Grilled German Potato Salad – Warming Up to a Great Summer Side Dish


I’ve never been a huge fan of German potato salad, for two
very good reasons. First of all, my love for mayonnaise borders on
inappropriate, and secondly, the potatoes always seem to be under-cooked. 

I
enjoy many things cooked al dente, but potatoes are never, ever one of them. I
know people want clean, neat slices, but to me that’s just not a good enough
reason.

However, if they’re cooked tender, especially over some
smoky coals, I can forgive the lack of mayo, since this is a very flavorful
change of pace, and as I mentioned in the video, perfect for bringing to a
cookout. A German potato salad must be eaten warm, or at least room temp, so
placing a bowl of this on a sunny picnic table works out very well.

I use a ton of bacon in my version, because it’s bacon, but
if you do decide to use less, you’ll have to add some vegetable or olive oil to
the dressing to make up the difference. You could just use less vinegar, but
then you might not have enough dressing to really soak the potatoes, which
would be a shame. So, what I’m trying to say is, use a lot of bacon. Either
way, I really do hope you give this great potato salad a try soon. Enjoy!

Ingredients for 8 Portions Grilled German Potato Salad:

2 1/2 pounds Yukon gold potatoes, grilled until just tender

1/4 cup freshly chopped Italian parsley

For the dressing:

8 ounces sliced bacon

1 cup diced yellow onion

2 tablespoons white sugar

2 teaspoons kosher salt, plus more as needed

1 teaspoon freshly ground black pepper

cayenne to taste

1/2 cup white wine vinegar

Note: If you want you dressing tangier, add more vinegar,
but if you want it less so, you’ll have to adjust with vegetable oil, since you
can’t add more bacon fat.

I adore baked sweet potatoes but it took me a while to figure out the best way to cook them. I prefer baking them because they’re soft and tender and have the best flavor. They’re great for side dishes or lunch as sweet potatoes are high in protein and fiber as well as vitamin A, vitamin C and vitamin B6. Sweet potatoes even contain iron and protein! They have no fat or cholesterol and a medium sized sweet potato only has about 120 calories. Now of course, you can add whatever toppings you like- it’s up to you how healthy you want to be! I love adding butter and some marshmallows. I think adding pecans is a great idea as well!

This is my easy way to bake sweet potatoes. First, start by preheating your oven to 400 degrees F. Scrub your sweet potatoes and cut off the ends. Place on a baking sheet lined with foil, parchment paper or teflon baking mats. I have always been a die-hard fan of parchment paper, but I recently tried teflon baking mats and LOVE them. They’re washable, everything is non-stick, yes, even this baked on sweet-potato mess, and they’re virtually indestructible!
          –Bake for about 45 minutes to an hour. I baked my 2 medium sized potatoes for 1 hour. Adjust the time if your potatoes are larger or smaller. If you’re unsure when they’re done, the inside should read 210 degrees. My digital kitchen thermometer is one of my favorite tools!

         –Cut a large “X” onto each potato and pull back the skin a bit. It will just peel away easily. Sprinkle with a little salt and dot with butter. Add about 1/4 to 1/3 cup of mini marshmallows to the top of each potato. Return to the oven to broil for 2-3 minutes, or until marshmallows are toasted a light golden brown.

        –Serve sweet potatoes after they’ve been able to cool down for about 5-10 minutes.

Healthy options are a small pat of butter, chopped pecans, a light dusting of cinnamon or cinnamon sugar and even vanilla greek yogurt.

Yes, you can roast sweet potatoes without oil! As you can see from my simple recipe above, you don’t need any oil whatsoever to make these delicious baked sweet potatoes.

Can you freeze baked sweet potatoes?

Yes, you can freeze baked sweet potatoes. Just cool  the sweet potatoes completely, then store in an airtight container. You can freeze sweet potatoes for 3-4 months this way. When you’re ready to eat, just thaw them on the countertop or using the defrost function on your microwave. Heat them fully in the microwave.
