Gluten Free Sandwiches with Cheese and Bacon


Gluten-free cheese and bacon sandwiches, easy to make, fluffy and stringy. You can accompany these sandwiches with vegetables or other cheeses, but even alone, they are almost a single dish!

Family💚are always looking for tasty solutions for bread-making, but that they are easily reproducible by all and that they can bring the children with the taste of gluten-free flours: this is where these stringy sandwiches with bacon were born.

For this recipe I used 6 grams of fresh brewer's yeast and let it rise for 5 hours. If you want to speed up or lengthen the leavening you can follow the instructions below:

10 gr fresh brewer's yeast (5 gr dry brewer's yeast) => 2/3 hours in the oven off with the light on

6 g fresh brewer's yeast (3 g dry yeast) => 4/5 hours in the oven off (you have to turn on the light depending on the room temperature, if it grows little, turn it on)

3 gr fresh brewer's yeast (1 gr dry brewer's yeast) => overnight in the fridge

You can also make these sandwiches with the planetary mixer with the hook leafy, starting from the flour in the bowl, dissolve the yeast in the water and add it to the flour, let the dough work, then add the oil and finally the salt.

As you can see, these sandwiches have 100% hydration, with gluten-free flours, it is normal to use more water, but 100% hydration you still have to know how to manage if you work by hand. In this case you can afford it because you put the dough directly into the die and in any case it always depends on the type of flour used and how it absorbs.

Sweet Milk Sandwiches: These sweet rolls originated in Spain in the 19th century. precisely in the Café Suizo De Madrid, hence the name they still have today “Suizos”. In Southern Italy, between various dominations, we have recipes very similar to these sweet rolls: the famous brioches "with tuppo" and the Danube but the addition or not of some ingredients. Try them they are really delicious and very soft, perfect for breakfast and snack!

Ingredients for 10-12 sandwiches

For the leavening:

  • 100 gr of Manitoba flour
  • 100 grams of warm milk
  • 3 gr of dry yeast (I "Mastro Pizzaiolo" Pane Angeli)

For the dough:

  • 150 grams of milk
  • 90 grams of sugar
  • 3 medium eggs
  • 3 gr of salt
  • 80 gr of butter

How to prepare sweet milk sandwiches

  1. First of all we prepare the leaven: put the flour (100 g), the dry yeast and the warm milk in a bowl, mix and cover with cling film, let it rise until doubled in volume (from 40 min. To 1 hour). ambient temperature is below 22 ° we put the bowl in the oven with only the light on.
  2. Put the leaven in the bowl of the mixer together with the eggs, the sugar 90 g, the flour (450 g of flour 00), and a pinch of salt 3 g. We activate the mixer for 1 minute, then let it rest for 1 minute, repeat this operation 3 times. Finally at this point add the butter a little at a time and operate the planetary mixer for 2-3 minutes. Until the butter is well mixed into the dough.
  3. We pour the mixture into a large bowl in which we have brushed a drop of olive oil. Let it rise for 2 to 3 hours (it depends on the foreign temperature; if the environment is too cold, repeat the operation with the oven off.
  4. We pour the dough onto the lightly floured work surface
  5. We cut pieces from the dough of about 80 grams. Let's create the sandwiches like in the video above. Arrange the sandwiches on a baking sheet covered with parchment paper, cover with a cloth and leave to rest for 30 minutes. We brush with beaten egg, make a cut on the surface and fill this cut with sugar wet with a drop of water.
  6. We bake in a preheated oven at 200 ° for 13-14 minutes. We serve

They can be stored in food bags for 2-3 days.

Homemade Hamburger Sandwiches, a very simple recipe for making the classic soft burger buns, slightly sweet just like those in the pub. If you divide the dough, the sandwich will be in the maxi format, otherwise if you want a medium sandwich you can divide the dough into 8. Perfect for filling with beef burgers or with vegetable burgers, slices, onion, salad, a slice of tomato and homemade mayonnaise (without eggs)

Ingredients for 8 sandwiches

  • 450 grams of flour (300 flour 0+ 150 Manitoba flour)
  • 1 egg
  • 7 gr of dried brewer's yeast (I Mastrofornaio)
  • 180 grams of warm water
  • 40 grams of granulated sugar
  • 1 teaspoon of salt
  • 30 gr of extra virgin olive oil

Let's proceed by making the dough that can be prepared by hand or with the planetary mixer, I used the planetary / mixer. We prepare all the ingredients on the work surface.

We put in the bowl of the mixer the flour, lo sugar, the dried brewer's yeast, L'egg and theoil, start mixing with a wooden spoon or, if we use the planetary mixer, with the leaf hook (K); let's add thewarm water and finally the salt.

We mix the ingredients, then change the hook and put the hooked one, let the dough knead, in all it will take 5-6 minutes. Proceeding by hand instead we knead first in the bowl, then on the work surface with a thin layer of flour.

We form a ball and place in a bowl with a drop of oil on the bottom. We cover the container with foil. We let it rise for 1 to 2 hours (based on the outside temperature) must double its volume, if the environment is cold we keep the container in the oven off with only the light on. After rising, roll out the dough on a pastry board with very little flour and let's create a loaf from which we will detach 6 or 8 loaves. We create balls and let them rise for at least 1 hour (better 2).

If they have not risen much despite the time passed, you will see that they will rise further in the oven. Now put the loaves on a baking sheet with parchment paper, brush with water and oil in equal quantities. Add the sesame seeds (if you want you can also brush with an egg and milk beaten together, or just with milk).

We bake at 180-190 ° for 15-20 minutes or in any case until golden brown. After taking out the burger buns, remove them from the pan and place them on a wire rack. To prevent moisture from forming on the bottom. Your homemade burger buns are ready. We cut the sandwiches and make to taste!

The leftover sandwiches can be stored in a food bag once cooled; they will be soft for 2 days.
