One Pot Vegan Pumpkin Curry Soup — The Skinny Fork



Despite not having a lick of cream in this soup, it manages to come out smooth and ‘creamy’ with the coconut milk and the cannellini beans being blended together. It turns into a beautiful thick, stick-to-your-ribs meal in a bowl.

This soup would be great paired with a nice slice of crusty bread for dipping or a side salad to get in even more veggies! No matter how you serve it up, it’s sure to be enjoyed. And don’t let the name fool you! Despite the fact that this soup has curry in the name, it’s not at all spicy. The curry is there for flavor alone.

Originally, I was introduced to soy marinated eggs at a local ramen joint. Of course… I’m not the most confident in my skills to soft boil, peel, and marinate said eggs myself sooo… the next best thing is a hard-boiled version! And I say next best only because these are really just a very different animal all together. The idea is the same though. And the taste is too!

These Asian Marinated Eggs are a delicious and easy to make addition to … well, almost any Asian inspired meal. Add them to ramen, serve as a side with a salad, or even as an appetizer.

This isn’t really something you can (or should) make ahead of time. But! The good news is that this omelette only takes a couple of minutes to toss together. So, while it isn’t exactly ‘grab and go’ material, it still takes minimal time and effort.

I kept this omelette light by subbing in some egg whites. I also gave it a protein boost with adding in cottage cheese, which may or may not seem strange. But, I promise it’s really very tasty and adds along of texture and cheesy goodness to the omelette.
