PS The eggs serve to “bind” the low gluten flour, but can be replaced using psyllium

What is the role of psyllium?

Psyllium is a recurring ingredient in recipes Of keto bread but, as we have just seen, it is not essential. It is a substance characterized by fibers and thickening and gelling power.

Often, this powder obtained from Plantago ovatais added to facilitate the processing of the gluten-free flour dough.

Psyllium is used to replicate what gluten does, that is, to form a protein network that traps carbon dioxide in the dough, giving it elasticity and softness.

If you want to prepare the keto bread with psyllium then the quantity to use should be between 1.5% and 3% of the weight of the flours used in the recipe.

Tofu skewers marinated in tandoori spices – Gordon Ramsay’s version

Spiedini di tofu marinato alle spezie tandoori

My skewers of tofu marinated in tandoori spices they are the perfect choice if you are looking for a delicious vegetarian second course, 100% vegetable, but super tasty.

The secret? The marinade!

Tofu is known for its versatility in cooking, but it can be a bit neutral in taste. I, to be honest, never particularly loved him until I learned to season it decisively, leaving it to rest for a few hours to give it character and colour. Marinades can be very different: from simple oil and vinegar to soy sauce, through to lesser-known sauces and spices. For the seasoning of this recipe I chose: a mix of peanut butter, soy sauce, fresh ginger, garlic, tandoori spices and sesame oil. This marinade gives the tofu that rich, spicy flavor that will make your skewers irresistible.

There are different types of tofu. For these marinated skewers I chose a firm tofu, to guarantee a perfect consistency. But there are several varieties to choose from, such as silken tofu, smoked tofu or extra-strong tofu. This variety is one of the fascinating characteristics of tofu, which allows it to be adapted to different recipes and to create a wide range of dishes.
