What is an icebox pie?

An icebox pie is (as you could probably guess) a pie that is kept and stored in the freezer. Typically these pies are made with only a handful of ingredients usually including whipped topping as part of the pie base.

I really like freezer pies for a few reasons. First, if they are kept in the freezer, they can be made a head of time and will stay fresh for a couple weeks. Second, not much is more refreshing than a slice of freezer pie after being out in the sun all day long. (I know, it’s February. A girl can dream of sunshine though, right?)

In my opinion, this Lemon Cream Pie takes home the gold medal for both easy and delicious. That isn’t even the best news.. the flavor options are unlimited. Yes, you heard me right!

How can I change the flavor of my icebox pie?

In a lot of icebox pie recipes, frozen drink concentrate is used. For instance, frozen lemonade concentrate or orange juice concentrate. This recipe uses powdered drink mix (like crystal light). How many options did you debate between the last time you were at the grocery store?

The options are endless!

I am so excited to give this a try with raspberry or peach drink mixes!

How to make Icebox Lemon Pie

Making a freezer pie like this Icebox Lemon Pie is extremely easy. First thing you will do is stir an entire drink mix packet and can of sweetened condensed milk together. Like mentioned above, if lemonade isn’t your thing, you can substitute for any flavor of drink mix.

This is the large drink mix packet (the kind to make 2 quarts of lemonade) not the single serving packets.

Stir until completely combined. The mixture should not be gritty at all.

Next, fold in 4 oz of whipped topping. (pssst. that is 1/2 of a regular sized container!)

Once the mixture is completely combined, spread it in the bottom of a graham cracker pie crust. You can certainly make your own here, but I prefer to buy a store-bought one to keep this pie as simple and fast as possible.

Top the pie with the remains 4 oz of whipped topping and freeze for at least 2 hours before serving.

Can whipping cream substitute whipped topping?

Yes, you can use real whipped cream instead of the whipped topping. To make whipped cream, just whisk 1.5 cup heavy whipping cream + 1/2 tsp vanilla + 1/4 cup powdered sugar together vigorously for about 3-5 minutes, until stiff peaks form. It’s easiest if you use an electric stand mixer or handheld mixer. Then proceed with the recipe as directed.

Here’s what you need to make this pie:

–1 (14 oz) can sweetened condensed milk

–1 pkg powdered lemonade drink mix enough to make 2 quarts of lemonade

–8 oz cool whip thawed, divided

–1 (9 inch) graham cracker pie crust

Here’s how you make our Lemon Icebox Pie:

  1. Pour the sweetened condensed milk and lemonade drink mix into a medium sized bowl. Stir until completely combined.
  2. Fold in 4 oz (half) of the whipped topping into the lemonade mixture.
  3. Once combined, pour the mixture into the pie crust.
  4. Top with the remaining cool whip.
  5. Freeze for at least 2 hours before serving.

Well, Howdy neighbor! I’m chatting over the fence from Branson, Missouri! I’m so thankful Christy has invited me to share some easy and fun decorating tips with you!

I don’t know about you, but winter isn’t my favorite. Maybe because I was born and raised in southern California and I’m used to relatively sunny and warm weather year round along with lots of green lawns and trees. I now live in Southern Missouri and as much as I love the fact that we have four seasons, winter brings a lot of gray and brown. So I’ve come up with an easy way to brighten up a gloomy, cold day in a hurry!

I was at the market the other day and saw these darling cans of pie filling. I love the labels! The style is so sweet and old fashioned. The charming illustrations of the fruit made me think of springtime and summer…and that made my heart happy!

Then I thought they would make adorable flower vases! And why not make some hand-pies with the filling to boot!

I thought it would be cute to tie a ribbon around the top, but I didn’t have any that coordinated with the colors on the cans. Then I had a lightbulb moment! Ah-ha! I did have some fabric scraps that I could rip into a length of ribbon.Make This Sweet As Pie Bouquet From Sugar Pie Farmhouse!

And that’s just what I did! After I emptied and rinsed out the cans, I folded the strips of cloth lengthwise in half and then tied cute little rag bows around each can! Then I filled the cans with water and cut my grocery store flowers to fit inside.

Look how cute! It was so easy too! I placed the Peach one on my kitchen island on top of a cake stand that I already had. (I got it at the Target Dollar Spot section for $5.)

