Sugar Cookie Cherry Cheesecake

A sugar cookie crust, a thick cheesecake filling and cherries galore on top! A perfect dessert…that is, once you add some whipped cream of course!!!  Try this cherry cheesecake soon!  Thanks to the sugar cookie crust, this dessert comes together rather easily!  The filling is simple, too! Just be sure to bring your cream cheese to room temp first for easier blending!

Cherry Cheesecake

The Crust:

1-1lb of Pillsbury Sugar Cookie Dough, I used the mini cookie dough pieces

The Filling:

4-8oz. blocks of Cream Cheese..softened

4 Eggs

1 tablespoon Vanilla Extract

1 cup Granulated Sugar

1 can cherry pie filling for the topping

Press the cookie dough into an 8 inch springform pan and bake at 350 about 15 minutes until almost done.  Let cool.  Meanwhile, beat cream cheese and sugar.  Add vanilla and one egg at a time, beating well.  Pour into crust. Lower oven to 325 and bake 75-90 minutes until cooked through and browned.  Chill overnight in fridge and top with canned cherry pie filling. Mmmmmmm!

Skinny Cherry Cheesecake Parfait

Parfaits make for a great breakfast or dessert during the summer months. They’re easy. They’re tasty. And you have virtually endless possibilities with flavor options! Plus, they don’t heat up your kitchen. … Something which is often a deal breaker for me once we start getting into 100+ days.

Can you tell that I’m already dreading July and August? Ugh.

This particular parfait could go either way. Breakfast or dessert. It’s refreshing and filling enough to last you through the morning, and yet is just ‘naughty’ enough to pass for a dessert.

And by naughty, of course I mean it only seems that way.

I’ve given the greek yogurt here a bit of an upgrade by adding a wedge of laughing cow cream cheese spread to it, giving it that cheesecake flavor while remaining guiltless. And since it’s cherry season, I took advantage and used fresh cherries rather than anything out of a can. Good. Stuff.

As you can see, this is a pretty decently sized parfait. It filled my parfait glass perfectly, so just know that you’re getting quite a bit for the calorie count.

If you’re wanting to serve this as an even lighter dessert, you could easily half each serving as listed below!

The Skinny:
Servings: 1 • Size: 1 Parfait • Calories: 313.7 • Fat: 6 g • Carb: 44.2 g • Fiber: 1.4 g • Protein: 19.6 g • Sugar: 21.3 g • Sodium: 270 mg

Ingredients:
6 Oz. Fat Free Vanilla Greek Yogurt
1 Wedge Laughing Cow Cream Cheese Spread
10 Fresh Cherries, Pitted & Quartered
1 Square (1/2 Sheet) Reduced Fat Graham Crackers, Crumbled
2 Tbsp. Low Fat Cinnamon Granola

Directions:
Combine the greek yogurt and cream cheese together.

I find this works better when the wedge of cream cheese is softened slightly.

Separately, mix the graham crackers and granola together.

Layer all of the ingredients together and serve right way.
