White Chocolate Chex Mix is one of my favorite recipes to take to a party or to divide up into cute little bags to hand out to neighbors and friends during the holidays.  The white chocolate coating is easily melted in the microwave – this recipe could not be any easier! Although I typically make this recipe around the holidays, it is a great snack mix for the rest of the year too. Just use regular M&Ms instead of the holiday variety and this chex mix recipe becomes the perfect snack recipe all year long!

This White Chocolate Party Mix recipe makes a very large batch of chex mix so you’ll definitely want to plan to share! This snack mix is one of the yummiest that I’ve tried and even though it is delicious (and somewhat addictive!), I feel like my family can barely make a dent because it makes so much! I love taking this recipe to parties and handing it out to neighbors and friends.

My favorite way to gift this delicious chex mix recipe is to put it in cellophane bags like these. These work great for teacher Christmas gifts too! You can easily make 15-20 generously portioned gift bags out of one batch – super easy, super cheap and everyone loves this delicious snack mix.

Ingredients in White Chocolate Chex Mix

5 cups mini pretzels
5 cups Honey Nut Cheerios
5 cups Corn Chex
2 cups salted peanuts
1 lb. M&M’s
2 pkg. white chocolate chips (12 oz. each)
3 tablespoons coconut oil (vegetable oil works fine too)

How to make White Chocolate Chex Mix

Combine the pretzels, Cheerios, Chex, peanuts and M&M’s in a large bowl.  Set aside.

In a separate bowl, heat white chocolate chips and oil in the microwave for one minute.  Stir, and then microwave for one more minute.  Stir until smooth and completely melted.

Pour the melted chocolate over cereal mixture.  Mix well and then spread onto a jelly roll pan lined with wax paper.

Let cool and then break apart.  Serve or store in an air tight container.

Ingredients

  • 5 cups mini pretzels

What type of chocolate works best in white chocolate party mix?

I usually just use whatever brand of white chocolate chips I happen to have on hand, and the recipe tastes amazing and works out well every time! If you are a little bit pickier about your chocolate, you can definitely use a higher quality white chocolate for the candy coating on this Chex mix. I actually don’t usually like white chocolate very much, but absolutely love it in this recipe – something about the other flavors makes it so yummy!

How long can you store chex mix?

This chex mix recipe will stay fresh for about 3-4 days in an airtight container. Any longer than that, and the cereal will start to taste a bit stale, so make sure to package some up and start handing it out to the neighbors – this batch is pretty large!

Lemon Cake Truffles

I’ve served these tasty treats at a variety of parties from New Year’s Eve get-togethers to birthday celebrations. They’re simple to make, can be made ahead of time and everyone loves bite-sized cake!

Originally I made these using a Krusteaz Lemon Pound Cake Mix. I’ve included those instructions, as well as instructions for making them with just a regular lemon cake mix.

Eaasy Lemon Cake Truffle Bites

Ingredients for Lemon Truffles with Cake Mix

Here’s what you’ll need to make these lemon truffles:

  • 1 9×13 lemon cake baked per box instructions, cooled & crumbled
  • 1 tbsp butter softened
  • 2 oz cream cheese, room temperature
  • 1 1/4 cups powdered sugar
  • 1 tsp vanilla extract
  • 1/2-1 tbsp milk if needed
  • 1 tsp lemon extract
  • 1 TBSP lemon zest, if desired
  • 2 cups white chocolate chips or melting discs
  • 1/2 TBSP coconut oil, for thinning chocolate

Cream together the butter, cream cheese, powdered sugar and vanilla & lemon extract. If the frosting is too stiff, add up to 1 tbsp of milk. Add in lemon zest, if desired.

Add the crumbled cake and mix throughly.

Scoop the cake ball mixture into uniform balls. Freeze for 45 minutes.

Once chilled in the freezer, remove and roll each ball in the palm of your hands to create a nice, smooth ball.

how to make lemon cake trufflesMelt the white chocolate in the microwave for 1 minute 30 seconds. Let sit 2-3 minutes. Gently stir. Add coconut oil and microwave for 20-30 seconds. Stir once more and let sit until chocolate is fully melted and smooth.

Dip each truffle in to coat. Transfer to wax paper. Top with white and gold sprinkles. Let cool to set.

Store in the fridge or freezer until ready to eat.

Here’s what you’ll need to make these truffles if you’re using the Krusteaz Lemon Pound Cake Mix:

  • 1 package Krusteaz Meyer Lemon Pound Cake Mix
  • 3/4 cup water
  • 10 tablespoons butter, melted

Lemon Glaze:

  • 1 pouch lemon glaze mix, enclosed
  • 1/2 cup sifted powdered sugar
  • 3-4 tablespoon water
  • ¼ teaspoon vanilla

You’ll also need white dipping chocolate as well as gold & white sprinkles.

  1. Preheat oven to 350°F. Lightly grease 8½x 4½x2 ½-inch loaf pan.
  2. In a large bowl, stir together cake mix, water and butter until well blended. Spoon batter into prepared pan.
  3. Bake 44-46 minutes or until toothpick inserted in center comes out clean. Cool 20 minutes.
  4. Whisk glaze ingredients together and set aside.
  5. Crumble baked cake into a large bowl until cake is fine crumbs. Add glaze and stir until combined.
  6. Measure 1 heaping tablespoon cake mixture and press together to roll into balls. Set on a parchment lined cookie sheet. Place cake balls in the freezer for at least 1 hour.
  7. Melt white dipping chocolate in the microwave. Dip each ball to coat and place on parchment lined pan. Dust each cake ball with gold and white sprinkles.
