Harvest Stuffed Cinnamon Rolls - Southern Plate


Note: This post was originally written in 2011 and updated in 2019. Harvest Stuffed Cinnamon Rolls are old fashioned cinnamon rolls which are stuffed with brown sugar, cranberries, toasted pecans, & orange zest. This recipe, along with my shortcuts to make it easy, is sure to become one of your fall favorites! If you’ve time to visit, keep reading. If not, scroll on down to the recipe card. Today is my daughter’s 7th birthday. She woke up so excited, rushing out of her room to see her door decorated with crepe paper streamers and the balloons all in the den floor. We started doing that when Brady (who is now twelve) was just a toddler and it seemed a great tradition to stick to so now each year, when our kids go to bed, we set to taping streams of crepe paper up on their door frames and Ricky sets to blowing up balloons. I don’t have the air in me to blow up balloons anymore, I guess I use all my wind talking. I’m gonna tell you what, it sure is good for the soul to see the excitement of a child. The wonder they feel, the joy and exuberance at every little thing, but especially on big days like this.

I was on a plane last week and as it took off I got to thinking about the first time my daughter was on a plane and how, when it took off, she threw her hands up in the air and shouted “WEEEEEE!!!!” as it rose into the air. Not a soul on that plane complained, her joy and excitement were so contagious that it was just met with smile and chuckles.

As my plane left the Huntsville airport I didn’t throw my hands up in the air, but I sure did think about it, and my heart cried out “WEEEEEEE!” as I set off, thinking of the day as an adventure just as Katy Rose had taught me to do.

They keep us lighthearted, don’t they? We sure do need that. It’s easy to get bogged down with deadlines and schedules and I know my kids are exactly what I need to keep my focus on the truly important. Like today, when Katy Rose is turning 7.

Now let’s make some cinnamon rolls. These puppies are to die for and they are so very easy. They are a deluxe version of my original cinnamon roll recipe, click here for that one.

Today, we’ll be using my favorite shortcut of frozen bread dough. I figure someone made this frozen dough from scratch already though, so that works for me!

Ingredients for Harvest Stuffed Cinnamon Rolls

You’ll need: A loaf of frozen bread dough that has been thawed (I’m using Rhodes), cinnamon, an orange, butter, brown sugar, pecans, and dried cranberries (also known as craisins).

You can also use raisins in this or even dried cherries if you like. If you have any of those on hand, go with what you have. No sense in making a special trip to the store.

Place your pecans on a baking sheet and place them in a 350 oven for 5-6 minutes, keeping an eye on them so they don’t burn. You just want them lightly toasted.

Toasting pecans really brings out their flavor. I’ve grown to appreciate this extra step! When I was in Charleston we showcased a German Chocolate Cake from Southern Living and I took a bite of it on air. As soon as the segment ended I turned to the stylist and said “You toasted those pecans!!! That was amazing!” It changed the taste of the entire cake for me.

Now I love dried cranberries but raisins and dried cherries would work really well in this also. Before I add mine into a recipe I like to plump them a bit.

To plump your cranberries, simple place dried berries in a bowl and cover them in hot water. Let them sit for about five minutes or so and then drain them.

I love this little bowl. I gotta admit that I have coveted it most of my life. It belonged to my mother and I’ve kept my eye out for one of my own for a few years now. Some months back, when I was at Mama’s house, I mentioned how hard it is to find one like hers. She went to the kitchen, got the two bowls she had in this pattern, wrapped them up in a dish towel, and put them in a sack and handed it to me! “Just take good care of ’em and you can have ’em.” Talk about unexpected gifts!

Line a countertop with a silicone mat or some waxed paper. 

Spread some flour over that to help prevent your dough from sticking.

Make sure your bread is thawed completely and place it on your floured surface.

Coat your rolling pin with a little flour (just rub it on there with your hands) and roll that puppy out into a rectangle-esque object.

Kinda like a rectangle, but no one is taking off points for style or precision here.

If your dough struggles with you, what I often do is roll it out a little bit, let it sit for a few minutes, then roll it out again. This will let it relax some and it will be easier. Either way, rolling it out will take a little muscle. But you can do it. Because ….. “Always remember, you’re braver than you believe, stronger than you seem, and smarter than you think” ~Winnie The Pooh quote

I doubt the author was thinking about making cinnamon rolls when he said that but it’s always nice to find a quote is versatile, don’t ya think?

