That’s right. It’s ‘Peanut butter jelly time, peanut butter jelly time…’
This is for those of you out there that looove peanut butter and jelly! And trust me, I know there’s a lot of you out there.
This is my fun summer twist on the classic kid friendly sandwich.
It’s super simple, easy to make, and well… it just looks impressive!
I used a blend of fresh and frozen fruits to make my dreams come true, but you can use both or either. Whatever tickles your fancy!
By the way, you can even make this ahead and stash it in the fridge for lunch time.
If you’ve got peanut allergies, don’t fret! I’m sure this would work with any sort of nut butter or peanut butter substitute that you would use similarly for the sandwich counterpart.

The Skinny:

Ingredients:
6 Oz. Fat Free Vanilla Greek Yogurt
2 Tbsp. PB2 Powder, Dry (Not Prepared)
1/2 C. Mixed Berries (Frozen & Thawed)
1/2 C. Mixed Berries (Fresh)
2 Tbsp. Granola
Directions:
Get a glass and set it aside.
Combine half of the yogurt with the PB2 powder. Stir until well well combined.
Combine the other half of the yogurt with the frozen berries.
I blended mine in my mini food processor.
It’s time to layer!
Place the granola at the bottom of a glass, top with the berry yogurt, followed by fresh fruit, and finally the peanut butter yogurt.
Sprinkle a little more granola and berries on top and enjoy!
