Favorite Deviled Eggs

 Everybody loves deviled eggs.
Add eggs to a large pot and cover with water.
Add 2T vinegar. The vinegar helps with the
peeling later. Bring to a boil, cover, and take
off heat. let sit for 15 – 18 minutes.
Drain off hot water and fill the pot
with cold water. Peel when the eggs are cool
enough to handle.
Cut in half lengthwise, Remove the yolks to
a food processor. If you don’t have one, put in
a bowl and use a whisk to blend the yolk mixture.
Add the yolk mixture to a plastic baggie.
Use a jar or glass to hold the baggie upright.
Snip one corner of the baggie and use it like a
pastry bag to fill the egg whites.
If you used a food processor, the yolk mixture
will be very smooth and creamy.
Refrigerate until serving time, then garnish

BACON AVOCADO DEVILED EGGS

I’ll be completely honest- I have never been a huge fan of deviled eggs, but then I saw this version of them and knew I needed to give it a try!  The addition of avocado and bacon makes these deviled eggs absolutely delicious!
BACON AVOCADO DEVILED EGGS

12 hard-boiled eggs (I used Amanda’s method of cooking them in the oven that is found here.)
3/4 cup diced avocado
1 1/2 Tbsp mayo
1 Tbsp lemon juice
3/4 tsp garlic powder
1/2 tsp crushed red pepper
1/4 tsp black pepper
salt to taste (I used about 1/4 tsp)
2 slices bacon, cooked
Slice the eggs in half and remove the yolks from the hard-boiled eggs.  Mix the yolks with all of the other ingredients and then divide it among the whites, refilling all of the eggs.  Top with crumbled bacon.  Enjoy!
