Caramel Pretzel Chocolate Chip Cookies- The perfect salty sweet treat!

Every once in a while I just feel the need to switch up my regular, old chocolate chip cookies and get a little crazy.

This recipe is the perfect opportunity to do just that! No crazy ingredients or steps, no chilling, just plain good cookies with a little twist.

We haven’t even talked about how festive these cookies can be, too! Here, I picked up the Valentine’s Day bag of Caramel M&M’s. All those reds, whites and pinks! M&M’s always have coordinating holiday colors for nearly every holiday. Easter, 4th of July, Halloween, Christmas.. These will be your go-to cookie!

How to make Caramel Pretzel Chocolate Chip Cookies

First thing you’ll want to do is cream some butter and sugar until well combined. Add in a couple of eggs and vanilla.

Turn your mixer up as high as it will go and cream those eggs into the butter and sugar mixture. The mixture will become light in color and extremely fluffy.

Scrape down the sides of the bowl then add in the dry ingredients. The dry ingredients include flour, baking soda and salt. Mix until well combined.

Now it is time to release a little pent up anger. 😉 Let’s smash some pretzels! I used pretzel dipping sticks, which are thicker than a normal pretzel but not quite as thick as a pretzel rod. They are about 4 inches in length. I tossed my pretzels into a large zip top bag and let my rolling pin do the work.

If you only have the thin pretzel sticks, just break them into fourths.

Add the crushed pretzels, Caramel M&M’s, and some semi-sweet chocolate chips to the cookie dough. Fold the add-ins into the dough. I usually just ‘knead’ everything together by hand.

Scoop the dough into balls (about the size of a golf ball). Arrange on a cookie sheet, allowing room for slight spreading.

Bake at 350° for 9-11 minutes or until the tops are no longer glossy and the edges are just starting to brown.

Allow the cookies to cool on the pan for 5 minutes before transferring to a cooling rack.

How many Caramel Pretzel Chocolate Chip Cookies does this recipe make? Can I halve the recipe?

This recipe will make about 3 dozen 2 inch cookies. You are more than welcome to halve the recipe, halving the 3/4 measurements gets a little tricky though. You’ll want to measure out 1/4 cup + 1/8 cup to equal half of 3/4 cup. Same philosophy for 3/4 tsp= 1/4 tsp + 1/8 tsp.

How do you store chocolate chip cookies? How long will they keep for?

The best way to store your cookies is in an air tight container or zip top bag. They will stay fresh for up to 3 days. If you are planning on storing these and not eating them all straight out of the oven, it is important to not over bake them! Or they will get hard and not delicious.

How do you soften butter?

I like to soften butter by using the defrost function on my microwave. If you need the full 1/2 cup cube of butter, you can leave it in the paper wrapper, otherwise, place the amount of butter you need in a glass or porcelain bowl. I use the lowest defrost setting on my microwave and just let it run for 20 seconds. Check the butter and see how soft it is by pressing it with a rubber scraper. If it is still not soft to the touch, meaning it doesn’t indent when you press into it, let it warm for another 5-10 seconds. Watch it closely! Butter softens very quickly.

Can you freeze Thumbprint Cookies?

Yes, you can freeze Jam Thumbprint Cookies in an airtight container for up to 1 month. Make sure you first let them sit on the countertop for 2-3 hours before stacking them in the airtight container, so that the jam has enough time to set. Store each layer with a piece of parchment paper in between so that the cookies will not stick together and maintain their prettiness when defrosted.

Fresh Fruit Salad with Lemon Honey Dressing


So often I’ll go to get groceries and I mentally go down my list, trying to pick out treats and favorites for each member of my family. Katy love cantaloupe, Ricky has this certain peanut butter he likes, they both eat more bananas than a band of monkeys, etc. I make sure I grab all of those because I love seeing the delight on their faces that a little gesture like that can bring. Well, this past week I decided it was time to treat myself and so I took a little grocery trip determined to buy my favorites. I was a little surprised at what I ended up with! Blackberries, blueberries, watermelon (It’s crazy that in our global world we can get sweet watermelon in February, but I’ll take it!), fresh pineapple, and a more oranges than I care to admit. Note to anyone who doesn’t know me in real, everyday life: I have a bit of an orange addiction but I totally own it. Oranges are like eating sunshine to me and so I have a couple everyday.

We have always loved fresh fruit but I think the winter months that drag on a bit (as February tends to do) make it feel like even more of a treat. So today I’m sharing a simple but sparklingly flavorful salad with you that has a light honey lemon dressing which just brightens those flavors even more. This is a perfect treat for that special person in your life (but keep in mind that you are a special person in your life, too!) and it’s also makes a beautiful dish for bridal showers, baby showers, or luncheons. You can easily use whatever fruit you prefer or have on hand.