Spread your dough with about half a stick of butter.

“About” is the key word here. Again, no points are taken off for precision. If you’re making these cinnamon rolls for anyone other than yourself, I can guarantee you won’t get complaints. If you do get complaints, take the cinnamon roll back.

Stir your brown sugar and your cinnamon together until well blended (or until you get tired of stirring).

And zest that orange.

Now most folks would use a zester for this but a little handheld grater works just as well as long as you have a soft touch.  If you use a grater just be sure you grate only the orange part and try not to get down into the white part because supposedly, that part is bitter. I’ve never tried it myself so I’m gonna say “supposedly” here. I think orange zest is kind a bitter but in recipes like this, it is kinda heavenly too.

Now sprinkle your brown sugar and cinnamon over the butter and then top with pecans, orange zest, and cranberries.

Of course it is ~grins~. We really need smellovision technology. Plumped cranberries, toasted pecans, orange zest for that hint of citrus, brown sugar, and cinnamon...just in case you needed a recap. ~breathes it all in~

Now we gotta roll this puppy up. The trick to rolling it up is to kinda squeeze it together as you roll. Roll, squeeze, roll, squeeze, roll, squeeze.

This is gonna really help keep your filling in while it bakes and also while you cut it and put the slices into your pan. You can kinda see here where I’ve pressed it together as I rolled it up. Here is my final cinnamon roll log. Now we’re ready to cut it.

A lot of people tell you to cut your cinnamon rolls with dental floss and this or that but I have never seen the reason to go to all of that trouble…

I just grab a serrated knife (I am actually using a steak knife here) and go at it in a light sawing motion.

If you prefer to use dental floss or some other method, knock yourself out.  Harvest Stuffed Cinnamon Rolls

Spray your pan with cooking spray.

Place your slices in the pan, spread out a bit like this so they have room to rise. Cover them and let them rise in a warm place until doubled in size.

If you don’t have a “warm” place, sometimes I just turn my oven on and let it preheat for a few minutes, then turn it off and open the door for a minute or two to make sure it is warm, but not hot. If it is “hot” it will start cooking your rolls and they won’t rise like they should, so make sure it is just warm.

Then place your covered rolls in the oven for an hour or so until they double.

Now we’re ready to bake these beautiful creations!

I bake them at 400 for about fifteen minutes, or until done.

Freezing Instructions: Once you remove them from the oven, This is the point where you would freeze them if you’ve a mind to. If you like, you can cook them until they’re done but not quite as brown as this and then brown them more in the reheating. If you freeze them before they are cooked, it will kill the yeast. They won’t rise the second time and if they are already risen but not baked, the yeast will still die and they’ll lose volume and be smallish, hardish things. Trust me, I know from personal trial and error. I called Rhode’s bread dough company and they gave me these exact instructions that I’m passing on to you for the best way to freeze these :). To freeze: Allow to cool completely. Wrap well in foil (really well) and place in freezer. To reheat, thaw in the refrigerator (overnight is great) and remove foil. Cover loosely with more foil and place in 200 degree oven for 15-20 minutes. Ice and serve.

But I want to encourage you to be a rebel and eat them RIGHT NOW because you work hard and you deserve it!

Make your icing according to the recipe below (you can visit my original cinnamon roll tutorial if you’d like step by step photos of the icing) and spread it over your warm cinnamon rolls.

Now remember when I told you to kinda squeeze the dough together as you rolled it up?
I’ve seen a lot of instructions lately on the internet saying that you should turn your cinnamon rolls upside down after cooking them so that all of the good stuff goes back up in the cinnamon roll, but I find that when I kinda squeeze my dough together like I showed you…all the good stuff stays in the cinnamon roll. Here is my pan, perfectly clean on the bottom where I took out two cinnamon rolls.

