A few weeks ago my mom and I took a trip to my new neighborhood Whole Foods Market. While we were there scoping things out, we came across some very special kale chips. Crispy, crunchy, nasty-hot, cheesy kale chips. The only problem was… $8? Yikes!
I immediately told my mom once again about my Crispy Kale Chips, and suggested that I try my hand at a spicy cheese version. After all, they would be a fraction of the cost of the little $8 container that we were munching on.
What? I had to see what they tasted like for comparison sake!
While I didn’t use miso, as was used on the original ones we had at Whole Foods Market, I think I got pretty close to the taste we were looking for!
I did want a bit more heat than those that claimed to be ‘nasty-hot’, so I was sure to add plenty of cayenne and jalapeño juice to mine.
As I’ve mentioned before, kale is not generally something that I will eat ever. I just don’t care for the taste or texture. But, in the shape of a chip… I’m a sucker. Add cheese and spice? It’s all over…
Hot & Spicy Cheesy Kale Chips

The Skinny:

Ingredients:
1/2 Bunch Fresh Kale (About 4 Cups)
1 Tsp. Olive Oil or Olive Oil Cooking Spray
1/4 C. Reduced Fat 2% Cheese, Grated (I used a Mexican Blend.)
1/2 Tbsp. Picked Jalapeño Juice
1 Tsp. Sea Salt
Pinch of Cayenne
Directions:
Preheat the oven to 350 degrees F. and line a baking sheet with foil.
Remove the leaves of the kale from the thick stems and tare the leaves into bite sized pieces.
Spread the leaves out over the prepared baking sheet in as much of a single layer as you can.
Give the kale a toss with olive oil or lightly mist with non-stick olive oil spray.
Season with cheese, jalapeño juice, salt and cayenne.
I put my jalapeño juice into a mister and sprayed it over the kale.
Place in the oven and bake for 10-15 minutes or until the leaves are crisp.
You can toss them about halfway through but I didn’t really find that it was needed.
Remove from the oven once done and allow to cool slightly before enjoying!
