It’s atrociously windy and cold Cold COLD outside here this weekend. Though, I think with the massive winter storm over the states, most of the country is in the same situation! Cold weather always means it’s time to do some baking. After a trip to a new local bakery this past weekend, I’ve had cookies on my mind. Those chocolate chip cookies there were some of the BEST cookies I’ve ever eaten. Seriously. The BEST.

That is… until I decided to try my hand at making these lightened up Monster Cookies. So what is a ‘monster cookie’ anyway. Welp. It’s basically a monster of a cookie that has a little bit of everything in it. Usually they are peanut butter based and loaded with oats, chocolate chips, and candy-coated chocolates.

We’ve all made our New Year’s resolutions and now it’s time to continue sticking to them! This year, as with any year, my goal is to continue eating better and more health conscious. Eating ‘right’ can come in a lot of forms, and for me one way to do that this year is to start eating more ethically and simply.

These potato skins are just that. Simple. As simple as they can possibly be. From the potato to the bacon on top there is minimal ingredients used or time spent here! Another good thing about these potato skins? They’re great as a side dish OR as a hot appetizer. I’m thinking… game day spread. Oh, yeah!

New Year resolutions can be tricky and difficult to stick to. It seems like it’s about this time when we all start to taper off and give in. If you’re anything like me, my New Year resolutions are always centered around food. Food is life, after all. Even being as I’m more of a health conscious person, I always, always, ALWAYS strive to do better and eat better. That’s where these Overnight Oats fit in.

As I said, one of my resolutions this year was to eat more simply. Food can get complicated and I want to take the time to slow down, reel it in, and enjoy food for what it is. Yep! I left my resolution pretty vague and open. That’s one of the tricks to sticking to these resolutions!
