We’ve been creating recipes for this site for over 5 years now and I realized something the other day. We really love Jello. Seriously- we have a ton of jello recipes! So I thought I’d gather them all in one place and feature our very favorites.

Why won’t my Jello set?

In order for jello to set, it has to be mixed according to package directions and then chilled. If your jello didn’t set, you likely added too much water, added fruit with too high of water content or are attempting to make it set in a location other than the refrigerator. You can attempt to fix jello by combining 1 cup boiling water with a small 3 oz box of jello in the same flavor. Whisk until jello is dissolved, then stir into your not-set jello recipe. Refrigerate until set. On the side of the box of Jello it gives fruit addition suggestions. I’ve found that I can use fruit even they don’t recommend if I simply decrease the water by 1/2 cup in my recipe.

What Jello flavors are there?

There are quite a few Jello flavors with special flavors being released often. I find our local Walmart store carries the most variety of Jello. Here are all the flavors of jello: Apricot, Berry Blue, Black Cherry, Blackberry, Blackberry Fusion, Cherry, Cherry Lemonade, Concord Grape, Cotton Candy, Fruit Punch, Grape, Green Apple, Lemon, Lemon-Lime, Lime, Mango, Margarita, Melon Fusion, Orange, Peach, Pineapple, Raspberry, Strawberry, Strawberry-Banana, Tropical Fusion, and Watermelon.

Is Jello gluten free?

Jello does not contain any gluten in the ingredients, so it can be considered gluten-free. However, Jello, which is manufactured by Kraft, is not considered “Certified Gluten Free” meaning that it’s made in a facility that can contain trace amounts of gluten.

It’s absolutely the easiest (and fastest!) jello salad recipe you will ever make! Not only that, but it can be eaten immediately after preparing (or saved for later!)…and it’s delicious too! RASPBERRY VANILLA JELLO SALAD

Raspberry Vanilla Jello Salad is one of the easiest recipes you will ever make and it’s perfect as a side dish or even dessert!

Ingredients

  • 1 box 5.1 oz instant vanilla pudding
  • 32 oz. container vanilla yogurt
  • 8 oz. container Cool Whip thawed
  • 1 pkg. frozen raspberries

Instructions

  1. In a large bowl, combine the pudding mix and the vanilla yogurt, stirring until well mixed.

  2. Fold Cool Whip into the mixture. (You can use a spatula or a whisk!)

  3. Lastly, fold in the raspberries. I had set mine out for about 10 minutes before making the salad, but you can put them in frozen and they will thaw very quickly so you can serve the salad right after mixing. If you don’t serve the salad immediately, the raspberries will thaw more and the juices will add a raspberry flavor to the entire mixture – I like it both ways!

Rainbow Jello Parfaits are so festive and fun, and can work for holidays! You only need two basic ingredients to make these…jello and yogurt! These layered Jello treats are so easy, and if you pick the right colors, it looks just like a rainbow!  You do have to give yourself a day to make them just to allow all of the layers to set, but each layer only takes a few minutes to make and is not as hard as it may seem! How do you make jello layers?

Making Jello layers is much more simple than it seems, it just takes some time. You prepare your bottom layer first, by dissolving the package in boiling water, stirring in cold water, and putting it in the pan or container of your choosing. You refrigerate it until it’s almost set, usually about 45 minutes. Next you prepare your next layer the same way and gently spoon it over the first layer, then refrigerate for 45 minutes. You repeat until you have all the layers you desire.

Can Jello melt?

Yes, jello can melt. It loses it’s firmness slowly at room temperature and quickly on hot days. It melts completely at 95 degrees.

Where do you buy Jello?

You can usually buy Jello at your local grocery store, like Walmart, Kroger or Target. I am able to find the largest variety of jello at Walmart. Jello is almost always in the baking aisle. It commonly found around cookie mixes, cake mixes, and brownie mixes. You can also buy Jello online, if you’d prefer.

How long does it take for Jello to set?

Basic jello will set in about 3-4 hours. If you’re using jello for a salad or other type of recipe, it will likely set in 2-4 hours. Thin layers of jello set in about 2 hours.