Harvest Stuffed Cinnamon Rolls

Ingredients

  • 1 loaf frozen white bread dough such as Rhode’s
  • 1/4 cup butter softened
  • 1 cup brown sugar packed
  • 3 tablespoons ground cinnamon *Can do less to taste
  • 1/2 cup dried cranberries can use raisins or dried cherries
  • 1/2 cup pecans toasted
  • 1 tablespoon orange zest or more to taste

Icing

  • 3 ounce cream cheese softened
  • 1/4 Cup butter or margarine softened
  • 1-1/2 Cups confectioner’s sugar
  • 1/2 tsp vanilla optional, I usually just leave it out

Instructions

  • Place loaf of dough on plate and let sit at room temperature until thawed. Once thawed, roll out onto floured surface to a size of about nine inches by sixteen inches.

  • Spread 1/4 cup butter over dough.

  • Place cranberries in a bowl and cover with hot water, let sit for five minutes to plump, then drain well.

  • In small bowl mix together brown sugar and 3 tablespoons cinnamon. Sprinkle over top of cinnamon roll, stopping about 1/2 an inch away from the sides so it will seal (see photos). Sprinkle pecans, cranberries, and orange zest over brown sugar mixture.

  • Carefully roll up cinnamon roll into a log, squeezing lightly as you do to seal it. Slice into one inch slices with serrated knife.

  • Place in greased 9×13 inch pan and cover with cling wrap. Place in warm spot and allow to rise until doubled in size. Remove cling wrap and bake at 400 for about 15 minutes, or until done.

  • Icing: Mix all ingredients together and beat with electric mixer until creamy. Spread over cinnamon rolls.

  • To Freeze: Prepare Cinnamon rolls up through step six (through the baking process). Once baked, allow to cool and then wrap well with foil. Freeze. Best if used within a month or two. To reheat frozen rolls, allow to thaw and then cover loosely with foil and place in 200 degree oven. Bake for 15-20 minutes or until heated through. Remove from oven and top with cream cheese icing.

GOOD MORNING AND WELCOME TO OUR NEW BIBLE READING PLAN!🙌

 

We will be reading through the Bible together in one year, beginning in the beginning 🙂

Today’s reading:

Genesis 1-3

(That is Genesis, chapters 1, 2, & 3)

 

I can almost feel the presence of God as He hovered over the earth in these passages, smell the earth scented mist as it rises from the ground to perfectly water everything, and hear the sounds of plants and bushes as they sprout up followed by the sounds of all the living things having had life breathed into them by their creator. Wow! Exciting reading ahead!

🌿The Bible begins in the beginning. I know that seems obvious but many think (and are even taught) that the part of God’s word which is relevant to us begins in Matthew. 😟As a result, we have a culture of Believers who have, in many ways, discarded the very foundational texts of the book we claim to live by.

 

And so, untethered from the foundation, and out of context, we are left with a skewed vision of the Word, and of God Himself, one that is easily blown about by the winds of changing culture, desires and ambitions of man, and our own emotions.

 

If we only know the last 25% of the book, we don’t know the book. Imagine if you walked in on the last ten minutes of the movie and then went on a speaking tour to tell everyone what the themes of the movie were. You’d be off in ways that you, yourself, wouldn’t even understand and no one who had seen the movie would consider your information credible. Yet this is exactly how many treat the Bible today.

 

Here is something to think about: These are the Scriptures that Messiah, the Disciples, the writers of the Gospels, and even John (who wrote revelations) studied, lived by, and taught from. The “New” Testament did not exist during their lives.

So when Paul wrote in 2 Timothy 3:16-17 that:

“all Scripture is God-breathed and is useful for teaching, rebuking, correcting and training in righteousness, so that the servant of God may be thoroughly equipped for every good work” he was referring exclusively to what our culture has dismissively titled the “old” testament.

 

Just to let you know where I stand right out of the gate: I serve the one true God. The God of Abraham, Isaac, and Jacob. A God abounding in Grace and lovingkindness who allows us free will to choose Him or reject Him and, even in that rejection which He as the creator of Wisdom and light foresaw in us, He still loved us enough to send His only son to pay the penalty for our sons so that we could yet be reconciled to Him.

And this God, as the creator of all things, when HE speaks, His word is incapable of ever becoming relevant. I stand on the truth of every word spoken from His mouth and I am grateful for the gift of each syllable. His light is lamp on that illuminates my path and I will praise His Holy Name for the wisdom He gives us.

