Strawberry Cake Mix Cookies are perfect for any occasion. They’re so simple to make that you can make a batch whenever you want, including for holidays like Valentine’s Day or even a baby shower (they are a perfect shade of pink).

Tips to get the PERFECT Cake mix cookies:

Using parchment paper is an amazing product to use that helps to keep the cookies from sticking to the pan and helps to prevent overcooking the bottoms of the cookies. With this you don’t even need cooking spray!

A KitchenAid mixer is a great way to reduce your hands-on effort. Using the cookie paddle attachment helps you to get the cookie dough mixed perfectly every time.

Having a cookie scoop helps to have measured and uniformly sized cookie dough balls. This lets all of your cookies grow to the same size and cook at the same speed.

To make colorful and festive Strawberry cake mix cookies like I did, use half the amount of white chocolate chips and use colorful M&M’s for the other half.

Cake mix cookies are soft and chewy cookies made out of a simple box of cake mix. This not only saves you a significant amount of time and dishes in the kitchen as opposed to regular cookies, but it also gives you some very flavorful cookies!

Do I Have To Use Chocolate Chips?

Nope! While these strawberry cake mix cookies taste amazing with white chocolate chips, you don’t have to use them if you don’t want to. You can even choose to use a different variety of chocolate instead like dark chocolate, milk chocolate, or semi-sweet. I used half white chocolate chips and half chocolate candies, so there are plenty of options out there to choose from!

Strawberry Cake Mix Cookie Ingredients

-1 box 15.25 oz Strawberry Cake Mix

-2 eggs

-1/3 cup melted butter

-1 1/2 cups white chocolate chips or chocolate candies (M&M’s)

How to Make Strawberry Cake Mix Cookies

Preheat your oven to 350 degrees F and line a cookie sheet with parchment paper.

Combine the cake mix and the eggs in a medium sized mixing bowl. Add in the melted butter and mix well.

Add in the white chocolate chips/ candies and then stir to combine. I prefer to stir the candy in by hand so that they don’t get crushed.

Use a medium 1.5 TBSP cookie scoop to measure out dough and then place them on the cookie sheet. If you’d like, you can top the cookies with a few more chocolate candies.

Bake for 8-10 minutes. Once they’re done, remove them from oven and let them rest for another 3-5 minutes on the hot cookie sheet. Transfer to baking racks to cool completely.

  • 1 box Strawberry Cake Mix 16.25 oz

How to make Cherry Jelly Hearts CandyI love jelly candy! Nellie’s shared her Raspberry and Chocolate Orange Sticks and I thought it’d be cute to make jelly hearts. They’re softer and less gummy than the jelly hearts you buy in the store- my family loved them! I used cherry jello and cherry extract, so there was a bright fruit flavor. We loved them covered in chocolate or just covered in sugar. They were so easy to make as well- enjoy!

Here’s what you’ll need to make this candy:

-2 packets unflavored gelatin (about 1 1/2 TBSP)

-4 oz. box cherry flavored Jello

-1 cup sugar

-1/2 tsp cherry extract (if you can’t find cherry, you can use any berry or fruit! I find the best variety of extracts at Walmart. You can also check craft stores- they usually have a lot in the cake decorating section!

-granulated sugar (for coating, if desired)

-1/2 cup white or dark chocolate melting wafers (for coating, if desired)

Here’s how to make Cherry Jelly Hearts- it’s easy!

Prep Jello

In a small bowl, soften the unflavored gelatin in cold water and then set aside.

In a medium-sized saucepan on the stove, combine the sugar, cherry Jello and hot water. Continue stirring until everything is dissolved. Bring the jello to a boil over medium-high heat.  Add in the unflavored gelatin mixture and then slowly boil on medium-low heat for 20 minutes. Remove the pot from the heat and then add in the cherry extract.

Pour the jello into a 6″x9″ container that’s been sprayed well with non-stick spray. I used a tupperware.

Let it stand overnight.

Gently loosen the edges of the jello with your finger. Overturn the container onto a cutting board. You might have to give it a few shakes, but once one corner comes off, the whole block of jello will fall out.

Use a small 1.25″ heart cookie cutter to cut 24 hearts out of the jello rectangle.

Melt chocolate in a small glass bowl for 1 minute. Let sit for 2-3 minutes, then stir until smooth. If chocolate’s still chunky, place back in microwave for 15 second intervals, waiting and stirring in between intervals so that you don’t seize the chocolate.

Use a fork or a Wilton Dipping Tool to dip and coat each heart in chocolate. Shake off excess chocolate and transfer to wax paper to cool and set.

Ingredients for Marshmallow Pops

Here’s what you’ll need to make marshmallow pops:

— Large Marshmallows

–White Chocolate and Milk Chocolate (or Dark Chocolate), for coating

–Valentines Sprinkles

Place a candy stick in the center of each marshmallow so that they stand up by themselves.

Melt the chocolate in a microwave safe dish (I like to use a glass Pyrex measuring cup) and then microwave for about 45 seconds. Stir the chocolate gently and then return to the microwave for about 30 seconds. Stir again.

Dip each marshmallow in chocolate, then top with sprinkles, turning marshmallows to cover all sides. Set on wax paper.

Repeat until all marshmallows are covered with chocolate and sprinkles. Wrap individually in baggies for gift giving or store in an airtight container.

What’s the best chocolate for melting?

When making candy like this I really find that dipping chocolate just works best. You can purchase Ghirardelli Melting Wafers at most grocery stores. I buy my melting chocolate in bulk on Amazon. If you really want to use chocolate chips instead, I suggest melting 1/2 tablespoon of shortening or coconut oil in with the chocolate chips, to thin it out and make it easier to dip the candy.

How to melt chocolate

I prefer to melt chocolate chips in the microwave because it is so fast and easy. Place the chocolate chips in a microwave safe dish (I like to use a glass Pyrex measuring cup) and then microwave for about 45 seconds. Stir the chocolate chips gently and then return to the microwave for about 30 seconds. Stir again.

Even if the chocolate chips aren’t completely melted, just keep stirring and see if they will melt all the way. If they still aren’t melted, microwave for another 15 seconds and stir again. You just want to be careful not to microwave the chocolate chips too long because then the chocolate will seize and be unusable.

You can also melt the chocolate chips over the stove in a saucepan. Just turn the heat to low and stir the chocolate chips just until melted.
