When making candy like this I really find that dipping chocolate just works best. You can purchase Ghirardelli Melting Wafers at most grocery stores. I buy my melting chocolate in bulk on Amazon. If you really want to use chocolate chips instead, I suggest melting 1/2 a tablespoon of shortening or 2 tsp coconut oil in with the chocolate chips, to thin it out and make it easier to dip the candy.

Here’s how you can easily melt chocolate to use in this recipe. First, place white chocolate in a glass or ceramic bowl. These bowls retain heat better, making it easier to melt the chocolate.

Melt chocolate in the microwave for 1 minute 30 seconds. Let it sit in the microwave, untouched, for 2 minutes.

Gently stir the chocolate. If it’s not fully melted, return it to the microwave for 15-20 seconds, letting it sit again before stirring.

My bowl of chocolate took 2 minutes in the microwave. White chocolate looks like it’s not all melted when in fact it really is. Stir it gently several times and make sure it really needs more microwave time before jumping the gun and just giving it more time. I usually have to stir mine for a good 30 seconds until it’s really fully melted.

Melting white chocolate can be a little frustrating if you’ve never done it before. The reason is because white chocolate seizes easily. The most common culprits are water and overcooking. I don’t EVER use water to help chocolate melt. When chocolate seizes due to overcooking, it actually looks like it’s not melted yet, which prompts people to return it to the microwave and makes the whole thing worse. The result is a clumpy, grainy mess!

  • Follow the steps I’ve outlined above to melt chocolate SLOWLY.
  • Add a small amount of shortening to the chocolate.
  • If your chocolate is showing beginning signs of seizing, melt 1/2 tsp shortening in a separate bowl and gently stir into your chocolate. If it’s smoothing out, you can add another 1/2 tsp of shortening.

Here’s what you’ll need to make this Marshmallow Chocolate Bark for Valentine’s Day:

–one 12-oz bag white chocolate chips

–3 cups mini marshmallows

–about 1/2 TBSP shortening {optional, but it really makes the melting process easier!}

–Valentine’s sprinkles and candies, for topping

  1. Measure out 3 cups of marshmallows. Line an 8×11 glass dish or a half-sized cookie sheet {like I used!} with parchment paper.
  2. Pour chocolate chips into a glass or ceramic bowl and microwave for 1 minute 30 seconds. Let sit 2 minutes. Gently stir and add another 15-20 seconds if chocolate isn’t fully melted.
  3. Add marshmallows and stir to coat.
  4. Transfer chocolatey marshmallows to your prepared pan. Using a rubber scraper, make sure marshmallows extend to the edge of the pan. Press down slightly to make it all somewhat even. Shake on any sprinkles you’d like to decorate the bark with. Press candy into top of bark.
  5. Put in the fridge for about 20 minutes, until chocolate is set.
  6. Remove from the freezer and let sit on the counter to return to room temperature. Cut into pieces.
