Crockpot Sausage Tortellini Soup made with Italian sausage, tortellini, fresh spinach, canned tomatoes in a flavorful creamy broth. This crockpot soup recipe only takes a few minutes of prep and then the slow cooker does the rest of the work!

Crockpot Sausage Tortellini Soup is one of my favorite soup recipes. The flavors are amazing and I love how easy this soup is to put together. You do have to cook the sausage in advance, but everything else (including the tortellini) can just be thrown in the crockpot and left to cook.

The recipe also calls for cream cheese, which adds such a wonderful creaminess to the soup and of course extra cheesy flavor too! To me, this soup recipe almost tastes like lasagna, but it’s so much easier to make.

Ingredients in Crockpot Sausage Tortellini Soup

You will need Italian sausage for this recipe. I also use mild sausage, but if you like a little more kick, go for it! You could also use ground beef or even chicken if you prefer. If you are trying to avoid meat, you can make the soup without it and it’s still delicious!

I use fresh tortellini in the recipe -the kind that you find in the refrigerator section of the grocery store, usually next the cheese. I prefer the taste of this tortellini and it is already a lot softer, so it tends to cook a lot faster than frozen tortellini or the dry tortellini that you can buy from the store that is next to all of the other pastas. You can use those types of tortellini, but you will have to either boil the tortellini slightly before adding to the soup, or you will have to extend the cooking time by 2-3 hours to make sure the pasta gets cooked. I use cheese tortellini, but you could definitely use a different variety if you prefer.

Fresh spinach is the next ingredient in the soup. You could probably use frozen, but make sure it is well drained before adding to the soup.

You will also need 2 cans of diced Italian style tomatoes. If you have regular diced tomatoes, they will work fine too, but the Italian style tomatoes already have some spices added that will just add that much more flavor to your soup.

You will also need 4 cups of chicken broth which is convenient since chicken broth comes in 32 oz (4 cup) boxes at the store. You can also use homemade chicken broth if you prefer, or you can use chicken bouillon to make the equivalent of 4 cups.

The next ingredient is a block of cream cheese. I usually have regular cream cheese on hand, but you could easily use a reduced-fat or no-fat variety. Just make sure the cream cheese is cubed before adding to the soup so that it can melt easily.

The last thing to add to the soup is the spices. This soup recipe calls for dried basil, dried oregano, salt and ground black pepper.

How to make Crockpot Sausage Tortellini Soup

Place all of the ingredients in your slow cooker and stir them up just a little bit to make sure that the tortellini is covered by the broth. Cook on high for about 3 hours or on low for 5-6 hours, until the tortellini is cooked and soft.

Right before serving, stir the soup to fully incorporate the cream cheese and make sure it is melted completely.

Here’s a cheesy, flavorful Italian recipe that combines two favorites: ravioli and lasagna! It’s a hearty, comforting dish that both kids and adults really enjoy.

Here’s what you’ll need to make this recipe:

San Marzano Style Tomatoes

I recommend using Hunt’s San Marzano Style tomatoes- they’re brand new and can be found on the canned vegetable aisle of your local grocery store. San Marzano style tomatoes are a sweeter tomato that are low in acidity, with a thick juice that makes them perfect for baking. Hunt’s San Marzano Style Tomatoes are all-natural and steam peeled and have a bright, tangy fresh flavor.

Hunt’s San Marzano Style Tomatoes are sold in a large 28-oz can and come in three flavors: Plain, Italian, and spicy red pepper. I used the plain variety for this recipe, but the Italian would work well too!

Cheeses

I added 3 different types of cheeses to this recipe! The ricotta, cream cheese and mozzarella add a creamy, flavorful touch to the dish that just tastes great. I also added 1 egg and the seasonings to the cheese mixture.

Meat for Lasagna

I cooked and crumbled 1 pound of Italian sausage for this ravioli bake. You’re welcome to use ground beef or turkey instead. If you’d like to make this a meatless meal, you can slice vegetables like zucchini, mushrooms, broccoli and cauliflower and use those in place of meat!

Frozen Ravioli

I used cheese ravioli in this dish, but you can use any type you’d like! I think beef or chicken would be great. Spinach ravioli is also a great option!

How to make Baked Ravioli Lasagna

Here’s what you’ll need to do to make this recipe at home:

Preheat oven to 400 degrees F.

Combine Cheese Mixture

In a small mixing bowl combine ricotta cheese, cream cheese and 1 egg. Stir until smooth. Add in seasonings. Stir & set aside.

Combine Tomatoes & Cooked Sausage

Pour undrained tomatoes into pan with cooked & drained Italian Sausage. Use a Chop-Stir (or a similar utensil) to cut tomatoes and sausage into smaller pieces.

Layer the Lasagna

Spray a 9×13 pan with non-stick spray. Ladle about half of the tomato-sausage mixture into bottom of pan.

Top with a layer of frozen ravioli, then dot ravioli with dollops of the cheese-egg mixture. Spread with about half the shredded mozzarella cheese.

Repeat with another layer of sausage-tomatoes, then the remaining ravioli, ending with the remaining cheeses. If you have a few raviolis left over, I just piled them on top. Yum!

Cover & Bake Ravioli Lasagna

Cover with foil & bake for 30 minutes. Remove foil & bake an additional 10 minutes. Replace foil and let sit about 20 minutes and serve. This resting period allows the sauce to thicken.

Easy Appetizer Ideas

I personally think you can never have a shortage of easy appetizer recipes. Not only are appetizers great for, well, appetizers 😉 but they also make an amazing lunch or snack for the little tummy’s in your life! Chicken Parmesan Bites are no exception to the Easy Appetizer rule.. this may be the easiest!

If you have an air fryer, these little bites can become even easier, if that is even possible. I also love how we can take this one recipe and idea and adapt it into many other appetizers! Substitute bbq sauce, honey mustard, sweet and sour or wing sauce for the marinara sauce and you have a completely different dish!

How to make Chicken Parmesan Bites

To make theses Chicken Parm Bites, the first thing you’ll need to do is purchase your favorite brand of popcorn chicken. You can honestly make these as small and pop-able as you’d like. If you want to use larger chicken strips, be my guest!

Once you have picked out what chicken you’d like to use, we need to cook it until they are nice and crispy. As I mentioned earlier, I like to use my air fryer for this, the consistently have a great crispy texture that is hard to achieve in the oven.

Once the chicken is baked, hot and crispy, arrange in a serving dish. Spoon a small amount of your favorite marinara sauce onto the chicken and then top with shredded mozzarella cheese.

Now toss it in the oven and broil for a few minutes until the cheese is melty, bubbly and delicious. Pull out of the oven and serve immediately with toothpicks.

Can I make this Appetizer a meal?

YES! I absolutely love doing this. I will add a bit more marinara sauce and then scoop and serve over pasta instead of eating with a toothpick. This is always a hit with my kids as a meal.
