Lemon Bread is made with lemon pudding, a lemon cake mix, oil, water and eggs. That’s it! All of the ingredients are mixed together and then divided in half to make two delicious loaves of lemon bread.

I know some of you are going to look at the ingredients and realized that there is a cake mix listed. Wait a second, is this cake or bread? Yes, there is cake mix and pudding in the recipe, so the bread ends up being pretty sweet and a little bit cake-like. But let’s be honest. Aren’t most quick breads pretty much like cake anyways?

Banana bread, zucchini bread….all of these recipes are a little bit more like dessert than bread, but hey, if you put it in a loaf pan, you can call it bread. And doesn’t it just make you feel better to say that you ate 5 slices of bread than half of a cake? If it’s bread, you can eat it for breakfast, lunch or dinner and not feel bad about it. Sounds good to me!

How to make the best quick breads

There are a couple of tips that will help you to get the perfect lemon quick bread every time!

  1. Make sure to use the right bread pans! The recipe for this quick bread is written for a regular sized bread pan which is 9.5″X5″. You can use two smaller pans if you’d like, just adjust the cooking time to about 45 minutes.
  2. I don’t like to use glass pans. For some reason, my bread never cooks very well. If you use non-stick pans, you won’t want to use any cooking spray, but if you are not using non-stick pans, make sure to use a baking spray like this one or line the pans with parchment paper so your bread doesn’t get stuck to the pan! There is nothing worse than making a beautiful loaf of bread and having the whole thing fall apart when you try to get it neatly out of the pan!
  3. Make sure to test the middle of the bread at the end of the cooking time – I like to use one of these for that! If your bread is still gooey in the middle, bake for a few more minutes. If the edges and the top are starting to look too brown and the middle isn’t done yet, go ahead and put some foil over the bread for the last few minutes of baking until the bread is done in the center. This will prevent the outside from burning, but still allow the middle to cook all the way through.
  4. Also, make sure that you don’t over mix the batter. You can blend the wet ingredients well and the dry ingredients as much as you want when they are separate, but once you put them together, you want to mix just enough to combine them.

  • 1/2 cup vegetable oil (or melted coconut oil)

How to make Easy Lemon Bread

  1. Combine all ingredients in a large bowl and beat with a hand mixer for about 3-4 minutes.
  2. Pour into 2 loaf pans that have been greased and floured, or you can do what I do and use a baking spray like this one.
  3. Bake at 350° for about 40-45 minutes or until a toothpick inserted in the center comes out clean.
  4. Leave in pans for a few minutes before removing the loaves and placing on a wire rack to cool. Slice and serve – enjoy!

What kind of oil is best in lemon bread?

The recipe also calls for vegetable oil, but I actually usually use coconut oil (melted of course!) because it adds a lighter taste to the bread, plus as you can see, I’m all about making my “bread” as healthy as possible. Cue the cake mix and the lemon pudding. Both of these ingredients add the perfect amount of lemon flavor and they just make this recipe so easy to make!

Is there a glaze on lemon bread?

You can make a powdered sugar glaze if you want, but I actually prefer this bread without it. The bread is sweet enough without it and I like not having sticky fingers  – it makes it easier to sneak bites without any evidence! My kids devour this every time I make it and it’s the perfect treat for lunches or after school.

How to make a simple lemon glaze

Mix 1 1/2 cups powdered sugar with about 2-3 tablespoons of lemon juice (fresh or bottled). Drizzle over the top of the bread after you have removed it from the bread pan. The drizzle can be added while the bread is warm or after it has cooled.

Making fried rice is really simple and I love how I can adjust the recipe to suit our family’s tastes. We love more eggs and less soy sauce. It’s incredibly versatile- taste it and adjust as you’d like.

This is one of my favorite quick & easy dinners and the good news is- the rest of my family enjoys it too! It’s one of my “leftovers” dinners because I usually make it with chicken and rice leftover from another meal. The rice can even be stored in the freezer until you’re ready to use it! Just defrost it and it’s ready to go. A couple of the ingredients are flexible- I like it with more egg and less soy sauce. Taste it though and adjust to your family’s liking! I usually serve this with store bought egg rolls or pot stickers on the side.

What kind of rice to use for Fried Rice recipe?

I prefer making fried rice with regular long-grain rice. You can also use Jasmine rice or even brown rice, just make sure it’s cooked the day before you plan to make your fried rice. Just FYI too, I’ve used sushi rice, or short-grain rice (our popular brand is Calrose or Botan rice) to make fried rice. It tastes just as good, you just have to cook it quicker- over higher heat for less time, so it doesn’t turn soggy.

Fried Rice with Day-Old Rice

Fried Rice requires rice with a lower amount of moisture, so it’s best to use day-old rice (or 2-4 day old rice!) I often make a big batch of rice for dinner one night (to serve with Mongolian Beef or Easy Chicken Curry) and then freeze the rest in 6 cup increments, so it’s ready to be made into fried rice. Just thaw out frozen rice and use it to make fried rice cold- no need to reheat!

Fried Rice with Warm Rice

If you don’t have day old rice to use and you want to make fried rice, spread it out on a cookie sheet and bake it in a 250 degree oven for 10-15 minutes, cool it for 10 minutes and then place it in the freezer for 20 minutes. You can then use the cold rice in this fried rice recipe.

Assemble the following ingredients together to prepare to make easy fried rice:

–3 TBSP butter

–1/2 cup diced onion

–3-4 eggs

–1 cup diced cooked chicken

–6 cups cooked, cold white rice

–1 12-oz bag frozen peas & carrot vegetable mix, cooked

–3-4 TBSP soy sauce

–1 TBSP sesame oil

Heat butter in a large skillet over medium high heat. Once butter is melted, add in onion and cook for 2-3 minutes, until translucent. Add in eggs, one at a time, stirring before adding another one.

Once egg is pretty much cooked, add in chicken and stir often for another 2-3 minutes. Add in rice and stir to combine. Add in vegetables. Cook, stirring often for another 5-6 minutes, until rice is hot. Add in soy sauce and stir to combine, cooking an additional 5 minutes.

 

Remove from heat. Drizzle sesame oil over rice and stir once more. Serve hot!

Time Saving Tips for Making Homemade Fried Rice

Here’s how you can make our recipe for fried rice even faster.

The trick for making fried rice even quicker is to have several steps going on at once. Here are a few ideas:

  1. Use pre-diced onions. You can purchased them in the produce section of most large grocery stores, or by the frozen vegetables. No need to thaw, just add them frozen directly to the hot butter.
  2. Get the frozen bag of peas & carrots that can steam directly in the bag. Microwave it while you’re cooking the onions.
  3. Use store-bought rotisserie chicken, diced into smaller pieces.
