We love Reese’s Peanut Butter Cups, so I’m always looking for fun ways to use them in desserts. Reese’s Pieces are just the perfect colors for fall, so I whipped up these blondies to celebrate the fabulous fall weather we’ve been having lately! These blondies are so soft and delicious – they definitely don’t last very long at my house!

Dessert bars are just so easy to make. Mix everything up, put it in the pan and bake. And if you aren’t a huge fan of Reese’s Pieces, leave em’ out. Swap in any kind of candy bar you want! We always make these for Halloween parties because they are so easy and festive!

  • 10 Tbsp butter, softened
  • 1/2 cup peanut butter
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 3 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup Reese’s Pieces (I used all 1 1/2 cups of the mini ones)
  • 15-20 miniature Reese’s Peanut Butter Cups, cut in half

How to make Reese’s Peanut Butter Blondies

Grease a 9×13 pan and line with parchment paper. Lightly spray the parchment paper as well.

In a large bowl, beat the butter, sugars and peanut butter together with an electric mixer until well combined. Beat in the eggs and vanilla until smooth. In a separate bowl, combine flour, baking soda and salt until well combined.

Add the flour mixture to the butter mixture and mix until thick dough forms. Fold in the Reese’s pieces and miniature peanut butter cups and then press the dough into the prepared pan.

Bake at 350° for about 30-35 minutes. These cut beautifully when cooled, but they taste really good straight out of the oven too!

What type of peanut butter to use in Peanut Butter Blondies?

You can use any type of peanut butter in this blondies recipe, but I have found that regular peanut butters work better in baked goods than the more natural types of peanut butter. Crunchy peanut butter works great in this recipe too!

HOW DO YOU SOFTEN BUTTER TO ROOM TEMPERATURE?

The best way to soften butter is to set it out for a few hours before you make your cookies. Since most of us (or maybe just me!) aren’t that prepared or don’t think that far in advance, there are a few tricks to softening butter perfectly in just a matter of minutes. My favorite way to soften butter is in the microwave. It’s definitely fast, but you do have to be very careful not to melt it. Just put the whole stick of butter in the microwave (as long as it isn’t wrapped in foil!) and microwave for about 6-7 seconds. If the butter is still really cold, try another 5-7 seconds and check it again. You may need a few intervals, and if the butter is starting to feel soft, you can shorten the final interval to just a few seconds to make sure it doesn’t start melting.

I actually prefer to use the defrost setting on my microwave – I don’t know exactly what that mode does differently, and it takes a little bit longer (closer to 30 seconds), but it seems to be easier to get the butter to soften without melting.

What is a Chocolate Dump Cake?

A dump cake is a term coined for making a cake by simply dumping all of the ingredients together. Chocolate dump cakes usually include pudding and a cake mix. There’s no need to follow the instructions on the back of the box! It comes together quickly and the results are fantastic.

-Chocolate Pudding Mix: We need to use a small box (3.9oz) of instant chocolate pudding mix (just the dry stuff) and make sure it’s not the cook version.

-Milk: You can use cows milk or an alternative, like almond milk, but we need 1 ½ cups of it.

-Chocolate Cake Mix: A box of chocolate cake mix will act as the base. It already has the leavening agents and sweetener.

-Semi Sweet Chocolate Chips: ¼ cup of semi-sweet chocolate chips will give us added bits of melted chocolate goodness throughout the cake.

-Peanut Butter Chips: Scattering ¼ cup of peanut butter chips in the cake batter adds other flavors to round out the cake.

-Reese’s Pieces: ¼ cup of colorful Reese’s candies over the cake makes it look wonderful and adds a subtle crunch.

-Reese’s Peanut Butter Cups: Scattering 4-6 chopped Reese’s cups over the top of the baked cake makes it look great and taste even better.

Preheat your oven to 350F degrees and grease a 9×13 baking dish.

In a large mixing bowl, whisk the pudding mix and the milk together and let stand for 2 minutes.

Next, add the cake mix and then stir until well combined.

Spread the batter evenly into the baking dish.

Sprinkle the top with the chocolate chips, peanut butter chips and Reese’s pieces.

Bake in the oven for about 28-30 minutes and then remove from the oven.

Immediately top the cake with the chopped Peanut Butter Cups. Serve.

If you’d prefer to not have a chocolate peanut butter flavored cake, yes, you can use other candy! Here are some ideas:

  • Substitute in caramel chips and caramel M&M’s, then after baking, sprinkle on several Rolo’s!
  • Substitute in white chocolate chips and holiday M&M’s, then after baking, sprinkle on a variety of Hershey Bars, broken into squares!
  • Use the semi-sweet chocolate chips and peanut M&M’s, then after baking, sprinkle on 1/2 cup trail mix.
  • Add cherry or raspberry baking chips (seasonal!) and semi-sweet chips, then after baking, sprinkle with fresh berries!
  • Substitute in peppermint chips and peppermint M&M’s, then after baking, sprinkle on crushed candy cane!

Adding Reese’s to Cookie Bars

The other day while at my local grocery store I ran across something literal dreams are made of. A package of Reese’s Pieces and Mini Reese’s Cups. Together. In one package. Meant for baking.

So I went agains everything I believe and splurged. I bought them and I don’t even regret it. I am usually a very strict list follower but Reese’s owns a small part of my heart and I could not turn back once I saw them.

Target seems to sell these ‘Decostructed Chips’ as they are called. If you can’t seem to find this heaven sent combo pack, you can purchase each the Reese’s Pieces and Mini Reese’s Cups individually.

Now, this cookie bar recipe is just meant for a good helping of peanut butter and chocolate. The cookie base is so chewy. So rich. SO Vanilla-y. ( Totally a word. 😉)

Next time I need a quick peanut butter fix, I’ll be making these.

How to make Reese’s Cookie Bars

The cookie base is made with simple, everyday ingredients. Butter, sugar, brown sugar, eggs, vanilla, flour, salt and baking soda. Nothing crazy happening over here. 😉

After the flour is incorporated, it is time to add in the Reese’s Pieces and Mini Cups. For me, you can never have enough Reese’s Pieces and Mini Cups.

I add two full bags to the dough!! (This recipe does make an entire 9×13 pan, though!)

Mix throughly! Then press the mixture into a greased 9×13 pan.

I like to keep a few Reese’s Pieces and Mini Cups out to press onto he top of the bars. That makes the finished product look all fancy and nice.

Bake at 350° for 18-20 minutes or until the cookie bars are puffy and no longer glossy in the center.

Let cool completely before cutting the cookie bars.