 

🌿Going forward:

The books of the Bible were not originally written with chapter and verse numbers. They were divided this way later in order to make it easier to study and reference. While chapter and verse numbers are very helpful, they can sometimes lead us to believe that there are stopping points in letters and books in places where the story is actually continuous. Therefore, it is important, when studying a verse or seeking to find the context and meaning intended, that we always read the surrounding verses as well. This is why I always say “Whenever someone gives you a verse, take a chapter or better yet, the whole book.”

 

Another important matter is that it is the responsibility of the Believer to test everything. I cannot read your Bible for you and knowledge gleaned from me reading the Bible rather than you reading it directly is secondhand knowledge.

There is no such thing as a second hand relationship with the Father.

Test everything, hold fast to what is good.

~1 Thessalonians 5:21

I trust and hope that you will not take my word for anything I say but instead, go to Scripture, search it out for yourself, and test everything – knowing that the Word of God is our straight edge to which all else must line up, never the other way around.

 

🌿We will understandably find that some of our preconceived notions and even beloved doctrines don’t quite fit in with what the Bible says. In these cases, hold fast to what is good and discard what proves untrue. This will be harder with some things and I understand that.

But whenever we find that God contradicts us, my hope is that we will find ourselves clinging to His truths rather than our own. Inevitably, there may be some areas in which we may need more time or persuasion from the Holy Spirit in order to do so. We are human, we are fallible, and we love our traditions. Trust that the Father will continue to work on us and that it is okay to be honest with Him.

“Father, I love this teaching that has proven untrue. I am struggling with letting it go. Please help me.”

I’ve found that the creator of truth is a great respector of truth in His children. It is much better to be open and wrestle something out with the Father rather than attempt to hide something from the one who knows all things and wrestle it out apart from Him.

 

🌿Things to know: The first five books of the Bible were originally (and still are in many circles) known as the Torah. That is a Hebrew word for “teachings”. In Greek, these first five books are known as the Pentateuch.

 

🌿 About Bible Translations: It is the policy of this group that the best translation is the one you will read. I use the ESV in my posts because that is a good middle ground but I see a translation as merely a jumping off point and if I were not writing for this group I would not read the ESV first. I use 3-4 Bible translations each day for my notes so please do not feel compelled to purchase a new Bible if the one you have works fine and know that you do not need to have a specific translation in order to take part in this study. The best Bible is the one you will read and that is that.

And with that said, I am so excited to begin.

🌿In Genesis 1:3 Notice that YHWH created light but he didn’t create the sun and the stars until Genesis 1:13.

The original word for “light” referenced in 1:3 is Owr. This is the same word used for light when YHWH sent the plague of darkness over Egypt but His chosen people (Israel) had “owr” inside their dwelling places.

 

Owr does not refer to an object that gives light but rather a goodness, illumination. Personally, whenever I think of “owr” I think of the light of YHWH’s presence.

In 1:16 the word used for light is mar-rot. This is an object that gives light.

 

Consequently, the word used for darkness in 1:4 is a Hebrew word chosek. This is generally the opposite of owr. This word is even used to denote distress in Isaiah 5:30 and Isaiah 9:1, mourning in Isaiah 47:5, and evil and sin in Isaiah 47:5

 

I’m going to show you how to test this by using Bible hub.

Now you see the English, topped by the Hebrew, topped by the Transliteration, topped by a reference number for each word. Look for “the light” or “the darkness” and click the number atop those words. You’ll end up with a page that has a pronunciation, original word, ways it is used, etc. You can even scroll down and look for instances in which it appears in the Bible.

 

🌿Creation Timeline:

•Day 1- 3And God said, “Let there be light,” and there was light. 4And seeing that the light was good, God separated the light from the darkness. 5God called the light “day,” and the darkness He called “night.” And there was evening, and there was morning—the first day.

•Day 2 -6And God said, “Let there be an expanse between the waters, to separate the waters from the waters.” 7So God made the expanse and separated the waters beneath it from the waters above. And it was so. 8God called the expanse “sky.” And there was evening, and there was morning—the second day.