And you know what? You deserve a special treat!

Fresh Fruit Salad with Lemon Honey Dressing

Any fruit goes in this salad! If you are adding apples and bananas, make sure they get well coated in the dressing because that will keep them from browning. I usually dice those up in a bowl first, pour the dressing over it, give it a good stir, then add the rest of my fruit just to make sure they are taken care of.

The dressing is simply a matter of stirring together fresh or bottled lemon juice, honey, and a bit of cinnamon! Beyond that, all that is left is to cut your fruit. You’ll be amazed at how beautifully that little bit of cinnamon compliments everything.

Spring Fruit Salad with Lemon Honey Dressing

 

Ingredients

  • 10-12 cups assorted berries and fruit such as blueberries, raspberries, kiwi, melon, strawberries, etc
  • ⅓ cup lemon juice (bottled is great)
  • ⅓ cup honey
  • 1 teaspoon cinnamon

Instructions

  1. Wash and slice fruit if needed. Drain and place in large bowl. Stir well to combine.
  2. In small bowl, whisk together honey, cinnamon, and lemon juice until well blended. Pour over fruit and toss to coat. Chill for a few hours and stir again before serving.

Many of them had tons of ingredients or some sort of artificial type cheese and I just wanted to find a simple, easy macaroni and cheese recipe that was really yummy too!

I also have not spent much time using my Instant Pot that I got over a year ago! Something about it just intimidates me, even though the times that I’ve used it, I’ve had great results! I just need to use it more often. And I think I will after seeing how easy and fast it is to make homemade macaroni and cheese!

Many macaroni and cheese recipes either use Velveeta cheese or call for sour cream, heavy cream and/or evaporated milk and so I’ve been searching for a recipe that just required very basic ingredients, especially one that used real cheese! This recipe couldn’t be any more basic and it’s absolutely delicious!

The noodles only have to cook for 5 minutes in the Instant Pot and then you just add the other ingredients and the macaroni and cheese is ready to eat. Even taking into consideration the time that it takes for the Instant Pot to get to pressure (mine took about 10 minutes), you can have homemade macaroni and cheese ready to eat in under 20 minutes with no more effort needed than making the boxed kind!

What kind of cheese do you use in homemade macaroni and cheese?

I usually use medium cheddar or a cheddar blend because that is what I usually have in my refrigerator. You can use a sharper cheddar or a white cheddar or even a totally different type of cheese. Many times I use cheddar and mozzarella and it’s absolutely delicious! I think a Colby/Monterey Jack blend would be wonderful in this recipe – you can use whatever combination of cheeses you want! Depending on which type of cheese you use, you may need to add a little bit more milk to get the right consistency.

What kind of milk do you use in homemade macaroni and cheese?

I use 1% or 2% milk in this macaroni and cheese recipe because that’s what my family drinks, but you can use whole milk, skim milk, half and half or any other type of milk you have. If you prefer your macaroni and cheese to be a little bit runnier, you can add a little bit more than the recipe calls for. This recipe is completely fool-proof and versatile so you can customize it to your own taste!

-16 oz. elbow macaroni, small shells, or any other type of small shaped pasta

-32 oz. chicken broth

-4 tbsp. butter

-1/2 cup milk

-2 cups shredded cheddar cheese (or any other type of cheese you prefer!)

I love using chicken broth to cook the noodles in this recipe because it adds so much flavor, but you can use water instead if you prefer. You may need to add more seasonings, especially salt to add more flavor if you use water to cook the noodles. You can also use a low-sodium chicken broth, but you may need to add a little bit more salt to get more flavor once the macaroni and cheese is done.

What seasonings are good in homemade macaroni and cheese?

I think that the macaroni and cheese tastes really good as is, but if you like more flavor, feel free to add some seasonings. Onion powder, garlic powder or even a little bit of hot sauce will add extra flavor to this macaroni and cheese recipe. If you cook the noodles with regular chicken broth, you probably don’t need to add very much salt to get the right amount of flavor.

How do you reheat macaroni and cheese?

This macaroni and cheese recipe makes a lot, so you will probably have some leftovers! Store them in an airtight container in the refrigerator for up to a week. To reheat, just add a little bit of milk and warm the noodles up in the microwave or over medium heat in a pan on the stove. This recipe can also be easily halved if you don’t need to make quite as much at one time. I’ve got 5 kids so we hardly ever have to cut recipes in half!
