Snickerdoodle Apple Pie is a variation on classic Snickerdoodle cookies + apple pie! This fun take on a traditional apple pie recipe is perfect for Snickerdoodle lovers!

Snickerdoodle Apple Pie recipeWe love apples and have an abundance (or should I say bushel) of apple recipes and adding a snickerdoodle apple pie to the list just feels right. Modified from my snickerdoodle apple cobbler recipe, this pie is a unique adaptation! Every slice is so good, I’m so glad I had the idea to make it!

What is snickerdoodle apple pie?

Snickerdoodle apple pie is a tangy snickerdoodle crust filled with an easy canned (or homemade) apple pie filling. Top it off with some cinnamon sugar (what’s a snickerdoodle without cinnamon sugar?) and this pie is complete. Of course, there are still about 30 minutes to wait for it to bake and cool, but that gives you plenty of time to prep some vanilla ice cream and caramel sauce to accompany this spiced apple pie.

-Butter: I prefer salted butter, but you can use unsalted if desired. You will need 1/4 cup (half a stick) of softened butter.

-Shortening: To get a better cookie dough texture, use 1/4 cup of butter flavored Crisco shortening.

-Sugar: We need 3/4 cups of white granulated sugar to go into the cookie dough crust.

-Egg: We need 1 egg to help act as the binder for the cookie dough pie crust.

-Vanilla: I like to use high quality vanilla, but use 2 teaspoons of whatever vanilla extract you have on hand.

Snickerdoodle Apple Pie recipe

-Flour: We need 1 1/3 cups of all-purpose flour to act as the gluten base for this pie dough.

-Cream of Tartar: Snickerdoodles are famous for their tang because of this additional ingredient, so we need 1 teaspoon to help drive that flavor profile home and get it into our yummy pie.

-Baking soda: We need 1/2 teaspoon of baking soda to help use get our pie crust to puff up slightly.

-Salt: To help enhance the flavors of this pie we will need 1/4 teaspoon of salt.

-Cinnamon Sugar Mixture: We need a combination of 1/4 cup sugar and 2 teaspoons of cinnamon to help create a topping for this snickerdoodle pie.

-Apple pie filling: Use a 20 ounce can of your favorite apple pie filling or if you’re using homemade, round it up to about 2.5 cups of needed apple filling.

-Caramel sauce: Top off your snickerdoodle pie with some caramel sauce. Use my homemade caramel sauce recipe for a DIY sauce if desired.

Snickerdoodle Apple Pie recipeHOW TO MAKE SNICKERDOODLE APPLE PIE

Preheat your oven to 375 degrees F and spray a pie pan with cooking spray. If you will be using a darker pan, decrease the baking temperature to 375 degrees F.

In a bowl, cream together the butter, shortening, sugar, egg, and vanilla.

Blend in the flour, cream of tartar, baking soda, and salt.

Take about 2/3rds of the snickerdoodle dough and press it flat into the bottom of the pie pan. Press it against the edges so that they rise just a bit around the sides of the pan. Sprinkle half of the cinnamon sugar mixture on top of the dough.

Spread your apple pie filling over the dough. Make sure that the filling extends to all sides of the pie pan.

Take the remaining cookie dough and crumble it over the top of the pie, using your fingers. It won’t completely cover the pie, but it will be close.

Sprinkle the remaining cinnamon sugar mixture over the top.

Cover the pie with foil (I sprayed mine with cooking spray where it would touch the dough).

Bake for 20-25 minutes on the middle oven rack.

Remove foil and bake for an additional 5 minutes.

Let cool for about 10 minutes before serving.

Top with ice cream and caramel sauce if desired. Enjoy!

It adds in a little acidity and changes the texture of the cookie dough. This helps to work a little as a leavening agent as well as a flavor enhancer and is what creates the unique tang in every snickerdoodle cookie.

How long is snickerdoodle apple pie good for?

This pie should be good for 2-3 days if kept properly stored. I recommend keeping apple pies in the fridge because you can get a little more time with them before they go bad, but it should be fine at room temperature for up to 2 days.

Snickerdoodle Apple Cobbler is two of our fall favorite desserts into this delicious cobbler recipe. It’s amazing- I can’t believe I haven’t done this sooner! The flavors go perfectly together. top with a drizzle of caramel sauce and vanilla ice cream if you’d like.

