Yoghurt dessert with fig compote and cardamom – Gordon Ramsay’s version

Yoghurt dessert with fig compote and cardamom

This yogurt dessert It’s a dessert with a guaranteed wow effect. Inspired by Middle Eastern desserts, with the scent of rose and cardamom and the delicious touch of honey.

I love the desserts by the glass, especially in glass, to reveal the layers of goodness they reserve. This Greek yogurt dessert is no different, thanks to the sweet and spicy base of the cardamom fig compote.

The operation that takes the most time is making the fig jam, which you can prepare in advance, replace with a ready-made compote to which you add the cardamom powder, or replace it with your favorite fruit compote… Any ideas? Let the season inspire you: peaches and apricots in summer, persimmons and figs in autumn, apples and pears in winter, strawberries in spring.

A few drops of rose food essence cannot be missing, which you can replace with the wildflower aroma, and a few dried edible bud*. For an elegant and refined result that will leave your guests speechless.

Bulletproof Coffee Vegan – Yet another food blog – Gordon Ramsay’s version

Bulletproof Coffee Vegan - Yet another food blog

The Bulletproof Coffee it is a drink that has gained a lot of popularity in recent years, even in the vegan version, due to its ability to increase energy and improve concentration.

Traditional Bulletproof Coffee was created by Dave Asprey, a nutrition expert inspired by his subzero adventures in Tibet. Caught in a blizzard while hiking, he was welcomed by a local family who gave him a mixture of tea and yak butter, immediately restoring his body heat and energy. A real “bullet” of strength and mental clarity. Upon his return he had the idea of combining coffee with animal butter and coconut oil, thus creating Bulletproof Coffee.

I discovered it recently, chatting with a friend about her ketogenic diet, therefore low-calorie, but high in proteins and lipids. Maybe you don’t know that I have a mild lactose intolerance which intensifies at times. So intrigued by this infamous bulletproof coffee, I immediately looked for the vegan version.

In the 100% vegetable version, the animal butter is replaced by vegetable butter made from nuts, such as almond butter. The contribution of healthy fats guarantees, as for the original recipe, the energy boost effect, while avoiding peaks and drops in blood sugar.

Now it has become mine morning routine favorite, together with golden milk.

Preparing sushi at home is an experience that allows you to customize the recipe with your favorite ingredients. Just equip yourself with a bamboo mat or a sushi kit and proceed with the advice on how to prepare them hosomaki at home.

It is necessary to prepare the ingredients that will make up the sushi roll: 300 g of sushi rice; 400 ml of water; 100 ml rice vinegar; 1 tablespoon of brown sugar; 1 teaspoon salt; 150 g of fresh or smoked salmon fillet; 5 sheets of nori seaweed.

The first step is to prepare the rice. Cook sushi rice according to package instructions. (washing the rice under running water, placing it in a pan together with the water and letting it cook first for 5 minutes on a high flame and then for 10-12 minutes on a low flame, strictly with the lid on).

After cooking and resting the rice for 10 minutes, transfer everything to a bowl, add rice vinegar, sugar and salt and gently stir the rice until it becomes sticky and cools.

Cut the salmon first into slices with a thickness of 5-6 mm and then into thin and as regular strips as possible.

Place some cling film on the bamboo mat, cut the nori sheets into two halves and place one half on the cling film.

After slightly wetting your fingers with water to prevent the rice from sticking, distribute a portion of rice on the surface of the seaweed leaving a free edge at the top.

Place one or two strips of salmon in the center, making sure to create a uniform band without interruptions.

With wet fingers, roll the sushi from bottom to top, sealing the free edge with a little water to make the seaweed stick well. Press lightly to compact the roll.

Finally, using a sharp moistened knife, cut the roll into pieces first in half and then into 2-3 cm pieces. Arrange the hosomaki sushi on a plate and serve with soy sauce, marinated ginger and wasabi.

Be careful with raw fish

L’salmon hosomaki fresh it certainly maintains a richer and sweeter flavor than the smoked salmon variant. However, it is best to treat raw fish.

In this case it is necessary to chill the fresh salmon, freezing the slice at a temperature of -18 degrees for at least 4 days (96 hours).

It is necessary to defrost the slice in the fridge before starting to prepare thehosomaki or any other type of sushi. Furthermore, it is always better to consume it within 10-12 hours of its preparation.
