Cowboy Pizza – And Taking Inventory When You’re In Over Your Head

Today I’m going to show you how to make a Barbecue Chicken Pizza that will make your taste buds yodel! It comes together quick as a wink, too, whether you use my homemade pizza crust recipe or store bought.

But before we get started with that, I’m gonna chat with you a little bit about what to do when you find yourself bobbing along in water that is obviously over your head.

Here we go…

If you are the sort of individual who breathes oxygen, you have likely found yourself overwhelmed at some point in your life. If you are like me, this happens on a regular basis. Like when the sun shines or the sky is blue.

Right now I’m staring at my computer screen with a little email icon in the bottom corner that tells me in red letters I have 69,780 unread emails. I’m not kidding. I generally get a few hundred emails a day and I try to answer as many as I can but as much as I want to answer them all, at some point you just have to admit defeat. Last year, I got so overwhelmed with not being able to answer all the postal mail that was coming in that I couldn’t bring msyelf to go to my P.O. box for eleven months…the longer I waited, the harder it was to bring myself to go. Finally, I set up a time when Mama and I could get together so she could help me go through the mail, took two laundry baskets, and collected everything.

Between the technical ins and outs of running a website, photographing and writing new posts, working on my book and a book tour which will soon have me away from my family and the work I am already behind on for a month, with just a day or two (at most ) home each week (the thought of that hurts my heart so much that it keeps me awake at night), trying to answer comments on SouthernPlate and Facebook, business calls and emails, speaking requests and appointments, Being a Mama – which is most important, all my other assorted jobs, and trying to keep up with a house, It is safe to say that in those moments where I allow myself to look at the whole picture, I’m pretty overwhelmed.

I have no staff.

There is no housekeeper.

Supper at the end of the day is cooked by me or not cooked at all.

I often find myself feeling as if I’m running on empty and can’t go another step.

That’s when I step back and, rather than look at how ill equipped I am to handle everything, I look at the tools that I do have.

This is a list I made last night in my journal…

I have:

The ability to love people

family

laughter

sleep (sometimes)

peace

inner joy

God’s grace.

and when it comes down to it what else could I possibly need?

And after making out a list of what I do have, I see that I have all I need to do what I am called to do. And if I do not have what I need to fulfill my calling, then I know that God will give it to me or I need to re-examine the genuiness of that calling.

So I encourage you to step back today and make a list. Rather than focus on what you don’t have, list what you do.

How are you equipped? Be honest, be open minded.

Do you have a sense of honor and a strong work ethic? Is there a stubborn streak that can get you far if used properly? Do you have a Mama who loves you or a child who looks up to you? Is there a weather day of sunshine on your horizon? All of these and so much more can be counted as assets in your toolbox that enable you to meet life head on and become the person you were destined to be.

When you feel yourself sinking, if you step back and look at the big picture, you’ll realize that for every body of water you must cross, there is a bridge.

Now lets make pizza.

Cowboy pizza can easily be adapted to your favorite flavors but I’m going to show you how I make it and you can go from there.

To make it my way you’ll need: Shredded Mozzarella, green onions, barbecue sauce*, and cooked chicken.

You’ll also need a pizza crust but we’re about to get to that part.

Barbecue Sauce – I’m using my original barbecue sauce recipe which can be found in my first book. You can use whatever recipe or store bought sauce you like the most.

I’m also streamlining things a bit by starting with a rotisserie chicken.

Let me tell ya why…

So this week, I can buy a raw chicken, bring it home and cook it myself, for $5.53. Or I can buy a chicken, already cooked so all I have to do is debone and chop it, for $4.99.

I have a rule I’ve learned to live by in my older age which, surprisingly, did not seem as obvious in my younger years as it does now:

Do not complicate that which is simple.

You’re also going to need a pizza crust. You can purchase a store bought one like this (which I get in the refrigerated section, near the cheeses) or you can make your own like this.

This is my homemade stuffed crust pizza recipe that you can put together in a little over five minutes and is easy as can be. Click here for the recipe with step by step photos.

Now lets make our pizza

Don’t blink because this is gonna go fast.

Remove the skin and chop up about a cup or two of chicken. You don’t need this much but I was hungry when I made this.

Add in 3-4 tablespoons of bbq sauce of your choice.

Stir that up to coat.

Spread some bbq sauce over your crust.

How much you use is up to you. Personally, I like to use about double what is shown here but I toned it down a bit for this post.

Sprinkle sauce with just a little bit of dried oregano.

And a little bit of cheese.

Add chicken.

Top with sliced green onions and more cheese.

Bake this at 400 for 20-25 minutes. Serve hot.