  • 1/2 cup softened butter
  • 1/2 cup shortening (I used butter flavored Crisco)
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 TBSP vanilla
  • 2 3/4 cups flour
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • cinnamon-sugar mixture (1/2 cup sugar + 2 TBSP cinnamon)
  • 2 20-oz cans apple pie filling

  1. Preheat oven to 425 degrees F. Spray a 9×13 glass pan with non-stick cooking spray. (If using a darker pan, decrease temp to 400°F)
  2. With a hand mixer, cream together butter, shortening, 1 1/2 cups sugar, the eggs and the vanilla. Blend in the flour, cream of tartar, soda and salt. 
  3. Take about 2/3 of the snickerdoodle dough and press it flat into the bottom of the 9×13 pan, pressing against the edges so that they rise just a bit around the sides of the pan. Sprinkle half the cinnamon sugar mixture on top of the dough. Spread both cans of apple pie filling over the dough, making sure it extends to all sides. Take the remaining cookie dough and crumble it with your fingers, placing small pieces covering the top of the apple pie filling. It won’t completely cover it, but it will be close. Sprinkle the remaining cinnamon-sugar mixture on top.
  4. Cover cobbler with foil. (I sprayed the side that would be touching the cobbler with non-stick spray.) Bake at 425 degrees F for 40 minutes in the middle rack of the oven. Remove foil and bake another 10 minutes.
  5. Let cool for 10 minutes and serve, topped with caramel sauce if desired. Or a scoop of vanilla ice cream and then caramel sauce. Mmmmm!

What is a Snickerdoodle?

A classic Snickerdoodle cookie is a soft and chewy vanilla cookie that is rolled in Cinnamon and Sugar before baking. It’s signature chewy texture comes from adding either cornstarch or Cream of Tartar to the cookie dough.

What Ingredients are in Pumpkin Spice Snickerdoodle Cookies?

Simple, everyday ingredients are all you need for the base of these Pumpkin Spice Snickerdoodle Cookies! Just take a peek! Specific measurements will be included below in the printable recipe card.

How to make Pumpkin Spice Snickerdoodles

Pumpkin Spice Snickerdoodle cookies are made with the same method as most cookies. First, butter and sugar are creamed together until light in color and fluffy in texture. Next, vanilla and eggs go into the mix. After the eggs have been fully incorporated, add flour, baking powder, salt and corn starch. (The cornstarch helps keep them super soft!)

The dough will be very soft, but should be able to easily be scooped and rolled. Scoop and roll the dough into equal sized balls. I like to use a cookie scoop to achieve consistent results.

Now, roll each cookie dough ball into a mixture of Pumpkin Pie Spice and Sugar, this subtle change from the classic snickerdoodle cookie will make all of the difference.

Arrange the cookies on a parchment lined cookie sheet (or be sure to spray the cookie sheet with non-stick spray!) and bake at 350° for 8-10 minutes. Make sure to take them out of the oven before they start turning brown to insure the perfect soft cookie.

How to store your Pumpkin Spice Snickerdoodle Cookies

Store in an airtight container at room temperature for up to 3 days. If you’d like your cookies to last a bit longer, you can freeze them for up to 3 months. Be sure to pull them out of the freezer for 30 minutes before eating to bring them up to room temperature.

How to Freeze Pumpkin Spice Snickerdoodle Cookie Dough

If you’d like to freeze the dough before baking, I would suggest scooping the dough, rolling it in the pumpkin spice and sugar mix and then freezing the balls on a cookie sheet for about 1 hour. After the hour is over, you can then toss the cookie dough balls into a zip top bag without the cookie dough balls sticking to each other.

When you are ready to bake the cookies, arrange on the cookie sheet and let them sit at room temperature while your oven preheats. You will then bake as usual.

  • 1/4 cup sugar
  • 1 tsp pumpkin pie spice

Instructions

  • Preheat the oven to 350°.

  • Cream together the butter and sugar.

  • Add in the eggs and vanilla. Mix thoroughly.

  • Next, add in the flour, baking powder and cornstarch. Mix until the dough forms. Dough will by soft and slightly sticky but should easily roll into a ball.

  • Scoop the dough into equal sized balls. Roll the balls into the pumpkin pie spice and sugar mixture. Arrange on a parchment paper lined cookie sheet.*

  • Bake at 350° for 8-10 minutes.

  • Allow to cool on the pan for 3-5 minutes and then move to a wire cooling rack.

*if you are not using parchment paper, make sure to spray with non-stick spray!

Do you have to have Cream of Tartar for Snickerdoodles?

Cream of Tartar is one of the ingredients that gives Snickerdoodles its distinct flavor & texture. It makes it so that these cookies don’t just taste like sugar cookies with a cinnamon sugar coating. The flavor is unique and fairly difficult to replicate. Nevertheless, if you’re out and don’t want to run to the store, you can substitute corn starch or baking powder instead, being as baking powder actually contains Cream of Tartar!
