts. These can be fresh or thawed of frozen.

In a smaller crock pot, mix 10 oz of Rotel (or salsa) with chili powder, cumin, garlic powder, onion powder, salt, and pepper. Mix well. Nestle the chicken breast into the crock pot and spread the mixture over the breasts.

Cook on low for 5 hours. About 4 hours into the cooking, remove the chicken breasts and shred.

Mix the chicken back into the liquid. Leave the top of the crock pot ajar to allow moisture to vent and finish the 5 hours total cooking time.

Pro Tips:

  1. You can use chicken thighs for this.
  2. If using salsa, use mild or if using spicier, adjust the other spices down some.
  3. Good refrigerated for 3-4 days and frozen for 3-4 months.
  4. I used my 3 1/2 qt crock pot. You may use a bigger crock pot which would be good if doubling or tripling this recipe.

These nachos are seriously insanely delicious!  The roast gets cooked in the slow cooker, shredded up and devoured by your guests at rapid speed!  You will definitely enjoy this very gourmet version of nachos. And the sauce.  Let’s talk about this sauce. You may have to stop yourself from eating it by the spoonful.  Go ahead, I won’t tell!  I can just imagine how perfect these would be at the superbowl party next year. You’ll Need:

Ingredients
  • 3-4 lbs bottom round beef roast
  • ½ cup worcestershire sauce
  • ½ cup bbq sauce
  • 1 T. garlic salt
  • fresh pepper
  • 1 lb onion
  • 1 lb carrots

Instructions
  1. Place roast in slow cooker.
  2. Season with garlic salt and pepper.
  3. Mix worcestershire and bbq together and pour on top.
  4. Add veggies.
  5. Cook on low 8 hours.
  6. Shred beef when done with 2 forks.
  7. Lay beef on tortilla chips and top with sriracha sauce if desired. I also added chives! be creative and add your favorite toppings!
