Easy-peasy weeknight meals have been the name of the game lately. And for more than one reason too! With my house a little more full than usual, the last two and a half months of school upon us, and birthday season on the horizon… it’s all I can do to stay above water anymore! These Skinny Pesto & Ricotta Stuffed Shells are made with just a handful of ingredients and couldn’t be more easy to make.

Just because they’re simple, doesn’t mean they’re lacking flavor either. Oh-no. Not these shells. As we’re coming into Spring, we’re coming into fresh basil a plenty. My backyard tends to get taken over by basil to the point that I tend to run out of things to do with it. I’m not complaining about that though. Bring on the basil!

Bowls are all the rage right now. Breakfast bowls. Lunch Bowls. Dinner bowls. Healthy bowls! Fortunately, this bowl can be either of those. One of the best parts about this bowl though is that it’s super easy to put together. This bowl starts with some cooked quinoa and is layered with greens, avocado, pesto, and of course – an egg!

For a quick and easy entree, try these flavourful stuffed mushrooms with one of kitchen essentials – Pesto, homemade or storebought and Cheddar cheese. Field mushrooms have an intense, robust flavour and a dense, meaty texture which make them a perfect container for the recipe, but flesh tomatoes would work just as great.

Spinach Pesto
  • 4 Jumbo field mushrooms
  • 60 g Kerrygold Cheddar dices
  • 70 g Baby spinach leaves
  • 30 g Toasted pine nuts
  • 30 g Parmesan, grated
  • 2 Garlic cloves, crushed
  • 60 ml Olive oil
  • Black salt & freshly ground black pepper
  1. To make the spinach pesto, place the spinach, pine nuts, Parmesan, garlic and oil in the bowl of a food processor and process until well combined. Taste and season with salt and pepper.
  2. Preheat oven to 200C/400F. Trim stems from mushrooms. Spoon the prepared pesto onto the mushrooms and top with Cheddar. Bake for 25 minutes or until mushrooms are tender and cheese is melted.