•Day 3 -9And God said, “Let the waters under the sky be gathered into one place, so that the dry land may appear.” And it was so. 10God called the dry land “earth,” and the gathering of waters He called “seas.” And God saw that it was good.

11Then God said, “Let the earth bring forth vegetation: seed-bearing plants and fruit trees, each bearing fruit with seed according to its kind.” And it was so. 12The earth produced vegetation: seed-bearing plants according to their kinds and trees bearing fruit with seed according to their kinds. And God saw that it was good. 13And there was evening, and there was morning—the third day.

•Day 4 -14And God said, “Let there be lights in the expanse of the sky to distinguish between the day and the night, and let them be signs to mark the seasons and days and years. 15And let them serve as lights in the expanse of the sky to shine upon the earth.” And it was so.

16God made two great lights: the greater light to rule the day and the lesser light to rule the night. And He made the stars as well.

17God set these lights in the expanse of the sky to shine upon the earth, 18to preside over the day and the night, and to separate the light from the darkness. And God saw that it was good. 19And there was evening, and there was morning—the fourth day.

•Day 5 -20And God said, “Let the waters teem with living creatures, and let birds fly above the earth in the open expanse of the sky.” 21So God created the great sea creatures and every living thing that moves, with which the waters teemed according to their kinds, and every bird of flight after its kind. And God saw that it was good. 22Then God blessed them and said, “Be fruitful and multiply and fill the waters of the seas, and let birds multiply on the earth.” 23And there was evening, and there was morning—the fifth day.

•Day 6 -24And God said, “Let the earth bring forth living creatures according to their kinds: livestock, land crawlers, and beasts of the earth according to their kinds.” And it was so. 25God made the beasts of the earth according to their kinds, the livestock according to their kinds, and everything that crawls upon the earth according to its kind. And God saw that it was good.

26Then God said, “Let Us make man in Our image, after Our likeness, to rule over the fish of the sea and the birds of the air, over the livestock, and over all the earth itselfc and every creature that crawls upon it.” 27So God created man in His own image; in the image of God He created him; male and female He created them. 28God blessed them and said to them, “Be fruitful and multiply, and fill the earth and subdue it; rule over the fish of the sea and the birds of the air and every creature that crawls upon the earth.”

29Then God said, “Behold, I have given you every seed-bearing plant on the face of all the earth, and every tree whose fruit contains seed. They will be yours for food. 30And to every beast of the earth and every bird of the air and every creature that crawls upon the earth—everything that has the breath of life in it—I have given every green plant for food.” And it was so. 31And God looked upon all that He had made, and indeed, it was very good. And there was evening, and there was morning—the sixth day.

 

•Day 7 -1Thus the heavens and the earth were completed in all their vast array. 2And by the seventh day God had finished the work He had been doing; so on that day He rested from all His work.
3Then God blessed the seventh day and sanctified it, because on that day He rested from all the work of creation that He had accomplished.

 

🌿In Genesis 2:3 we have the first record of YHWH making something Holy. He is the source of Holiness and we will come to see and understand that only He can make something Holy. He declared the Sabbath a day of rest, made it Holy, and thus created the first moedim or appointed time. Think of these as appointments He made with us. There are 8 moedim which YHWH will teach us about in His Word as we move forward. These are special days that the Father has set aside as Holy to Him. These are Holy Days, man’s version of which is holidays.

 

 

🌿How was Eve deceived? Two things happened in the deception of Eve. First, the serpent caused her to question the Word of YHWH. Second, she added to the Word. Let’s look closely.

Here is what the Father said:

16 And the Lord God commanded the man, saying, “You may surely eat of every tree of the garden, 17 but of the tree of the knowledge of good and evil you shall not eat, for in the day that you eat of it you shall surely die.” Genesis 2:16-17

And now let us look at the interaction between the serpent and Eve (whose name was pronounced Hava)

Now the serpent was more crafty than any other beast of the field that the Lord God had made. He said to the woman, “Did God actually say, ‘You shall not eat of any tree in the garden’?” 2 And the woman said to the serpent, “We may eat of the fruit of the trees in the garden, 3 but God said, ‘You shall not eat of the fruit of the tree that is in the midst of the garden, neither shall you touch it, lest you die.’” 4 But the serpent said to the woman, “You will not surely die. 5 For God knows that when you eat of it your eyes will be opened, and you will be like God, knowing good and evil.”

