Thin-Crust BBQ Chicken Pizza

There are only a few recipes that I know by heart, and pizza is one of them. I am always so impressed by people who can whip up a perfect meal without even looking at a cookbook. No matter how many times I cook a certain recipe, I rarely memorize it. My iPad is always at my side when I am in the kitchen!

I have been wanting to try a BBQ chicken pizza recipe for a while, but the problem is that I don’t like red onions, and my husband doesn’t like cilantro, two ingredients you usually find on BBQ chicken pizzas! Instead, I came up with my own version and used thin slices of yellow onion and green onion. I also used creme fraiche for the base, which you don’t typically find on traditional BBQ chicken pizzas, but I thought it went really well! If you want to make a lighter version, leave out the creme fraiche and just spread a thin layer of olive oil on the dough before topping with light shredded mozzarella cheese. I LOVE thin crust pizzas because they get nice and crispy in the oven, and by making thin crust pizza you cut down the carbs quite a bit.

I can’t believe it is Monday already! The weather was pretty gloomy this weekend in the city, so we had a relaxing weekend at home (except for a fun trip to IKEA today for some “window shopping”). Have a great week!

Ingredients
  • 2 tsp dry RapidRise yeast (or 1 package)
  • 1 tsp sugar
  • 1 cup warm water
  • 1 tsp salt
  • 2 tbsp olive oil
  • 2¼ to 2½ cups all-purpose flour
  • ½ cup BBQ sauce
  • 2 boneless, skinless chicken breasts
  • 7.5 oz creme fraiche
  • Ground black pepper, to taste
  • 1 cup shredded mozzarella cheese
  • 1 cup chopped green onions
  • 1 cup thinly sliced yellow onion
Instructions
  1. Add yeast, sugar and warm water to a large bowl and allow yeast to proof for 7 minutes (should turn foamy).
  2. Add salt, olive oil, and flour and mix with a hook attachment on a stand mixer or by hand with a wooden spoon, adding the flour in a little at a time until the dough does not stick to the bowl anymore.
  3. Knead with floured hands on a floured surface for 10 minutes, then return to the bowl and cover for 1 hour.
  4. Punch the dough down and let rise while preparing the chicken.
  5. Preheat oven to 425 degrees F.
  6. Add chicken breasts to a baking dish and pour ½ cup BBQ sauce evenly over the chicken breasts.
  7. Bake for 20 minutes, then remove from the oven and let cool 5 minutes.
  8. Cube the chicken breasts and set aside.
  9. Divide the dough in half and roll each half on a floured surface as thin as you can.
  10. Stretch the dough over a greased large pizza pan, then repeat with the other half of the dough.
  11. Evenly divide the creme fraiche among the two pizzas, then top with pepper and mozzarella cheese.
  12. Evenly divide the green and yellow onion over the two pizzas, then top with the cubed BBQ chicken.
  13. Drizzle with extra BBQ sauce, if desired.
  14. Bake for 15-20 minutes, until the edges are crispy and golden brown.

Cowboy Pizza – And Taking Inventory When You’re In Over Your Head

Today I’m going to show you how to make a Barbecue Chicken Pizza that will make your taste buds yodel! It comes together quick as a wink, too, whether you use my homemade pizza crust recipe or store bought.

But before we get started with that, I’m gonna chat with you a little bit about what to do when you find yourself bobbing along in water that is obviously over your head.

Here we go…

If you are the sort of individual who breathes oxygen, you have likely found yourself overwhelmed at some point in your life. If you are like me, this happens on a regular basis. Like when the sun shines or the sky is blue.

Right now I’m staring at my computer screen with a little email icon in the bottom corner that tells me in red letters I have 69,780 unread emails. I’m not kidding. I generally get a few hundred emails a day and I try to answer as many as I can but as much as I want to answer them all, at some point you just have to admit defeat. Last year, I got so overwhelmed with not being able to answer all the postal mail that was coming in that I couldn’t bring msyelf to go to my P.O. box for eleven months…the longer I waited, the harder it was to bring myself to go. Finally, I set up a time when Mama and I could get together so she could help me go through the mail, took two laundry baskets, and collected everything.

