The other day we had some sort of freak cold front roll through here in June and let me just tell you that the 69 degree weather that day had me inspired to turn my oven on for one of the FEW times during the summer. I ended up making chili and these absolutely delicious Lightened-Up S’more Chocolate Chip Cookies.

What’s a s’more cookie? Well, it’s everything that you love about a s’more… put into a cookie! Not just any cookie though. The base chocolate chip cookie here is pretty damn good all on it’s own. But, add on the graham, chocolate chunks, and marshmallows and you’ve got one heavenly cookie.

While we spent a good half of our ‘camp’ themed week of summer on vacation, I’m trying my best to keep on theme now that we’re home and in the swing of things. Another good reason to bust out some homemade chili, right?

Yes, this chili has a lengthy list of ingredients, but I will say that the list is compiled mostly of seasonings and spices. So don’t hit the panic button when you see the lot of it. I promise, that while this chili does take some measuring spoons, it’s all so VERY worth it in the end. This chili has been making the rounds through my family for a good year or two now. And even my mom, who is the chili master in the family, has bowed down and handed over the title to me with this one.

I personally love Mazola Corn Oil because it’s a pretty perfect all-purpose oil. It’s cholesterol free and is a smart heart-healthy choice. It’s great for baking, grilling, sautéing, and so much more! Today, I’m using it for a marinade, though, on these FRESH summer veggies. You don’t have to only use it for cooking either. This corn oil is amazing as a dressing too! It has a neutral taste that lets the natural flavors of your food really pop!

One of my favorite things about grilling with Mazola Corn Oil is that it has a higher smoke point than most other oils at 450 degrees F. So even on the hottest of days, or grills, you don’t have to worry about that finicky smoke point, which once exceeded, effects not only the flavor, but the nutritional value of food too!

The other swaps that I made were to use a whole wheat naan flatbread for the crust (instead of a traditional pizza crust or white flour crust) and to use a reduced fat cheese instead of the full fat version.
