My cod and lentil soup represents a perfect meeting between sea and land. It combines the delicacy of fresh cod with the rich and rustic texture of lentils in tomato sauce.

This lentil and cod soup is a versatile recipe. By changing the proportion of ingredients it can in fact transform into a different course. With more lentils it will be a complete first course, with an extra portion of cod it will become a second course with a rich side dish.

For this recipe I chose one of my favorite fish: the cod. Caught in the cold waters of the North, it is known for its white and tender flesh, which makes it versatile in the kitchen. Rich in protein and omega-3, it is an excellent choice for a balanced diet. I like it very much combined with velvety soups (try it with my pumpkin cream) and with steamed vegetables (perfect with broccoli).

However, at the base of this soup I wanted a legume. In this case I chose the lentilsan ancient and nutritious legume, appreciated for its richness in fibre, proteins and minerals.

The combination of these two main ingredients creates a healthy and tasty dish, perfect for the colder months, comforting and rich.

The extra touch? Try my chips polenta taragna* crunchy, which add a different texture to an already harmonious balance of flavours.

Its name derives from the Māori word “huakiwi,” associated with the fuzz and brown color of the fruit which bring to mind the New Zealand bird.

The Kiwi (plant species Actinidia belonging to Actinidiaceae) it is native to China, where it has been cultivated for centuries. Over time, it was introduced to New Zealand and subsequently gained popularity around the world due to its sweetness and nutritional value.

How to choose the best kiwis

After discovering the numerous beneficial properties of the fruit, the most important thing to know is that not all are the same and in particular the difference is given by their origin.

Those usually found on the market are generally Italian, while others come from Chile and New Zealand. Italy is the largest producer of these fruits and in our country i Kiwi they have a price really accessible. Even those that come from Chile are of good quality, finally those from New Zealand are the best of all, especially according to the opinion of experts since they have the best characteristics from an organoleptic point of view.

A Kiwi to be good it must first of all have an intact skin and without particular marks, a regular shape and must not be too ripe or too soft.

How to use kiwi in cooking

It can be eaten fresh, sliced ​​or added to fruit salads for extra sweetness. Its acidity also makes it an excellent ingredient for marinating meat or fish.

The puree of this fruit can be used to prepare original sauces and condiments, while the dehydrated version can be a healthy and tasty snack.

Furthermore, the fruit is often used in the preparation of desserts, ice creams and drinks, adding a fresh and fruity touch to various recipes. Yes also to the jam preparation (commonly known by the name Kiwi jam).

Natural remedies to prepare with kiwi

For fight constipation with kiwi make a smoothie with 4 kiwis, peeled and sliced, then add about half a cup of milk and 1 tablespoon of maple syrup. Mix everything until you obtain a homogeneous cream, perhaps by blending it, always remember to drink a glass of juice at breakfast and one mid-morning as a mid-day snack.

To cure you ofexcessive fatigue add 2 kiwis, 10 white grapes, 1 green apple and the juice of an orange, mix everything until you obtain a completely liquid mixture, without pieces. Drink a glass of this fruit juice in the morning as soon as you wake up every other day.

Against anemia instead prepare a smoothie containing 2 kiwis, peeled and cut into cubes, a cup of plain yogurt and 2 tablespoons of honey, then mix the ingredients together and drink a glass a day. This compound is highly beneficial and contains lots of vitamin C, which helps heal wounds, and the absorption of iron preserves bones and makes teeth strong.

For lose weight thanks to properties of the fruit prepare a fruit juice with 150 g of grapefruit, 50 g kiwi, 175 g of pineapple and 50 g raspberry. After choosing them, combine the ingredients perfectly, peel the pineapple, squeeze the grapefruit, combining the grapefruit juice in a bowl and then mix with the kiwi and pineapple. Blend everything together, adding the berries, then garnish with raspberries and drink a glass every two days.

For strengthen the immune system create a juice with 8 kiwis, peeled and chopped, a cup and the juice of a lemon, mix everything with 1 teaspoon of sugar, 1 cup of water and 1 kiwi to be sliced, drink a glass of this juice every day for 7 days especially at the beginning of winter.
