Mini Cheddar Meatloaves have become a new favorite dinner recipe at my house. A friend gave me this recipe quite a while ago and I admit that I kept putting it off because meatloaf has never been one of my favorites. I finally decided to try it and now my whole perspective on meatloaf has changed – this is absolutely amazing!

How do you make a moist meatloaf?

I like to make a moist meatloaf by adding one simple ingredient- CHEESE! I would have never thought of adding cheese to the meat, but it adds a wonderful flavor and it keeps the meatloaf from being too dry. I used mild cheddar shredded cheese but any variety of cheese would probably be delicious. I think next time I will try a cheddar/Monterey Jack blend or maybe even mozzarella!

Another ingredient that adds moisture in this meatloaf recipe is milk. This recipe also does not call for bread crumbs like many other meatloaf recipes which I really love.

How long do you cook mini meatloaf?

I love the mini meatloaf concept – these meatloaves are pre-portioned making them easy to serve and they bake faster! These mini meatloaves bake for just 40-45 minutes. I think they look pretty on a plate too. I’m sure that you could make this recipe in a loaf pan and it would still be delicious, but this way you don’t have to slice the meatloaf in order to serve it.

How to make sauce for meatloaf

You only need three basic ingredients to make the incredible sauce that goes on top – ketchup, dried mustard and brown sugar. Don’t leave the sauce off either; it’s the best part of the recipe!  The sauce recipe makes enough to drizzle over each mini meatloaf, but when I make this mini meatloaf recipe, my husband always asks me to double (or even triple!) the sauce because he loves it so much.

Ingredients in Mini Meatloaf Recipe with Cheddar Cheese

  • 1 egg
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 1 tsp salt
  • 1 lb. ground beef

How to make Mini Cheddar Meatloaves

  1. Beat egg and milk together. Stir in cheese, chopped onion and salt.
  2. Add the entire mixture to ground beef.
  3. Shape into 8 small loaves. I have found that the easiest way to do this is to use my hands! Place the mini meatloaves in a greased 9×13 pan.
  4. Prepare the sauce and pour on top of each loaf and then bake for 45 minutes at 350 degrees.

What to serve with meatloaf?

We love to pair meatloaf with potatoes! Mashed potatoes, baked potatoes, fried potatoes, alfredo twice-baked potatoes, scalloped potatoes…for some reason, meatloaf just tastes better with potatoes! Add a green vegetable (asparagus, broccoli, green beans) and you have a complete, well balanced meal!

Is meatloaf gluten free?

This meatloaf recipe is completely gluten free. Some meatloaf recipes have breadcrumbs in them, but this recipe does not. This meatloaf is a wonderful low-carb, high protein meal option!

Oh so tender and moist and just exploding with flavor, these biscuits are everybody’s favorite. This is my own take on these garlic-cheddar fat loaded devils. Simplified for easy weeknight use.

Some recipes you just have to do. One of my daughters emailed a link to a recipe that looked great, but it used Bisquick as does most copy cat recipes like Allrecipes Cheddar Bay Biscuits. I don’t usually use mixes, and prefer from scratch anyways.

An easy five. This is basically what I have done for years but with more butter. It is so close to the Red Lobster taste and texture I can’t tell the difference.

Recipe Notes on Cheddar Bay Biscuits

I did cut the recipes down a little to make just six good size biscuits. This is “cooking for two” if you haven’t noticed.  Double if you need to.

Ingredient Notes:

The Butter: I originally used unsalted butter whenever baking. Not anymore. I will use unsalted butter in recipes that are butter dominate like butter cookies but not otherwise. If you use unsalted butter, it will probably be fine or you can add a pinch of salt.

The Baking Powder: Be sure to only buy baking powder without aluminum. The aluminum can give a metallic after taste than many people can detect. Just buy the right type of baking powder.

The Milk: I generally have non-fat milk around. Really, you are adding a lot of fat with the butter and cheese in this recipe. Use what you have. Substitute milk like soy or almond will be fine, also.

Many biscuit recipes use buttermilk. The acid, when combined with baking powder, will give a higher rise. I tend to push the baking powder to increase the rise.

If you want to use buttermilk, you will have a bit of extra rise. You can make a buttermilk substitute by adding one tablespoon of white vinegar or lemon juice to a cup of milk and let it set for 5 minutes before using. Also, powdered buttermilk is a good thing to keep around.

The Cheese: A mild cheddar cheese will give that Red Lobster taste. But use the cheese you want.

Preheat oven to 400 degrees convection or 425 conventional oven.

Add 1 1/2 cups AP flour to a medium size mixing bowl. Add 3 tablespoons of butter and cut in with a large fork or crust cutter.

Add 1 tablespoon baking powder, 1/2 teaspoon garlic powder, 1/2 teaspoon salt.  Add 3/4 cup shredded cheddar cheese. I like mild cheddar here. Mix well.

Spray a baking pan with PAM and make six even mounds (a heaping 1/4 cup). Bake for 14-15 minutes.

Just before the biscuits are done, combine 1 1/2 tablespoons butter, 1/4 teaspoon parsley flakes, and 1/2 teaspoon garlic powder.

Pro Tips

  1. I suggest mild cheddar if you are looking for a Red Lobster like taste.
  2. Use only alunimum-free baking powder.
  3. Any milk will do. You can use buttermilk for a bit of a better rise.
  4. I have kept the number of ingredients to a minimum to make this weeknight friendly.
  5. Good in an airtight container for 2-3 days at room temperature or refrigerated.

It’s about to be America’s birthday and I figured it was time to celebrate with some beer. And cheese. To be pretty honest, I don’t think that I’ve ever had beer cheese. I’ve had wine infused cheese and cheese fondue with beer in it, but… that’s about the extent of it. Beer isn’t my personal favorite when it comes to choice of beverages.

Either way! Beer and cheese are pretty much staples of any American household. And beer cheese? Well, that’s about as American as it gets. It seems like Kentucky is the heart, soul, and birthplace of beer cheese. And this beer cheese here is a standard and traditional way to make beer cheese.
