Sour Cream Pancakes

We all know how delicious sour cream is in baked goodies like crumb cakes and pound cake!  But in pancakes?  Sour cream pancakes are soft and outrageous.  You will find they are softer than normal pancakes,  extra light and super delicious!  Whip up some sour cream pancakes for your family, soon!!!!!  And be sure to serve up your sour cream pancakes with extra butter, maple syrup and of course, some whipped cream!  Feel free to add some chocolate chips or banana slices, too!  Try these out soon and your family will thank you1!!! xoxo

This recipe is adapted from the Pioneer Woman!  I used gluten free flour but feel free to use regular flour as Pioneer Woman did!  When using gluten free flour, I highly recommend buying Cup 4 Cup.  It is the only flour we have found that tastes exactly like all purpose flour!  You can buy it at Williams-Sonoma!

Sour Cream Pancakes

Ingredients

  • 1 cup Sour Cream
  • 7 Tablespoons flour (gluten free or regular)
  • 2 Tablespoons Sugar
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 2 whole Large Eggs
  • 1/2 teaspoon Vanilla Extract
  • Butter, For Frying And Serving
  •  Syrup, For Serving

Directions:

Whisk eggs and vanilla in a bowl.  In a different bow, stir flour, sugar, baking soda and salt together.  Add sour cream to the dry ingredients and stir lightly just to combine.  Whisk in the egg/vanilla just to mix gently.

Heat a skillet on medium heat and melt some butter.  Drop small round pancakes into pan and cook until golden on both sides.  Since the sour cream pancakes are so soft I made sure to cook them through until nice and brown!  Serve with butter, syrup and maybe some whipped cream!

Easy Crock Pot Pork Chops with Gravy

Fall apart tender pork chops covered with gravy. It makes your mouth water. All in an easy slow cooker recipe.

I started with a whole pork loin. Trim the fat cap for health and cut into 1 inch slices. Add a nice brown in a pan before loading them into a crock pot with onion, green pepper and garlic. Add some broth for moisture and cook until fall apart tender. Then make a simple gravy with the liquid.

Rating:

A nice medium 4. This is an easy cook that will be hard not to like.

Notes: I always use thick slices of pork loin for my “pork chops”. It is easy to remove the fat and make them reasonably health.

Of course easy to double or triple in a larger slow cooker.

 Start a couple of 1 inch pork chops. I’m using trimmed slices of pork loin. Salt and pepper to taste.

 Heat 1 t oil over medium high heat. When hot, add the chops and brown each side for 3-4 minutes to get the color you like and add some taste.

 While pork is browning, slice one medium onion and one green pepper. Also mince or crush 2 cloves of garlic.

Add half the veggies and garlic to the bottom of a small crock pot. I used a 3 1/2 quart. Add the pork on top, add the remaining of the veggies and garlic. Add 1 cup of chicken broth and 1/2 t Worcestershire sauce.

Cook on high for 2 1/2 to 3 hours or double that on low.

For gravy, mix 4 tablespoons of corn starch or twice as much flour in 1 cup of cold water. Move the chops to a plate and pore the liquid in a pan over medium high heat and bring to a light boil. Slowly pore in the thickening liquid while stirring vigorously until starting to thicken. At that point, stop adding the thickener and continue to stir and simmer for a few minutes until gravy is done. Add salt and pepper to taste.

The Puppies are Coming

This is a hard post to write. We lost a much loved member of the family last month when Jake, our 12 1/2 year old golden retriever died of osteosarcoma of the jaw. Jake had served as unofficial mascot of this blog and you will find his pictures scattered around where I needed a picture for various reasons.

Jake had a hard life in many ways. He had a congenital eye issue that eventually after multiple surgeries left him blind. While going blind, he tore his ACL and needed that repaired. But ultimately he was done in by the cancer. He lived an average life span for a golden and died of a common cause for golden retrievers.

We bought Jake from a back yard breeder. We were unaware of many the health problems associated with the breed and were over ruled by puppy love. We have paid the price in both emotional and financial pain. Jake received all possible treatments for his ailments but better not to have the ailments to begin with.

His death has left a huge hole in our “for two” household hearts that we needed to fill. We are a”dog” house and we are not ready to give that up. While there will never be another Jake we are moving on. We have done our research on the health issues and have checked breeding lines. Jake’s personality and temperament have converted us to golden retriever people for life.

So the puppies are on the way. Two English Golden Retriever puppies, Lilly and Molly, will arrive home in a few days. We are busy getting cages, puppy toys, dog food, dog treats and the list goes on and on. It takes a lot of energy and time to raise one dog and more than double that initially for two. But we are determined to have two wonderful dogs with separate personalities.

So to our local friends, it is socialization time. Come visit this summer, just drop by for a puppy fix and some great pond fishing for the kids. Visiting dogs welcome after we are fully vaccinated.

To my blog friends and readers, you get puppy pictures… lots of puppy pictures. On one of my favorite blogs, Plain Chicken, Stephanie has Meow Monday every week. While I may not do Bow Wow Wednesday (or maybe I will), it may seem like it. Puppies and pictures do go together.
