Oh. My. Gosh. This Dark Chocolate ‘Crazy Cake’ is delicious, y’all! The first time I heard about ‘wacky cake’, I was more than a little skeptical. How can you make a good cake with no butter, eggs, or milk?! Well, as it turns out, there’s a couple of secrets to this cake that make it perfectly fluffy and delicious! In fact, it’s one of my favorite cakes. One of these simple swaps is using Mazola® Corn Oil in place of another oil or butter. I’ve been cooking and baking a lot more lately with corn oil. I wasn’t done there though. I also swapped out some of the sugar for a natural sweetener, and the cocoa powder for a dark chocolate cocoa powder. The end result was this tasty and easy cake that’s made all in ONE dish. Yep. No bowls to clean. No beaters to clean.

To make this a Farmer’s Market Cornbread, I added in – you guessed it – things you’ll find at almost any local farmers’ market. Including cherry tomatoes, jalapeño, onion, and cheese! Because no cornbread is complete without some cheese. Other than that, it’s straight up cornbread in the quick and easy way.

I have to admit, when my mother was here and saw me making this cornbread today she thought I was a bit insane for putting tomatoes on it, but I promise you that it’s delicious and you will love it – just like she did.

With the oncoming holidays, comes entertaining. And with entertaining, comes appetizers! And I for one, love appetizers. I could make a meal alone out of small appetizers, both hot and cold. One of my favorites though, has to be stuffed mushrooms. My love of stuffed mushrooms goes back several years where I think my first try was at a little Italian restaurant.

I immediately, and without being much of a cook at the time, taught myself how to make them. Skip forward to today and I like to make them with a few minor changes to the original easy recipe that included cream cheese, bacon, and just a touch of Italian cheese. I mean, who doesn’t just love the combination of cheese, mushrooms, and bacon? You’d be crazy not to!
