I’ve always loved chicken salad and have made it so many times over the years. I consider this recipe perfection! It’s very versatile, so feel free to add in or swap out whatever items you’d like. I give some ideas below.

Here are several tips on how to make a recipe for chicken salad come together QUICK!

–Use canned chicken! Just drain and you’re all set. This recipe requires 1 Costco sized can or two small cans.

–Use a store-bought rotisserie chicken. Just diced and refrigerate to cool, then proceed with recipe. {this can of course be done ahead of time!}

–Slice the celery and cucumber beforehand. Store them in a small container in the fridge until ready to use.

–Make the entire recipe ahead of time and let sit in a closed container in the fridge until ready to serve.

You should plan on allowing 1/4 cup to 1/2 cup chicken salad per person, depending on how you’re serving it. If you’re making chicken salad mini croissants as an appetizer, you can even use just shy of 1/4 cup of chicken salad. If you’re serving chicken salad sandwiches for lunch or dinner, you’ll want to allow 1/2 a cup or even 1/3 cup per person.

Is chicken salad healthy?

Chicken salad is packed full of protein, fruits and vegetables, so yes, it is a healthy food option. I even substituted plain yogurt in for half of the traditional mayonnaise which adds even more protein and cuts down on fat and calories. I love adding the diced cucumber for an additional vegetable source, plus the crunch is delicious. If you want to make chicken salad even more healthy, serve it on whole grain high fiber bread, or serve it on leaves of lettuce, as a chicken salad lettuce wrap.

 Can you freeze chicken salad?

Theoretically, yes, you can freeze chicken salad but know that the texture will suffer once thawed out and served. The mayonnaise can separate slightly, so it’d be a good idea to stir thoroughly and then add in a tad more fresh mayo prior to serving. The cucumber and celery will lose much, if not all of their crunch once they’re thawed as well. So yes, you can freeze chicken salad, but really it tastes so much better if eaten fresh!

Can chicken salad be made a day ahead?

Yes, you can make chicken salad a day ahead of when you plan to serve it. Store it in an airtight container in the refrigerator. I actually think day old chicken salad tastes even better as it has had a chance for the flavors to meld! Just give your chicken salad a good stir and if the chicken has absorbed the moisture, you might want to add in a bit more mayonnaise or plain yogurt to compensate.

How long will chicken salad stay good in the refrigerator?

Chicken salad will stay good for 5-7 days if stored in an airtight container in the refrigerator. My favorite airtight containers are Snapware. I’ve found that when I use Snapware, the foods generally stay fresh for at least 3-4 days longer than when you use regular tupperware.

BACON CHICKEN SALAD WITH RASPBERRY POPPY SEED DRESSING

I’m going to admit that I am one of those people who really likes salad, but is not a big fan of very many veggies!  I discovered this salad a few years ago and it is my favorite!  The fact that it has bacon in it makes it popular with my husband too and the fact that it also has chicken in it makes it very filling too!  
Bacon Chicken Salad
2-3 heads of Romaine lettuce 
10-12 slices of bacon, cooked and crumbled
2-3 cups of cooked chicken (I usually use a rotisserie chicken)
1-2 cups shredded mozzarella cheese
Raspberry Poppy Seed Dressing
1/2 cup rice vinegar
1/2 cup oil
1/2 cup sugar
2 Tbs. poppy seeds
2 tsp. raspberry jam
I always cook my bacon in the oven because it is much easier and less messy too.  Just line a jelly roll pan with foil and bake at 400 degrees for about 15 minutes.  As soon as it is done, just place the cooked bacon on paper towels until cooled.  That’s it!  Assemble the salad (lettuce, bacon, chicken and cheese) and keep in the fridge until ready to serve.  

Mix up the dressing and keep in the refrigerator.  I like to keep the dressing separate and let everyone use as much as they want, but if you are taking the salad to a potluck or something, you can add the dressing in and mix it all up immediately before serving.

Tropical Chicken Salad & Honey Balsamic Vinaigrette

This salad was inspired by the one served at Gloria’s Mexican Restaurant. I was first introduced to the salad while at lunch with my Sister-in-Law and Aunt a few weeks ago.

I’ve… been back a couple times since, to indulge.

One of my favorite things about this salad is the vinaigrette. Seriously. I could eat it with a spoon. My mouth is watering even now just thinking about it.

It’s sweet, tangy, and so refreshing on a hot summer day when paired with this salad that’s nearly overwhelmed with tropical fruits.

Did I mention that this vinaigrette is a great marinade too? Marinade anything from meat to strawberries. Yes, strawberries are delicious after being soaked in this vinaigrette for a few hours.

I could almost eat this salad every day. It’s fabulous and so filling!

Definitely a summer love of mine this year.

Ingredients:
Vinaigrette:
1/2 C. Balsamic Vinegar
1/4 C. Honey
1/4 C. Olive OIl
1 Tsp. Reduced Sodium Soy Sauce

Salad:
4 Medium Chicken Breasts (3 Oz. Each)
4 Garlic Cloves, Smashed
Salt & Pepper to Taste
6 C. Spring Mix Salad
1 C. Strawberries, Washed & Quartered
1 C. Mango, Diced
1 C. Pineapple, Diced
4 Clementines or 1 C. Mandarins
Avocado, Optional

Directions:
Mix the vinaigrette ingredients together in a small bowl until well combined.

Reserve half of the vinaigrette (about 1/2 c.) into a small airtight container and store in the fridge until later.

Put the remaining half of the vinaigrette (about 1/2 c.) into a ziplock or shallow dish with the chicken breasts and garlic. Allow the chicken to marinate for at least one hour and up to a full day. Seasoned mine with some salt and pepper.

When ready, remove the chicken from the bag and discard the marinade. Grill the chicken until cooked through. I used my counter top grill for about 5-6 minutes with my particular chicken breasts.

While the chicken is cooking, plate the salad and fruit. There should be about 1/4 c. of each fruit per salad, with a total of 1 c. of fruit on each plate.

When the chicken is done, allow it to cool slightly before slicing and placing atop the salad.

Remove the vinaigrette from the fridge and spoon about 2 tbsp. of the dressing over each salad.

Serve and enjoy!