Gluten-Free Thanksgiving Recipes & Tips

Scones, pie, pumpkin bread, acorn squash, quinoa salad with pears…


Thanksgiving. Nothing sends shivers of trepidation up a gluten-free dairy-free girl's spine like the mental image of Grandma's white bread dressing, or shimmying slabs of Aunt Ida's pumpkin pie. It's a butter and wheat flour gorge fest with danger at every turn- the gut-twisting threat of thirty-six hours chugging Pepto Bismol poised to strike on every holiday decorated plate. Jovial forkfuls of tradition and conviviality aside.


It can be a nightmare, Darling.

If you're lucky, your family is tuned in to the ins and outs of celiac disease and gluten sensitivity, and they are well aware of the angst and anxiety food centric holidays can trigger for those of us who need to be vigilant about each and every spoonful of food that enters our quirky gluten-free universe. 

If you are blessed, they are thoughtful and well schooled in where gluten might lurk (turkey broth, marinades, gravy, seasoning packets, spice blends, traditional stuffing, cornbread mixes, crackers, pie crusts, soy sauce). And they don't ask questions like, You can eat "whole" wheat crackers, right? with the emphasis on the word whole as if somehow, the word itself makes the wheat magically safe for gluten sensitive folks to consume (it doesn't). They won't sigh when you politely decline a slice of Aunt Ethel's pecan pie and say, Why don't you just eat the filling and not the crustThey won't hold up a pitcher of turkey gravy and whisper, A little bit won't kill you. Or my own personal favorite, Oh, go ahead… I have food allergies and I cheat.

Right.

If these persuasions are foreign to you, then you, Dear Reader, have much to be thankful for this holiday season. You are blessed with a clan that gets you, loves you without judging you, and honestly cares about every morsel that enters your fragile autoimmune universe.

Green Chile Pesto and Roasted Chayote Squash Side Dish – Thanks, Rick!

If you’re going to steal one Rick Bayless recipe, you might as well steal two, which is exactly what I did here with this green chile pesto, and roasted chayote squash side dish. Like I said in the video, most great chefs encourage this type of thievery, as long as you give them credit, which I’m happy to do.


What I’m calling “Green Chile Pesto,” is really his Green Chile Adobo, but I thought my audience would better relate to a “pesto,” since that’s what this reminds me of the most. Although, I’m not sure how it would be in a pasta, and don’t have any immediate plans to find out.

What it was great in, was this very simple chayote squash dish, which is really more of a warm salad. If you can find chayote near you, I recommend you give it a try, but if not, grilled zucchini or other summer squash would also work, as would something like roasted acorn or delicata squash.


I’d try to choose a fairly mild olive oil for this, since we have enough heat and bitterness from the peppers. Which reminds me, don’t over blend this. While some chefs claim it’s just a wives tale, I’ve found that if you over-process an olive oil-based sauce, especially ones with garlic in them, it can get very bitter. Other than that, not much can go wrong, and so on behalf of Chef Bayless and myself, I’d like to say, we really do hope you give it a try soon. Enjoy!


Ingredients for the Green Chile Pesto:
6 Serrano peppers
1 Poblano pepper
6 cloves garlic, still in the paper
1 bunch cilantro
1/2 bunch Italian parsley
1 1/2 teaspoon kosher salt (or about 3/4 teaspoon fine salt)
3/4 cup mild tasting olive oil, or vegetable oil
juice from 2 fresh limes*

* You can add the lime right to the pesto if you’re going to use it all at once as a sauce for something, but this seems to keep longer in the fridge without it added in, and so I prefer to add it to whatever I’m using it with instead.

For the Chayote Squash Side Dish:
3 Chayote squash, cut in 1-inch pieces
1 tablespoon olive oil
1/2 teaspoon kosher salt
juice from 1 lime (unless already added to your pesto)
2 or 3 heaping spoons of Green Chile Pesto
1/3 cup crumble soft goat cheese, plus more for the top
pumpkins seeds to garnish, optional
