Banana cream pie with a graham cracker crust is a dessert worthy of any holiday table or get together and when you see how easy it is to make from scratch you may try to find more reasons to make it too.

What Is a Banana Cream Pie?

It’s a heavenly combination of vanilla custard, fresh bananas, whipped cream, and pie crust. Everything from soft and sweet to savory and a fresh banana in every bite. The cream filling is a homemade vanilla custard laid on top of a pre-made pastry shell. Adding whipped cream to the top of all that is optional, but it’s an option we all enjoy making because banana cream pies just don’t feel the same without whipped cream on top.

-Pre-made Pie Crust: Use a homemade or store bought 9 inch pastry shell, which are found in the frozen section of your grocery store. Just make sure to blind bake it first! (Which is just a fancy way of saying to bake the empty pie crust before adding the banana cream filling!

-Sugar: you’ll just need regular granulated sugar

-Cornstarch: The thickener in this custard filling, cornstarch works great to make it nice and thick. No one likes a runny pie.

-Salted butter: While you can use salted or unsalted butter, using salted helps to make the flavors POP and taste great. It also keeps you from needing to add any additional salt into the recipe.

How to make Homemade Banana Cream Pie recipe-Milk: whole milk or 2% milk works great but try to avoid anything with less fat than that. The fat is going to help this pie set up properly.

-Egg yolks: Beat them so they’re ready to go. These yolks add flavor, texture, and color to the pie filling.

-Vanilla extract: Adding a rich flavor depth to the pie filling and helping to highlight the flavors of the bananas.

-Bananas: What would a banana cream pie be without the bananas? We want these ones sliced and lining the pastry crust so that every slice gets a bit of fresh banana in it!

In a medium sized pot over medium heat, pour in 1 cup of milk and stir for a minute. Add in the cornstarch, sugar, and stir again.

Continually stir and gradually add in more milk ½ cup at a time, stir the milk constantly for 2 minutes and then remove from the heat.

Add your beaten egg yolks to the milk mix and stir to combine. Place back on low heat & cook for an additional 2 minutes while continually stirring as the mixture begins to thicken.

Remove the pot from the stovetop and add in your butter and vanilla, mixing well.

Slice 3 bananas and place them at the bottom of the pie shell. It will look like a lot and that’s OK!

Remove the pie from the fridge and top with whipped cream. Sprinkle the top with graham cracker crumbs and surround the outside edges with additional banana slices.

  • 1 9″ baked pastry shell
  • 3/4 cup sugar
  • 1/4 cup cornstarch

  • 2 tbsp salted butter
  • 2 tsp vanilla extract
  • 4 bananas, sliced
  • 3 tbsp graham cracker crumbs

Instructions

  • Place a medium sized saucepan on the stove over medium heat.

  • Add 1 cup of milk and stir for one minute.

  • Whisk together cornstarch and sugar. Pour into milk and whisk until dissolved.

  • Continually stir, and gradually add in the additional cup of milk, ½ cup at a time. Stir the milk mixture constantly for two minutes and then remove from heat.

  • Add the beaten yolks to the milk mixture and stir until combined. Place back on low heat & cook for an additional 2 minutes while continually stirring as the mixture begins to thicken.

  • Remove the pot from the stovetop and add in your butter and vanilla, mixing well.

Mint Chip Pie is perfectly refreshing in the summer or make it for St Patrick’s Day! Many people love to make it around Christmas Time as well. Really, this pie is perfect at any time of year! I certainly don’t need an excuse to make (and eat) it!

Like mentioned above, we only need a handful of easy ingredients for this pie. The one item you may not have is mint extract, but it is only a few dollars at the grocery store and a must purchase for this recipe.

  • Store Bought Oreo Crust- I like to purchase the pre made crust from the grocery store for convenience but you could definitely make your own if you’d like! Use 25 Oreos, crushed, and combine it with 5 tbsp of melted butter. Press it into your pie plate and chill.
  • Vanilla Pudding Mix- We will use the smaller box, 3.2 oz. Definitely use vanilla flavor, and we will be looking for the Instant Pudding!
  • Heavy Cream- To make the pudding thicker which makes the pie thicker and easier to slice, we will use heavy cream instead of the milk that is called for when generally making pudding.
  • Mint Extract- You’ll want mint extract, not peppermint. There is a difference, make sure you are using mint.
  • Frozen Whipped Topping- The whipped topping will need to be thawed before making this recipe. One 8 oz container is all you’ll need.
  • Green Food Coloring- This isn’t a requirement and won’t change the final taste of the pie, so if you’d rather not use the food coloring this is something you could skip out on.
  • Mini Chocolate Chips
  • Andes Mints Bits 

How to make Mint Chocolate Chip Cream Pie recipeHow to make Andes Mint Cream Pie

Making this cream pie is very easy, just a little measuring and mixing is all. First, we will mix together the pudding mix with the heavy cream and mint extract with a whisk. Stir briskly, smoothing out any lumps before it sets up. Within a few minutes it will be very thick.

The next step is to mix the pudding into the whipped topping. You can fold it in or whisk it together, just mix until everything is combined and smooth. Now is the time to add in that food coloring. I used about 5 drops of green food coloring. Finally, fold in the mini chocolate chips.

