Pro Tips: Recipe Notes for Broccoli Salad with Bacon

Based on Food Network’s Paula Deen Broccoli Salad recipe. The original Paul Deen recipe was a little heavy in vinegar, heavy in cheese and had some tomatoes.

I have modified these some and I included options for you to customize for your tastes.

For a “Healthy Broccoli Salad”, substitute a low-fat mayo product, cut the bacon substitute in a diced ham or Canadian bacon or just skip the meat.

The Broccoli

The broccoli needs to be the freshest possible. The older it is, the dryer it will taste.

A medium head of broccoli will yield about 2 cups or a little more broccoli for this recipe. So three medium heads or two large heads will be fine as written.

Make It Your Own

A half cup of sliced cherry tomatoes, golden raisins, diced carrot, diced celery, or dried cranberries all are good additions.

Nuts will add some nice crunch. So a half cup of toasted sunflower seeds, almonds, or pecans would add a great touch.

Recipe Size

This is an excellent recipe to cut down or increase in size. So make it for your family or a crowd.

Good refrigerated for about 3 days.

Start by washing and trimming the broccoli. Trim off the florets off and cut smaller if needed.

Don’t throw the stem away. Trim off the leaves, and the tough peel then cut into 1/2 inch cubes. You need 6-8 cups for a full recipe. That is 3 medium heads or 2 large heads.

Cut up 6-8 slices of bacon and cook until crispy over medium-high heat. About 5 minutes. Drain the bacon on a paper towel.

This refreshing salad is a nutritious combination of crunch (from the broccoli and sunflower seeds), sweetness (from the oranges and raisins) and a pleasant “full feeling” from the black beans.  

It is the perfect side dish for any barbecue or potluck!!


Measurements given here are approximate (except for the dressing). YOU decide how much of each ingredient you would like in your salad. The amounts given here are catered to OUR taste buds. 



3 small heads of broccoli (bite size pieces)

1 red bell pepper (diced finely)
1 cup raisins
2 oranges (peeled and sliced thickly)
15 ounce can of black beans (rinsed and drained)
1/2 cup  toasted sunflower seeds
1/2 cup finely sliced green onion tops


Dressing:

1/2 cup mayonnaise (I use light)
1/2 cup milk (I use 2%)
2 teaspoons white vinegar
1/4 cup sugar
1/4 teaspoon black pepper
Pinch of cayenne powder




Wash the broccoli and shake dry. Remove as much of the stalk and stems as you can so you can break the florets into bite size pieces. Add (small diced) red bell pepper, raisins, oranges, black beans, sunflower seeds and green onions.



Mix dressing ingredients with a whisk and pour about 1/2 cup of it over the salad just before you serve it. Toss gently and taste to see if you want more dressing. You may not need or want all of the dressing. 





NOTE: Peel the oranges, removing as much of the white as you can, then slice the orange into thick slices; cut the thick slices into four wedges.



NOTE: Let your imagination go wild with this salad, you can add just about any veggies that strike your fancy.

Ambrosia is an ancient Greek word that meant “the food of the gods”… and it sure tastes like it! It has a light and fluffy texture that everyone loves!

What is Ambrosia Salad?

Ambrosia Salad is a fluffy fruit salad. The kind of fruit you put in totally depends on what you like and the season.

For example, I love raspberries, so I made this Ambrosia Salad totally about them! I used raspberry pie filling to make it a little more sweet, since fresh raspberries in stores right now can be a little bitter.

  • Whipped topping, thawed
  • Marshmallow fluff
  • Raspberry pie filling
  • Mini marshmallows

How to make ambrosia

How to make Ambrosia Salad

It’s as easy as combining all of the ingredients! First, combine the whipped topping and marshmallow fluff. The consistency will be very runny. This is totally normal. No need to panic!

I like to combine those while using my electric hand mixer, this makes the job even easier! You can easily use a kitchen aid if that’s all you have.

After the marshmallow fluff and whipped topping are combined, fold in the can of raspberry pie filling using a rubber spatula. The consistency will transform into that classic ambrosia consistency we all love.

Once the raspberry pie filling has been thoroughly folded and mixed in, giving it that beautiful pale pink color, add in the mini marshmallows.

Fold them in until they are thoroughly dispersed through the salad. Refrigerate until serving and immediately refrigerate if you have any leftovers (but I doubt you will) 😉

Can Ambrosia Salad be frozen?

I would not recommend freezing, the texture isn’t quite right after it has thawed. But you for sure should refrigerate it! Ambrosia should be kept in the fridge until it’s eaten. Ambrosia Salad will only last for a few days in the fridge. It never lasts that long for me because it always gets eaten so fast!

Can you use Fresh Raspberries in Ambrosia Salad?

Yes, you can replace the raspberry pie filling with 3 cups of fresh raspberries. Just fold them in gently at the end, along with the marshmallows. I usually don’t even add in any sugar, but that just depends on the sweetness of your berries.

Can you replace the Cool Whip in Ambrosia Salad?

If you can’t find Cool Whip where you live or you prefer not to use it in recipes, you can use stabilized whipped cream instead. If you just use regular whipped cream, the consistency will be too light and the cream will not hold up very well when mixed into the jello salad. It’s very simple to make your own stabilized whipped cream and it just takes a few minutes!

How do you make stabilized whipped cream?

To make stabilized whipped cream, you will need the following ingredients:

  • 4 ounces of cream cheese (softened to room temperature)
  • 1/3 cup powdered sugar
  • 1 tsp vanilla
  • 1 cup heavy whipping cream.
  1. Beat the cream cheese with the powdered sugar and vanilla until soft and smooth.
  2. In a separate bowl, beat the whipping cream just until soft peaks form.
  3. Add the cream cheese mixture to the whipped cream and beat until stiff peaks are formed. Store in the refrigerator until ready to use.

A little tip for making whipped cream faster. Use a metal bowl for whipping the cream and place the bowl in the freezer for about 30 minutes before you make the whipped cream. This will significantly decrease the amount of time that you will need to beat the whipped cream – the process will go much faster!