Between the technical ins and outs of running a website, photographing and writing new posts, working on my book and a book tour which will soon have me away from my family and the work I am already behind on for a month, with just a day or two (at most ) home each week (the thought of that hurts my heart so much that it keeps me awake at night), trying to answer comments on SouthernPlate and Facebook, business calls and emails, speaking requests and appointments, Being a Mama – which is most important, all my other assorted jobs, and trying to keep up with a house, It is safe to say that in those moments where I allow myself to look at the whole picture, I’m pretty overwhelmed.

I have no staff.

There is no housekeeper.

Supper at the end of the day is cooked by me or not cooked at all.

I often find myself feeling as if I’m running on empty and can’t go another step.

That’s when I step back and, rather than look at how ill equipped I am to handle everything, I look at the tools that I do have.

This is a list I made last night in my journal…

I have:

The ability to love people

family

laughter

sleep (sometimes)

peace

inner joy

God’s grace.

and when it comes down to it what else could I possibly need?

And after making out a list of what I do have, I see that I have all I need to do what I am called to do. And if I do not have what I need to fulfill my calling, then I know that God will give it to me or I need to re-examine the genuiness of that calling.

So I encourage you to step back today and make a list. Rather than focus on what you don’t have, list what you do.

How are you equipped? Be honest, be open minded.

Do you have a sense of honor and a strong work ethic? Is there a stubborn streak that can get you far if used properly? Do you have a Mama who loves you or a child who looks up to you? Is there a weather day of sunshine on your horizon? All of these and so much more can be counted as assets in your toolbox that enable you to meet life head on and become the person you were destined to be.

When you feel yourself sinking, if you step back and look at the big picture, you’ll realize that for every body of water you must cross, there is a bridge.

Now lets make pizza.

Cowboy pizza can easily be adapted to your favorite flavors but I’m going to show you how I make it and you can go from there.

To make it my way you’ll need: Shredded Mozzarella, green onions, barbecue sauce*, and cooked chicken.

You’ll also need a pizza crust but we’re about to get to that part.

Barbecue Sauce – I’m using my original barbecue sauce recipe which can be found in my first book. You can use whatever recipe or store bought sauce you like the most.

I’m also streamlining things a bit by starting with a rotisserie chicken.

Let me tell ya why…

So this week, I can buy a raw chicken, bring it home and cook it myself, for $5.53. Or I can buy a chicken, already cooked so all I have to do is debone and chop it, for $4.99.

I have a rule I’ve learned to live by in my older age which, surprisingly, did not seem as obvious in my younger years as it does now:

Do not complicate that which is simple.

You’re also going to need a pizza crust. You can purchase a store bought one like this (which I get in the refrigerated section, near the cheeses) or you can make your own like this.

This is my homemade stuffed crust pizza recipe that you can put together in a little over five minutes and is easy as can be. Click here for the recipe with step by step photos.

Now lets make our pizza

Don’t blink because this is gonna go fast.

Remove the skin and chop up about a cup or two of chicken. You don’t need this much but I was hungry when I made this.

Add in 3-4 tablespoons of bbq sauce of your choice.

Stir that up to coat.

Spread some bbq sauce over your crust.

How much you use is up to you. Personally, I like to use about double what is shown here but I toned it down a bit for this post.

Sprinkle sauce with just a little bit of dried oregano.

And a little bit of cheese.

Add chicken.

Top with sliced green onions and more cheese.

Bake this at 400 for 20-25 minutes. Serve hot.

Ingredients

  • 1 Pizza crust, either store bought or homemade (click here for recipe)
  • 16 ounce bottle Barbecue sauce
  • 1-2 cups shredded Mozzarella
  • 1-2 cups chopped, cooked chicken
  • 2 green onions, chopped
  • 1 tablespoon dried Oregano

Instructions

  1. Toss chopped chicken with 4 tablespoons of barbecue sauce to lightly coat. Set aside.
  2. Spread remaining barbecue sauce over pizza crust (less if you like). Sprinkle with Oregano. Sprinkle with 1/2 of cheese.
  3. Add chicken to top of pizza and sprinkle with remaining cheese, followed by onions.
  4. Bake in 400 degree oven for 20-25 minutes, or until crust is lightly browned and cheese is bubbly. *If you are using a store bought crust, follow baking directions on the package.
  5. Serve warm.
