Skinny Baked 'Overnight' Vanilla Chai Oatmeal — The Skinny Fork



When I say that there’s a lot of spices in this oatmeal, I mean just that. There’s a lot of spices in this oatmeal. I’d say it’s well over a tablespoon of spices mixed together that makes this oatmeal stand out from the others in it’s layer upon layer of sugar, and spice, and everything nice!

To lighten this oatmeal up, I used a brown sugar/sweetener in place of regular brown sugar. I also used an unsalted butter so that I could add my own amount of salt in. I also used an unsweetened vanilla almond milk and PLENTY of vanilla extract to really punch up the vanilla flavor in here.

Whohooooo. It is coooold out today, y’all. It is cold. Windy. And I am in the process of recovering from a cold. Current state? My body needs all the warm things. Thankfully, I had this Instant Pot Apple Cider on my list to make this week. And can I just say, it really really hit the spot.

There isn’t much that can top a homemade mug of spiced apple cider soothe a sore throat. Especially while we’re in the throes of Fall season.

To be pretty honest, I didn’t think making homemade apple cider would be this easy. Toss everything into a pressure cooker and in 15 minutes you’ve got the makings of apple cider.

Despite not having a lick of cream in this soup, it manages to come out smooth and ‘creamy’ with the coconut milk and the cannellini beans being blended together. It turns into a beautiful thick, stick-to-your-ribs meal in a bowl.

This soup would be great paired with a nice slice of crusty bread for dipping or a side salad to get in even more veggies! No matter how you serve it up, it’s sure to be enjoyed. And don’t let the name fool you! Despite the fact that this soup has curry in the name, it’s not at all spicy. The curry is there for flavor alone.
