Don’t know how to surprise your sweetheart on Valentine’s Day? Rather than buying the classic box of Chocolates why don’t you try making them at home?

A certainly cheaper but at the same time more loving way to give a Valentine’s Day gift! So here’s how to prepare homemade kisses!

How to make homemade kisses

It might seem laborious and difficult to make this dessert by hand, but it isn’t. Follow all the steps carefully and in one morning you will have obtained these fantastic chocolates ready to donate and perhaps embellish with some personalized card!

Let’s go to recipe: melt the butter with the chocolate (50 g of the total 200 needed in this recipe), then add the hazelnut spread with cocoa and the chopped hazelnuts. Now mix everything very well and leave in the freezer for a few minutes to make the mixture moldable with your hands.

We are ready now for shape with your hands our Baci, fit a whole hazelnut on the top in the center of each one and level the edges of our chocolate with your fingers before “sealing” it in the chocolate.

Now all we have to do is melt (this time without butter) the remaining 150 g of chocolate and dip the “naked” Baci inside until they are completely covered, taking care to drain the excess chocolate, for a cleaner result ” and smooth as possible.

Let them solidify on a sheet of baking paper well spaced apart and then all you have to do is enjoy them or package them in a chocolate box if you want to give a sweet gift to your special person!

Quick and easy salty kisses – Gordon Ramsay’s version


Just like the original sweet recipe, these salty lady's kisses are irresistible, with their unmistakable shape and crumbly texture.

For my salty lady's kisses I used a mixture of "low carb" flour, based on wholemeal spelled and amaranth flour, born from the collaboration between Pur Südtirol, Silvia Gasser, blogger and nutritional coach, and Molino Merano. Organic, vegan and sustainable, thanks to the recyclable paper packaging: Silvis "Feel Good" Pizza Blend it is perfect for preparing pizzas and focaccias… but that's not all.

And the filling? I wanted to give a twist of flavor and spiciness with the chilli mustard from Seibstock Manufactory, a sweet and spicy sauce made with red peppers and chilli cream, produced by hand in limited quantities with fresh Italian products.

But you can experiment with sauces, mousses and creams following your creativity (for example with one mortadella mousse you hate cotechino or simple goat cheese).

ingredients for 18/20 kisses

WHAT

FOR THE DOUGH
  • 200 g of Molino Merano “feel good” flour blend
  • 80 g of Parmesan cheese
  • 50 g of butter
  • Salt and Pepper To Taste
FOR FILLING
  • a few teaspoons of Seibstock chilli mustard

HOW TO PREPARE SALTED BACI DI DAMA

In a mixer I poured the flour, the cold butter cut into cubes, a pinch of salt and pepper. I blended until a sandy mixture was obtained, then I added the Parmesan cheese and a couple of tablespoons of very cold water. I blended again for a few seconds, so as not to overheat the dough.

I transferred the mixture onto a pastry board and divided it into balls, for a total of about 36/40.

I placed each ball on a baking sheet lined with parchment paper, spacing them at least 2 cm from each other. In a hot static oven, 180 °, I cooked for 25 minutes, on the lowest shelf.
Once lightly browned, I let them cool on a wire rack.

I spread a layer of mustard on the flat side of half of the balls, closing each half with a smooth one, creating the typical shape of a lady's kiss.

THE Kisses of Alassio (Kisses of the Riviera) are gods treats chocolate delicious; typical of Ligurian pastry, especially the city of Alassio, from which they take their name! TO difference of Piedmontese Baci di dama, are made with a mixture based on egg whites, sugar, cocoa, hazelnuts, honey from which gods are derived shells, with the help of a sac à poche; that once baked in the oven, become the two halves from stuff with dark ganache, which gives life to typical kiss of Alassio! A unique delicacy: from semi soft texture, to crunchy strokes, caramelized from intense taste of chocolate!

Like any traditional recipe, they exist numerous versions and many small variations. What I give you today is there Original recipe of Baci di Alassio, given to me by a friend of Nervi. It is a preparation very easy! The dough it is done in a few minutes, gently mixing all the ingredients, from which you will get one soft base which goes into a pastry bag. According to tradition, one should be used star striped nozzle to make the shells. But depending on availability, you can also choose a nozzle smooth from which to derive of the tufts. It will be very simple and they go straight to cooking! You can also choose to stuff them and assemble them later! Ingredients

Quantity for 250 gr of product
  • 250 gr of hazelnuts to be reduced to powder
  • 200 grams of sugar
  • 25 gr of bitter cocoa
  • 2 egg whites
  • 20 gr of honey
  • 70 gr of dark chocolate + 50 ml of fresh liquid cream (for the filling)

Method

How to make the Baci di Alassio

First of all, pulverize the hazelnuts with the help of a mixer together with the sugar.

Then add the cocoa, mix with a wooden spatula.

Finally add the honey, mixing it with the mixture.

Finally, add the egg whites previously whipped with a pinch of salt, mixing the mixture with a spatula from bottom to top.

You will get a soft compound. Place it in a piping bag with a 1 cm star or round nozzle.

Then make 1 cm tufts on a baking sheet previously lined with parchment paper at a short distance from each other

Bake in the oven at 180 ° in the central part for about 12 – 14 minutes, until your shells are cooked.

Remove from the oven, transfer to a wire rack and let cool completely.

Meanwhile, bring the cream to a boil for 1 minute, remove from the heat, add the dark chocolate reduced into flakes, turn and let it melt completely.

Finally let it cool to room temperature. When used it must be creamy, neither solid nor liquid. If you want to compose the kisses immediately, make the filling at the beginning of the preparation.