The serpent caused her to question the Word of God, then she added to the Word of God (go back and see if you can find what she added), and from there she chose to disobey the Word of God.

It is a slippery slope with a rapid descent. Does God’s Word have first and final authority in our lives? Or do we allow the words of others to cause us to question it? Something to think on.

 

🌿Grace and animal sacrifice – When Adam and Eve disobeyed God, he responded by an act of grace, He made them clothing out of animal skins to replace the clothing they’d made out of leaves. Up until this time, we have no record of an animal being killed but once they sinned it was necessary to do so in order to cover them with God’s act of grace in making them clothing. Sacrifice as a result of sin, a pattern established.

Important to note: Grace has always been present in the Bible from the very beginning and we will see many more acts of Grace as we go through our cycle.

It seems like whenever I make spaghetti, I always end up with a cup or two of sauce left. Seeing as how spaghetti is one of my favorite meals, its only fitting that leftover spaghetti sauce be recycled into another one of my favorite meals, Spaghetti Lover’s Soup. This dish is quick and easy to throw together, hearty, aromatic, and absolutely delicious from start to finish. Reminiscent of an Italian Chili, I’ve never met a soul who didn’t love it.

Using leftover spaghetti sauce really stretches the dollars here in that there is no need to add additional meat. if you like though, you can substitute a can of sauce for the leftover and either add some cooked ground beef make it meatless for any vegetarians in your life. See? This really does please everyone!

You’ll need: 2 cans kidney beans (or your favorite bean!), two cans diced tomatoes, two carrots, one stalk celery, leftover spaghetti sauce, and some dry spaghetti.

If you don’t have celery on hand just leave it out. Your sauce is seasoned enough anyway. This is really a great recipe to just use what is on hand. Last time I made it I only had a large can of baked beans. I rinsed them in a strainer and put them in and it was delicious.

Begin by peeling and chopping your carrots and dicing your celery.

You know, bake when I used to travel and do tv all the time, my handlers used to always be on me about saying “your” celery and “your carrots”. I got really good about saying “the” celery and “the carrots”. But I’m the boss of me now and honestly, how awkward would it be if you were chopping other people’s vegetables in your own kitchen? 😜

Dump tomatoes, beans, and spaghetti sauce in a large pot. Its best not to wear a brand new white shirt when doing this if you have the same amount of grace that I do when “dumping”.

Whenever a recipe calls for two cans of kidney beans, I always get one can of light and one can of dark just to give it a bit more color variety.

Add in chopped veggies. Stir those in.

I LOVE how the carrots taste in this. If you are a carrot person, feel free to double this amount. Spaghetti Lover’s Soup is a great recipe to veggie up!

I like to add a bit more Italian seasoning but you don’t have to.

I love me some Italian seasoning! I’ll know I’ve had enough when my skin turns green and I begin to smell like Oregano.

Bring that to a boil and then reduce heat and simmer until carrots and celery are tender.

While that is cooking, break up your spaghetti noodles into about one or two inch pieces.

Of course you can substitute any old pasts for this. Whatever cranks your tractor.

Once your veggies are tender, add in your spaghetti and continue cooking until noodles are done.

Ingredients

  • 2 cups spaghetti sauce
  • 1 cup cooked ground beef Optional, I just use leftover prepared spaghetti sauce that I’ve already added meat to.
  • 2 15 oz cans diced tomatoes undrained
  • 2 15 oz cans kidney beans undrained
  • 2 large carrots
  • 1 stalk celery optional
  • dry spaghetti noodles I use enough to make spaghetti for one person
  • 2 cups water
  • 1 tablespoon Italian Seasoning optional

Instructions

  • In a large pot, place sauce, beef (if using), tomatoes, kidney beans, and water into pot. Peel and chop carrots and dice celery, add to pot. Add seasoning if desired.

  • Bring to a boil and then reduce heat, simmering until vegetables are tender. Break spaghetti noodles into one or two inch segments and add these as well. Continue cooking until pasta is tender.
