Special Ground Beef Omelette

Simple, affordable and delicious. 🙂 I know that everybody can cook this but I just want to share. Happy weekend everyone.


Ingredients for 6 servings:
6 large eggs
150 grams ground beef
1 carrots (minced)
1 potato (minced)
1/2 cup green peas
1 onion (minced)
salt and pepper to taste

Procedure:
1.  Saute the onion, add the ground beef, carrots and potato then continue to saute and simmer for 5 minutes, add salt and pepper to taste then the green peas and simmer fo r a minute and turn off the heat. Set aside.
2. Beat the eggs then add salt and pepper. Heat a flat bottom pan and put half of the beaten eggs, when it is already half cooked put half of the sauted meat mixture then fold the side and roll towards the other side to form a roll or simply fold both sides to meet at the center then continue cooking until done. ( Cook in 2 batches)
3. Slice then serve.

CHOCOLATE MIXED NUT CLUSTERS

These super easy, bake-free little treats are the perfect addition to any Holiday Party or gift tray.

CHOCOLATE MIXED NUT CLUSTERS

1 pkg Milk Chocolate Chips
4 oz Semi-Sweetened Baking Chocolate
1 tsp Vegetable Oil
2 cups Nuts, your choice

In a sauce pan on the stove, bring 2 quarts of water to a boil, then let simmer. With another sauce pan, preferably the same size or close to it, place it on top of the sauce pan with the simmering water. Put the milk chocolate, baking chocolate and oil in the top sauce pan and stir until melted.

Add the 2 cups of mixed nuts and stir until the nuts are completely coated with the chocolate.

Line 2 cookie sheets with parchment paper. Using a medium sized spoon, place dollops of the chocolate nut mixture on cookie sheets. Place the cookie sheets in the fridge until the clusters have become completely cooled and firm. Then remove and enjoy!! These are best kept stored in the fridge.

Cinnamon Blueberry Waffles

Even though I know blueberries are a “superfood” and very healthy for you, I don’t like to eat them. Is that weird? I don’t know anyone else who doesn’t like blueberries! I still sneak them into my diet because of their health benefits, like in these whole wheat cinnamon blueberry waffles. The dash of cinnamon in these blueberry waffles makes them really flavorful, and they smell really good too!

I have a small waffle maker (you can get a small one these days for $25), and the waffles cook really fast. The trick to crispy waffles is leaving them in the waffle maker longer. I like mine right in the middle. This recipe makes 6 waffles, but you can double it to make more. Store the waffles in the freezer for a quick breakfast.

Before serving, top the warm waffles with fresh blueberries and a drizzle of maple syrup.

Ingredients
  • 1 cup milk
  • 1 egg
  • 2 tbsp vegetable oil
  • ¾ cup whole wheat flour
  • 1 tsp honey
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • Pinch of salt
  • ½ cup fresh blueberries
Instructions
  1. Preheat a waffle grill and spray with cooking spray.
  2. Add all ingredients except for the blueberries to a blender and blend the batter well. You can always mix the batter by using a whisk and bowl.
  3. Stir in the blueberries by hand.
  4. Pour the batter into the waffle grill and cook until golden brown.