Spread the pie filling into the pie crust and refrigerate for 3-4 hours before serving. Feel free to top the pie with the remaining whipped topping and sprinkle with Andes mints if desired.

  • Fold the pudding mixture together with 1 1/2 cups whipped topping until creamy with no lumps.

  • Stir in the food coloring.

  • Fold in the mini chocolate chips.

  • Pour the pie filling into the oreo pie crust.

  • Refrigerate for 3 hours before serving.

  • Top the pie with the remaining whipped topping and ande’s mint bits if desired.

Storing a cream pie such as this one needs to be done in the refrigerator. Keep in the fridge until ready to serve and place back in the fridge immediately after serving. Keeping the pie out of the fridge for too long will result in a runny pie and one that is not safe for eating anymore.

Freezing pie

This pie freezes great! Freeze the entire pie or by the slice. To thaw a whole pie, place in the fridge for 24 hours before serving. To thaw just a slice, allow it to set on the counter for 15-20 minutes or until thawed.

Crumb topped apple pie bars are a delicious way to enjoy your favorite classic apple pie but in an easy-to-serve kind of way. With a simple and tasty crumb topping, it’s almost like a thin dutch apple pie slab, doesn’t that sound great?

With an apple slab pie, you can cut and serve so many pieces to give out to friends and families at parties and gatherings. It’s a million times more convenient than cutting and scooping out traditional pie slices (and much less messy too!)

It turned into a delicious cross between apple crisp, apple pie, and my apple dessert bars. I used my favorite oatmeal pie crust as it makes this dish feel complete.

What Kind of Apples Should I Use?

You can use any apples, but specifically choosing harder and more tart baking apples like Granny Smith, HoneyCrisp or Pink Lady is a great idea. They’ll add a nice flavor of tang to offset the sweetness of everything else and will taste incredible!

Can I Use Quick Oats in this recipe?

Yes, you can. Just know that the quick oats have a slightly different texture than Old Fashioned rolled oats and will make the crust feel a little softer. Other than that, they’ll work great!

Here’s what you’ll need to make this recipe:

-all-purpose flour: you can also use bread flour if you prefer!

-Old Fashioned oats:

-baking powder, salt, nutmeg, ground cinnamon: these are for adding flavor and leavening

-brown sugar

-shortening: the pie crust uses both shortening and butter for a fantastic blend of flavor and texture for the pie crust

-butter: you’ll use butter in both the pie crust that goes on the bottom of the pan as well as in the crumb topping. I prefer salted butter in this recipe!

-an egg, vinegar & ice water- helps the texture of the pie crust be amazing!

-about 7-8 apples, peeled, cored & sliced: see my notes about what apples are best above!

-chopped walnuts or pecans: such a delicious addition!

Here’s how To Make The Pie Crust:

In a bowl, stir together the flour, oats, baking powder, salt and brown sugar. Cut in shortening. Add small pieces of butter while continuing to mix. {I just tossed it all in my Kitchenaid and mixed it using the whisk.}

In a liquid measuring cup, mix together the egg, vinegar, and enough ice water to measure 1 cup. Add to the flour mixture and mix well.

How to make the apple pie filling

Toss everything into a large bowl and stir to combine. I opted to add it all to a ziplock bag, closed it, then shook it around. It worked great! Let the apples sit in the fridge until you’re ready for them.

How to make the crumb topping

Combine all of the ingredients until crumbly using a pastry cutter, 2 forks, or whatever you think will work!

Preheat your oven to 375 degrees F. While the oven is preheating, mix up the pie crust. Spray a 9×13 or 8×12 glass baking dish with cooking spray.

On a lightly floured surface, roll the pie crust dough into a 10-inch rectangle that’s about 1/4″ thick. Wrap it around the rolling pin and unroll it into the prepared baking pan.

Ease dough into the pan and up the sides. It sounds more difficult than it really is! Make adjustments around the edges of the crust by trimming from a too-long edge and filling in on a shorter edge. Make the crust go all the way up to the top of the sides as it will shrink down a bit after baking.

Take a fork and poke about 10 times along the bottom of the dish.

Bake the crust for 10-12 minutes, until lightly browned.

After crust is done with the preliminary baking, dump the apple mixture on top of the baked crust. Spread evenly. Sprinkle with Crumb Topping (pan will be full).

Bake for 40 to 45 minutes or until the apples are tender. If necessary to prevent over-browning, cover the top with foil for the last 5 to 10 minutes of baking. Cool slightly in pan on a wire rack. Top with whipped cream or vanilla ice cream, caramel topping and serve.

Ingredients

  • 4 1/3 cup all-purpose flour
  • 2/3 cup Old Fashioned oats
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp packed brown sugar
  • 1 1/2 cups shortening
  • 1/2 cup cold butter, cut into small pieces
  • 1 egg
  • 1 tbsp vinegar
  • ice water

Apple Filling

  • 7-8 apples, peeled, cored & sliced
  • 1/3 cup flour
  • 1 tsp ground cinnamon

Crumb Topping
