{THE BEST} TEXAS CAVIAR

Have you ever had “Texas Caviar?” Sounds odd, I know. The first few times I heard how amazing it was, I didn’t really listen because ummm… I don’t want to try caviar. Sounds pricey. And slimy.

Then I had it at a potluck and oh how my attitude changed. It has nothing to do with actual caviar, really it’s just a play on words in an attempt to describe a ridiculously easy appetizer that is absolutely amazing! Honestly, try it. Just be prepared to ditch the chips and grab some other utensil that allows you to eat more, faster. {Wait, is it just me?!}

This version has an added ingredient that’s not normally found in other versions: avocado. Don’t leave it out. In my opinion it takes the dish from good to stellar. Other versions also use Black Eyed Peas, but I think they’re harder to find and cost more than regular beans. So I use regular cans of beans instead and you know what? It tastes the same!

The BEST Texas Caviar

  • 1 can black beans, drained and rinsed
  • 1 can great northern beans, drained and rinsed
  • 1 can sweet corn, drained
  • 3 good sized roma tomatoes, diced
  • 1 bunch green onions, sliced
  • 2 large avocados, diced
  • about 1/2 a bunch of fresh cilantro, chopped
  • 8 oz {1 cup} Italian dressing ~ I use Good Seasons dressing packets that you mix yourself. It just takes 1 packet, that way you have it in your pantry to make another batch later on!
  • 1 small lime, sliced in half {I juice 1/2 the lime into the dish, then use the other half to garnish

Add all ingredients to a large bowl, including Italian dressing.

Stir.

Serve with taco chips. It’s also amazing over chicken tacos or chicken enchiladas. Or quesadillas. Or just eaten by itself, as a snack. YUM.

But if you don’t want to make these from scratch, you can just pick up store bought versions, too because I give both options in each of the recipes.

There are a ton of chicken recipes in the book but I’ve made sure to include recipes for beef, pork, seafood, a ton of vegetable sides, breads, and even a small dessert chapter to round out the meal. So in addition to passages to encourage you on a personal level sprinkled throughout you’ll find all you need to put supper on the table at the end of a busy day or on a Sunday afternoon.

The chicken I am sharing with you today is the most flavorful oven fried chicken I have ever tasted. The recipe came from Granny Jordan’s file of handwritten recipe cards and as soon as I saw the ingredients I knew I’d love it. Dipping it in Italian dressing makes a key difference, and the jazzed up breading ingredients help seal in the moisture and add a delicious crust while it bakes.

To make this, you’ll need:  Boneless Skinless Chicken Breasts, Italian Dressing, Bread Crumbs, Parmesan Cheese, Dried Parsley, Garlic Salt*, and Pepper.

*I was out of garlic salt so I just used powdered garlic and a little salt instead.

Place Italian dressing in one dish and breading ingredients in another.

Stir your breading ingredients together.

Dip each chicken breast, first in the dressing on both sides, then in the breading mix.

Like this.

All clothed and ready to go!

Place pieces in a baking dish that has been sprayed lightly with cooking spray.

Bake at 350 for 40-50 minutes, or until lightly browned on top.

Granny’s Oven Fried Chicken

Ingredients

  • 1/2 cup plain bread crumbs*
  • 1/3 cup grated parmesan cheese
  • 1 tablespoon dried parsley flakes
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup Italian dressing
  • 3-4 pounds boneless, skinless chicken breasts

Instructions

  1. Preheat oven to 350. Lightly spray a 9×13 baking dish with cooking spray and set aside.
  2. In a shallow bowl or pie plate, stir together bread crumbs, cheese, parsley flakes, garlic salt, and pepper. Pour Italian dressing into a separate shallow bowl.
  3. Dip each chicken breast into the salad dressing to coat both sides, then dredge it in the bread crumb mixture and transfer it to a plate.
  4. Place chicken breasts in the prepared baking dish and bake until they are cooked through, 30-40 minutes.

PIZZA PASTA SALAD

This recipe has become one of my go-to recipes for potlucks and family dinners because it is so easy and everyone loves it!

Pizza Pasta Salad


16 oz. rotini pasta
1 cup pepperoni, diced (I used a 5 oz bag of the mini pepperonis to save time)
1 can olives, sliced
1 cup mozzarella, cut into small pieces (I usually use about 6 string cheeses-they work so great for this!)
1/4 cup Parmesan cheese
1 cup tomatoes, diced (I usually leave these out since my family is not a huge fan of tomatoes!)
1 bottle of Bernstein’s Restaurant Recipe Italian dressing (I have tried several different kinds of Italian dressing and this one really is the best in this recipe-it makes it so yummy!  It’s not very expensive and I’ve been able to find it at most grocery stores.)




Cook pasta according to package directions.  While the pasta is boiling, you can get everything else ready to assemble.  Cut up the cheese, olives and pepperoni if needed.

When pasta is cooked, drain and rinse with cold water.  Mix all of the ingredients together in a large bowl, cover and store in the fridge until ready to serve.  You can serve it immediately if necessary, but is ideal to let it chill for at least a few hours before serving.  I like to prepare this the night before so everything has a bit of a chance to marinate.  Just make sure to re-stir everything up again right before serving to make sure the dressing is well mixed!