Ingredients

  • 1 Pizza crust, either store bought or homemade (click here for recipe)
  • 16 ounce bottle Barbecue sauce
  • 1-2 cups shredded Mozzarella
  • 1-2 cups chopped, cooked chicken
  • 2 green onions, chopped
  • 1 tablespoon dried Oregano

Instructions

  1. Toss chopped chicken with 4 tablespoons of barbecue sauce to lightly coat. Set aside.
  2. Spread remaining barbecue sauce over pizza crust (less if you like). Sprinkle with Oregano. Sprinkle with 1/2 of cheese.
  3. Add chicken to top of pizza and sprinkle with remaining cheese, followed by onions.
  4. Bake in 400 degree oven for 20-25 minutes, or until crust is lightly browned and cheese is bubbly. *If you are using a store bought crust, follow baking directions on the package.
  5. Serve warm.

I’ve got a busy week ahead of me but I can’t tell you what I’m up to just yet

I can tell you that this time honored recipe comes together so fast that I can serve it for supper on the busiest of days! Chicken Fried Steak is a Southern staple in most homes and restaurants and it’s easy as can be to make, but in this post, I’m gonna show you a little trick that will help you to have a nice crunchy breading every time.

So without dilly dallying around, I’ll dive right into the cooking part today.

Now let’s get a head start on supper!

To make this recipe you’ll need: Milk, flour, salt and pepper.

Whatever flour you have on hand will work just fine, whether it is all purpose or self rising. If using self rising, you can just leave the salt out since it already has salt in it.

 You’re also going to need some cubed steak. This package has two pieces in it.

Now, normally I would take those two pieces of meat and cut them in half to make four pieces of meat, but I’m leaving them intact for this tutorial so I have nice big pieces to photograph on the plate for y’all.

When cooking on a budget, though, it is usually a good idea to cut meat into smaller portions in order to give the appearance of having more.

For example: Cut large pieces of meat in one or more pieces. Make hamburger patties half the thickness. Cut boneless skinless chicken breast halves into three or four strips each instead of serving as a whole piece. This will help meat go twice as far.

Before ya get started, pour a little oil into a large skillet and set it over medium to medium high heat.

I’m using corn oil because I happened to have it, which is really odd since I usually buy Vegetable oil. Whatever you usually fry in is fine.

Now place your flour in a shallow dish – I’m using a Corelle Pasta Bowl, and season it with salt and pepper.

Stir that up good.

Now pour a little milk in another shallow dish and you’ve got a breading station set up.

Go you! You’re awesome!!!

(Thought you might need a little cheering on today)

Take one piece of cube steak and dip it into the milk on both sides.

Hold it up to drip excess milk off a few seconds and then…

Dip both sides into the flour mixture.

THEN…

Dip it BACK into the milk…

Feeling deja vu here?

See, the trick to getting a nice thick breading is to double dip. That first dip is basically creating a “glue” for the second coating to stick to.

Dip it back into the flour mixture.

Repeat with the rest of your cube steak.

Carefully place breaded steak into hot skillet and cook until browned, flip, and cook until browned on the other side as well. This will probably take anywhere from 5-7 minutes per side.

Once it’s browned, remove to paper towel lined plate.

Pour off most of the oil in your skillet, but keep about 3-4 tablespoons.

Add your flour to hot skillet.

Stir constantly until flour is browned, just a minute or two.

Reduce heat to low.

Pour in milk and stirry stirry stirry.

Continue cooking until gravy is as thick as you like, 2-4 minutes.

If it gets too thick, stir in more milk.

Place Chicken Fried Steak on a plate with some friends!

Ingredients

  • 2 pieces cubed steak
  • 1 cup all purpose flour (self rising is fine, just omit salt)
  • 1/2 tsp salt (more if you like)
  • 1/2 teaspoon black pepper (more if you like)
  • Vegetable oil for frying
  • For Gravy

  • 3 tablespoons reserved oil from frying steaks
  • 1/4 cup all purpose flour
  • 1/2 teaspoon salt and 1/4 teaspoon pepper, or to taste
  • 1 1/2 -2 cups milk

Instructions

  1. Pour oil to a depth of 1/4 inch in a large skillet. Place over medium heat while you prepare the cubed steaks.
  2. In a shallow bowl or pie plate, stir together flour, salt, and pepper. In another shallow bowl, pour milk.
  3. Dip each piece of meat into milk on both sides, then flour mixture on both sides, back in milk on both sides, and back in flour mixture on both sides. Repeat until both pieces of meat are breaded.
  4. Carefully place in hot oil and cook until browned on both sides, about 8-10 minutes. Remove to paper towel lined plate while you prepare the gravy.
  5. For the Gravy

  6. Drain off all grease except for 3-4 tablespoons. Add flour to grease and stir over medium heat until flour is browned, just 1-2 minutes.
  7. Reduce heat to low and pour in milk while stirring constantly. Add Salt and Pepper. Stir over low heat until gravy is of desired thickness. Add more milk if it becomes too thick.
  8. Pour gravy over fried steak, mashed potatoes, and biscuits if you like.
