How to Make Apple Spice Bundt Cake

Preheat your oven to 350ºF. Prepare pan by spraying with cooking spray or greasing with butter.

In a large mixing bowl or stand mixer cream together the butter, sugar and eggs until smooth. In a separate mixing bowl combine the flour, spices, soda and salt. Whisk the dry ingredients until well blended.

Add the dry ingredients to the creamed butter and sugar one cup at a time until well incorporated. To this mixture add in the applesauce and mix on medium until all the applesauce is blended into the cake batter.

Peel and slice the apple into small, bite sized pieces. Try to slice the apples into pieces that are equally sized so they will all cook through. Fold the apple slices into the apple spice cake batter.

For the pecan pieces, you can buy pieces that have already been chopped or, if you are using whole pecans, slice them into small pieces using a sharp knife. Fold into the batter.

pouring apple spice cake batter into a bundt pan

Pour the batter into the prepared bundt pan. If you do not have a bundt pan, this cake can be made in a 9 x 13 inch baking dish.

Place the cake in the preheated oven and bake for 45-50 minutes, until a toothpick inserted comes out clean.

When the cake is done cooking, place a plate over the top of the bundt pan and turn it upside down to remove the cake from the pan.

Drizzle with warm Caramel Sauce.

How to Make Homemade Caramel Glaze

The caramel glaze is simple to make and only takes a few simple ingredients. You can make the sauce while the cake is baking in the oven so it is ready to drizzle on the warm cake.

To make the Caramel Sauce you will need:

  • butter
  • sweetened condensed milk
  • heavy cream
  • vanilla

In a saucepan, melt the butter and add the sweetened condensed milk and cream. Bring to a boil and continue to boil for 3-5 minutes, until the sauce has turned a golden brown color. Remove from the heat and stir in the vanilla. With a spoon, drizzle the caramel sauce over the top of the Apple Bundt Cake.

What type of Apples are best for Apple Bundt Cake?

For this Apple Cake recipe you can really use any type of apples that you prefer. For this recipe, I used Gala Apples. I think that add a little bit of sweetness to this cake.

Other varieties that would work good in this recipe are: Honey Crisp, Granny Smith, Jonagold or Fuji. Just be sure you are not using mushy or soft apples, you want apples that are firm for this recipe because they will soften when cooked.

Yin Yang Butter Cookies by Gordon Ramsay

Yin Yang Butter Cookies

Two different flavours of cookies, orange and chocolate, put together in perfect harmony to create this playful, slice-and-bake yin-yang cookie.
The Yin-Yang is one of the most famous symbols represented in Taoism–a Chinese religion and philosophy.

Butter Cookies Chocolate Cookies
  • 90 g German #405 flour
  • 10 g Dutch processed cocoa powder
  • Pinch of salt
  • 60 g Unsalted butter, at room temperature
  • 50 g Caster sugar
  • 1 Egg yolk
  • 1/2 tsp Rum extract
    angiesrecipes
  1. Cut the butter into smaller pieces and place them in a mixing bowl. Add caster sugar gradually at the side of the bowl while mixing, beating thoroughly after each addition. Switch to medium speed to beat sugar and butter until the mixture fluffy and pale. Scrape the bowl down to make sure everything is thoroughly combined. Beat in egg yolk and orange extract until smooth. Add in the flour and fold to combine. Wrap up the cookie dough and chill for 1 hour.
  2. Whisk together the flour, cocoa powder and salt in a bowl. Set aside. Cut the butter into smaller pieces and place them in another mixing bowl. Add caster sugar gradually at the side of the bowl while mixing, beating thoroughly after each addition. Switch to medium speed to beat sugar and butter until the mixture fluffy and pale. Scrape the bowl down to make sure everything is thoroughly combined. Beat in egg yolk and rum extract until smooth. Add in the cocoa flour mixture and fold to combine. Wrap up the chocolate cookie dough and chill for 1 hour.
  3. Divide each dough into 4 logs, about 1 inch in diameter, and reserve about 10 grams of each dough to make the dots. Press one side of each log with your thumb to make a comma shape. Cover and chill 1 hour until firm.
  4. Dust a work surface lightly with flour. Place one orange dough log with round side down on the work surface. Brush the side lightly with water and turn the chocolate dough log on top of the orange dough, creating the yin-yang pattern. Gently roll the log until round. Repeat with the remaining logs. Wrap and chill 1-2 hours until firm.
  5. Preheat the oven to 175C/350F. Cut the cookie logs into 5mm thick slices. Arrange the cookies on a parchment paper lined baking pan, about an inch apart. Pinch a bit of reserved chocolate dough, and roll it into a small round ball. Gently press it into the orange part of the cookies. Do the same with the reserved orange dough and press them into the chocolate part of the cookies. Bake in the center of preheated oven for about 12 minutes. Cool the cookies on the rack.

Walnut Crusted Chicken Breast – It’s all About the Nut Glue by Gordon Ramsay

Walnut Crusted Chicken Breast – It’s all About the Nut Glue

I almost never order a nut-crusted entrée in a restaurant,
since they usually use a sugary glaze to hold them on, and/or feature a too
sweet nut, like pecan, or macadamia. That’s not an issue here; since we’re
going with buttery, subtly bitter walnuts, held on with a very savory “nut
glue,” made with a garlic and mustard base.

I like this approach so much better, especially since it
allows me to do a little bit of a sweet pan sauce, featuring honey, which is a
classic pairing with both walnuts and mustard. Above and beyond the ingredients
in your nut crust, the protection this layer of deliciousness provides can
actually make a boneless, skinless chicken breast seem like it was just carved
off a freshly roasted carcass. As long as you don’t overcook it, that is.

I caused a little stir on Twitter yesterday, when I said (in
so many words) that you don’t need to cook chicken breast to 165 F. internal
temperatures, as the FDA would like you too. I said, accurately I believe, that
150 F. is plenty hot enough, as long as it holds the temperature for at least
five minutes. I think it’s so much better that way, but I’ll leave that up to
you, and your probe thermometer. Regardless of how long you cook it, I really
do hope you give this a try soon. Enjoy!

Ingredients for 2 Servings:

For the “nut glue:”

4-6 cloves finely crushed garlic

2 tablespoons Dijon mustard

2 teaspoons fresh thyme

For the rest:

2 boneless, skinless chicken breasts (about 8 ounces each)

salt, freshly ground black pepper, and cayenne to taste

1 1/2 cups finely chopped walnuts

For the pan sauce:

all the pan drippings

1/2 cup chicken broth

1 tablespoon Dijon mustard

2 teaspoons honey

– Roast for 25 minutes at 375 F., or until an internal temp of
150 F.