I put the Blueberry Can next to my kitchen sink to put a twinkle in my eye while I’m washing dishes!

Truth be told I did not end up making the hand-pies because I did not care for the filling after tasting it. I think it would need some doctoring up to taste better. I always make my pie filling from scratch but when I saw these darling cans I decided to give it a try. But still, for $2.98, it’s a cheap price for a cute flower container! Lol! And I can use it over and over! I suppose you could use the topping to spoon onto ice-cream!

Another thought is you can use any can that you might have in your pantry. If you don’t like the label You can take it off and tie a cute rag bow around it and fill it with some cheery daisies! Try it! I will make your heart sing!

It doesn’t have to cost a lot to add a little cheer to the nooks and crannies of our homes!

Overnight Apple Pie Oatmeal

These beautiful oats are creamy, flavorful, filling, and comforting. Even more, they’re made in one of the easiest ways possible – by sticking it in your fridge and going to sleep!

I love the texture of overnight oats. They get nice and creamy, with the oats plumped up just right. You can eat them cold or heat them up to have warm if that is your preference. These have an amazing depth of flavor and unlike flavored instant oats that you buy, you actually know where all of the flavor is coming from.

It’s no secret I’m an avid oatmeal lover. In fact, I once spent $25 for a bowl of oatmeal in New York City. Gasp. Horror. I know. Hang in there with me though because there were extenuating circumstances. I was there to be on the Today show, in this fancy hotel right across from the Rockefeller Center. I had flown in the night before, into a blizzard. People at my local airport just about had to move mountains for me to be able to get into the city and once there it was a little uncertain as to when I would even be able to get back out. I went straight from the airport to the studio to do my walk through and then walked to my hotel. I’m not much of an explorer, especially when I’m traveling on my own. I’d much rather sit in a room by myself and read.

So that night passed uneventfully and I went to bed soon after arriving since I had to be there so early the next morning. I can’t remember the exact call time but I’m pretty sure it was in the 5:00 AM vicinity, and y’all know I had to allow ample time to have my hair and makeup done before showing my face to the outside world so that’s getting up around 3:00. I had a couple of hours yet before my live television appearance and this Alabama gal needed a little something on her stomach. I’m not about to go out exploring at 4 in the morning in an ice covered New York City. Instead, I picked up the room service menu and looked for my old faithful, oatmeal.

There it was, just waiting to be ordered – for $25.

Y’all, I am not kidding. Now you’re probably thinking the same thing I was! I could go find a field, plant some oats, water ’em, harvest ’em, roll ’em myself between rollers I carved out of a tree in my back yard, and still not have spent $25 on the process. I could buy enough oats to feed my family for months on that. But my plans for the day included making fried pies on national television and then heading straight back to the airport again and this was my only opportunity to make sure the growling of my stomach didn’t take over the studio microphones – so I ordered it.

In their defense, they did bring it under one of those fancy silver domes at least and there were a few berries on top. I made sure to eat every bite of that because at this point I figured each bite was worth at least 2 bucks!

I tell you what, though, once you’ve paid that much for a bowl of oatmeal you definitely appreciate every bowl thereafter. After that trip, I started carrying packets of instant oats with me whenever I traveled. Lesson learned.

Now, let’s make some oatmeal that will run circles around a fancy hotel’s $25 bowl any day!

Overnight Apple Pie Oatmeal

You’ll need: Old Fashioned Rolled Oats*, Milk*, Unsweetened Applesauce, Maple Syrup or Honey, and Cinnamon

For the toppings, which are optional, you can add a chopped apple, some pecans or walnuts, and a little extra cinnamon.

*You can use quick oats if you prefer. Gluten free oats work as well.

*Milk – your favorite type of milk will be fine in here, including 2%, skim, or even unsweetened almond milk.

Place oats in a 16 ounce mason jar. Pour in milk.

Add applesauce, molasses or honey, and cinnamon. Give it a stir or put the lid on and give it a shake.

Place this jar, with lid on, in the refrigerator overnight.

In the morning, your oats will be plump and thick, ready to eat! I like to top them with chopped apple and pecans or you can eat them as is. They are great cold or heated up like traditional oatmeal (which is how I eat it). I hope you get to enjoy this wonderful and healthy breakfast option!
