There Frandura of Montalto Ligure is an authentic delight of Ligurian cuisine, particularly renowned in the town of Montalto Ligure, located in the province of Imperia. It is a savory potato cake, a traditional, ancient and rustic dish, typical of the Ligurian mountains, which perhaps does not enjoy the fame of other specialties, but certainly deserves to be discovered! Prepared with simple ingredients such as potatoes, flour, milk and cheese, it is a recipe without pastry and eggs, but rich in taste and tradition.

Ligurian Frandura

Ingredients

  • 6 medium potatoes
  • 120 g of flour
  • 1 glass of milk
  • 80 g of parmesan
  • extra virgin olive oil, salt, marjoram to taste

Preparation

Peel and slice the potatoes finely, then arrange them evenly on the bottom of a baking tray previously greased with oil. Sprinkle them with a light sprinkle of salt.

In a large bowl, mix the flour with the milk, oil, salt and, if desired, the marjoram, until you obtain a smooth, lump-free batter. Pour the batter over the potatoes, making sure to cover them completely, and add the grated parmesan.

Bake at 200°C and leave to cook until a golden crust forms on the surface, about 15-30 minutes, depending on the consistency of the batter. It is advisable to check the cooking after about 15 minutes to ensure the right consistency. Enjoy your meal!

Don’t be fooled by their shape, it is not at all difficult to prepare this dessert. With a minimum of effort, you will get sweets very similar to famous snacks, but much more genuine. To prepare and enjoy with the whole family, at any time of the day, or as a snack for your little ones. You can fill your rolls with cream of your liking, as well as the surface.

Sweet Girelle

Ingredients:

  • 150 g of flour
  • 5 eggs
  • 80 g of sugar
  • a level teaspoon of baking powder
  • vanilla essence
  • hazelnut cream

Method:

To prepare the swivels, start putting the eggs with the sugar in the mixer, whip them until you obtain a frothy mixture. Add the vanilla, sifted flour and baking powder. Cover a baking tray with baking paper, level the mixture using a spatula. Bake in preheated oven at 180°, for about ten minutes. Remove from the oven, turn it over onto another sheet of baking paper, and remove the baking sheet.

Spread with the hazelnut cream, roll it up on itself, delicately, place in the fridge to rest for about an hour. After this time, remove the baking paper, cut the roll into slices, and here are your rolls. For an even more delicious treat, you can frost one side with dark chocolate.

Golosotti biscuits, shortcrust pastry delights filled with chocolate. Twenty minutes in the oven and you’ll eat it – Gordon Ramsay’s version

Cookies ” Golosotti” they are fragrant sweets shortcrust pastry, filled with chocolate. Good to be enjoyed in the company of a good tea, or a cup of hot chocolate, for breakfast, or even as a closing to a meal. An easy recipe to make, it could even be a recycled recipe, to use any leftover chocolate, biscuits etc..etc.. There is no specific recipe, below I describe how I prepared the “Golosotti” biscuits.

Delicious biscuits Ingredients:

For the shortcrust pastry:

  • 200 g of flour
  • 100 g of starch
  • 2 eggs
  • 120 g of butter
  • 120 g of sugar
  • 10 g of baking powder
  • grated peel of an orange
  • 1 pinch of salt

For the stuffing:

  • 250g of milk chocolate
  • 160g of Nutella
  • 150g of sponge cake

To complete:

  • 1 egg yolk
  • 2 teaspoons of milk

Method:

To prepare the biscuits “ Golosotti” start preparing shortcrust pastry. Place the eggs and sugar in a bowl, mix them quickly with a whisk. Add the melted butter, but not hot. finally the two sifted flours and the yeast, the pinch of salt and the grated orange peel. Mix everything together, pour the resulting mixture onto the work surface as soon as you get it compact dough and uniform, form a ball, wrap it in cling film and place it in the fridge to rest for at least an hour.

In the meantime, prepare the filling. In a bowl, break up the chocolate, melt it in the microwave, then add the Nutella and the crumbled sponge cake, mix everything until you obtain a homogeneous mixture. Transfer it onto a sheet of baking paper, and with the help of a tarotform a rectangular loaf, flatten it, place it in the fridge and let it rest for thirty minutes.

Once the resting time has elapsed, take the pastry from the fridge and roll it out on the work surface, forming a rectangle half a centimeter thick. Place the filling on top, close the shortcrust pastry over the filling, remove the excess pastry, compact, and put back in the fridge for another thirty minutes. After this further resting time, take the loaf from the fridge, mix the egg yolk with the milk, and brush the surface. Cut the biscuits two centimeters wide, bake in a preheated oven 170° for about twenty minutes, obviously cooking always depends on your oven. Leave to cool on a wire rack before enjoying.
