With just a few of simple ingredients from your pantry and a baking tray, this dish is much easier than it looks and makes an amazing side dish that is a comforting and fun addition to any Fall meal or holiday table and will wow your family and guests. The aromatic, earthy oregano and sage pair really well with that slightly sweet flavour of the butternut squash.
Hasselback is a technique of slicing a vegetable or fruit thinly while still leaving it connected, opening it up like an accordion. It’s visually appealing and it’s also a great way to insert more flavor into the dish.

  • 1 / 800 g Butternut squash, halved lengthwise, peeled, and seeded
  • 2 tbsp Olive oil plus more to coat
  • 80 g Maple syrup (or honey)
  • 1/2 tsp Chilli pepper flakes
  • 1 tbsp Wholegrain Dijon mustard
  • 1 tbsp Sage leaves, finely chopped (or marjoram, rosemary or thyme)
  • 1 tbsp Oregano, finely chopped (or marjoram, rosemary or thyme)
  • Sea salt
  • Freshly milled black pepper
  • A handful of walnuts, chopped
  1. Preheat your oven to 200C / 180C fan-forced / /400F. Cut the butternut squash in half lengthways, then scoop out the seeds and pulp and discard. Remove the skin with a vegetable peeler.
  2. Coat the pumpkin halves with oil and season with salt. Place pumpkin halves, cut-side down, on a baking tray. Roast for 20 minutes, then set aside to cool slightly (par-cooking makes the pumpkin easier to cut).
  3. While the squash is in the oven, combine tpgether the olive oil, maple syrup, chilli flakes, Dijon mustard, chopped herbs, salt and pepper and mix well with a small whisk until completely combined.
  4. Using a thin metal spatula, transfer pumpkin to a cutting board. Place a chopstick along each long side of pumpkin. Using a sharp knife, cut slits into pumpkin crossways about 4mm apart, cutting through to chopsticks to prevent cutting all the way through. Return the pumpkin to the baking tray. Repeat with remaining pumpkin half.
  5. Brush about 1/2 of the maple syrup mixture over the pumpkin halves and roast for about 45 minutes, brushing pumpkin every 15 minutes with the pan juice. At the last 15 minutes, add the chopped walnuts to the remaining syrup glaze and stir to combine. Spoon the nut mixture over the top of the pumpkin halves and bake until golden and tender.
  6. To serve, carefully remove the squash from the baking sheet with a spatulas and transfer them to a platter. Drizzle the pan juice over and sprinkle with extra herbs and walnuts. Enjoy!

Sure it tastes great, but now you cant stick it in the toaster or make matching slices. Parchment paper is the key to a successful bread loaf bottom! Grease and flour work well too, but they require more effort and I like things simple and easy.

I like to use Pink Ladies but you can use any tart apple for a nice contrast to the sweetness in the bread. Good baking apples like Granny Smith apples are able to withstand the baking process without becoming too mushy or grainy like a softer apple variety.

Can You Make Mini Apple Bread Loaves?

This recipe makes 1 large loaf of bread and 1 mini loaf,  but it can be adapted to make 3 smaller mini loaf versions as well. Make the recipe as directed and then divide the batter into 3 prepared mini loaf pans. You’ll need to adjust the cooking time so after 35 minutes start checking it with a toothpick every 5 minutes to make sure that they don’t become overbaked or burnt.

-1 tsp Vanilla Extract

Line a 9- by 5-inch loaf pan with waxed or parchment paper (or grease and flour it), then set it aside. Heat the oven to 350° degrees F.

In a large mixing bowl, combine the applesauce, sugar, brown sugar, eggs, oil, yogurt, and vanilla extract in. Whisk well to blend everything together.

In another large bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Make a well in the center of the dry ingredients with a wooden spoon and then pour in the applesauce mixture. Stir just enough to combine, but do not overmix. Fold in the apples and walnuts.

Scrape the batter into the prepared pan and smooth the top with a spoon. Evenly sprinkle one tablespoon of sugar over the top. Bake on the center oven rack until a toothpick inserted into the center of the bread comes out clean, about 50 to 55 minutes.

Remove the pan from the oven and put it on a cooling rack for about 15 minutes, then remove the loaf from the pan and place it on the rack to finish cooling. Makes 10 servings.

The easiest and best way to avoid sunken bread is to use a cooking thermometer to check the inside of the loaf. Fully cooked bread will register 200°F on a thermometer. My all-time favorite thermometer is the Thermapen. It’s super fast and incredibly durable. Another great cooking thermometer is the ThermoPop which is a more basic version that works just as well!

  • OPTIONAL GLAZE: Whisk 1/2 cup powdered sugar with 2-3 TBSP HOT water. Drizzle on cooled bread and let set.

Can I Use Sweetened or Cinnamon Flavored Apple Sauce?

You can but note that the bread will turn out sweeter and if you use the cinnamon flavored, you may wish to omit the ground cinnamon unless you think you’ll like that much in one recipe. I personally love cinnamon, so I see nothing wrong with this but others may not like it so rich since it can be an overwhelming flavor.

Can You Freeze Apple Bread?

Yes! This bread freezes so well! Once your loaf has finished completely cooling down and is at room temperature, wrap it well with plastic wrap and place it into an airtight storage container like a gallon sized Ziploc bag. This should be able to get your double apple walnut bread to last up to 3 months in the freezer.

I prefer to use large, fresh carrots that I then cut into coin sized pieces. You will want to first peel the carrots and then slice them into a 12 inch button.

You can also use baby carrots (whole) or frozen sliced carrots that have been thawed.

You will want to store leftovers in the fridge in an airtight container for up to 5 days.

To reheat them you can warm slowly on the stove top or in the microwave. Add a pat of butter to your leftovers as they warm up. This will help to keep them from drying out and adds a little freshness to the dish.
