Raspberry Cheesecake Shakes have become one of my new favorite summertime treats! I recently moved from the Seattle area to southern Utah and it’s so hot. The average temperature in July is over 100° which is about thirty degrees higher than what we are used to in the summer! We’ve been trying all the cold treat recipes to try to survive the heat, and this one is perfect.

It only takes a few minutes to make these delicious milkshakes and the recipe makes enough for the whole family. You can easily cut the recipe in half if there are only 2-3 people.

Ingredients in Raspberry Cheesecake Shakes

You only need a few ingredients for these delicious shakes.

Frozen unsweetened raspberries – You will need a 12 ounce bag and the raspberries need to be thawed. You can do this by placing the bag of frozen berries in the refrigerator overnight, or you can thaw them more quickly by running room temperature water over the sealed bag for a few minutes. You can also use the defrost setting on a microwave for the fastest results.

Cream cheese – Any variety will do. You can use regular cream cheese, low-fat or non-fat. Just make sure the cream cheese is softened to room temperature before using.

Almond extract – If you don’t have any, you can leave it out since it’s such a small amount, but it really does add a nice little extra flavor to the shakes!

Vanilla ice cream – You’ll need a quart of your favorite ice cream. This is equal to about 4 cups or half of a half gallon container of ice cream.

Cream soda – You can replace this with Sprite or 7-Up, but I really like the cream soda best. You need two, 12 ounce cans.

Fresh raspberries and whipped cream for garnish – Definitely not necessary, but makes the shakes really pretty and is easy to do, especially if you use the whipped cream that comes in a can!

HOW TO SOFTEN CREAM CHEESE

You can soften cream cheese by simply letting it sit on the countertop for 2-3 hours, until it comes to room temperature. Using room temperature cream cheese is vital. I don’t know if you are like me but I always forget to take the cream cheese out of the fridge! An easy way to soften the cream cheese is to use the defrost function on your microwave. Place the cream cheese, unwrapped, in a bowl, then select the lowest setting on defrost. Mine usually takes about 45 seconds. That’s it! Then proceed with the recipe.

Lemon Raspberry Lemon Oreo Balls easily come together with only four ingredients and they have the most wonderful flavor! Bite-sized, no bake dessert made with Lemon Oreos and fresh raspberries!

Lemon Raspberry Oreo Balls are one of the easiest desserts ever! I absolutely love recipes that only require a few ingredients and no baking.

Lemon Oreo Balls with fresh raspberry in the middle

I had several friends and family taste test these for me and they all declared them to be absolutely amazing – they were a huge hit! The lemon flavor is so light and refreshing and the raspberry in the middle adds the perfect touch to these little bite-sized treats! If you aren’t a big fan of lemon, you can swap in Golden Oreos for the lemon ones. Or regular Oreos are good too – yep, I’ve tried them here in this White Chocolate Raspberry Oreo Ball recipe.

How to make Lemon Raspberry Oreo Balls

  1. Grind the Lemon Oreos to make a fine powder – I used a blender but a food processor would likely work too.
  2. Mix the Oreo crumbs with the cream cheese, stir until well combined. Scoop out a tablespoonful of the mixture and wrap around a raspberry, shaping into a ball to completely surround the raspberry in the center.
  3. Once all the balls are ready, place them in the freezer for about 20-30 minutes. This will make them easier to dip.
  4. When ready to dip, melt the almond bark in a glass bowl in the microwave in 45 second intervals, stirring in between each interval until smooth and fully melted. Mix in the lemon extract if you want a little bit of extra lemony flavor!
  5. Dip each ball into the melted almond bark and then place on wax paper to set. If desired, sprinkle some decorative sprinkles on top while the almond bark is still wet.
  6. Store in the refrigerator until ready to serve.

HOW DO YOU STORE OREO BALLS?

Oreo balls need to be stored in the refrigerator because of the cream cheese in the recipe. Make sure to put them in an airtight container. Regular Oreo balls can be stored in the refrigerator for 2-3 weeks, but because this kind has fresh raspberries in the middle, they need to be eaten within 2-3 days.

No bake lemon raspberry candy recipe

CAN OREO BALLS BE FROZEN?

Regular oreo balls can be frozen in an airtight container for up to 2 months. Because this version has fresh raspberries in the recipe, I would not plan to store them in the freezer because the consistency of the raspberries will get a little bit mushy when thawed.

HOW DO YOU MELT CHOCOLATE IN THE MICROWAVE?

Melting chocolate in the microwave is easy if you go slowly. Always use a glass or ceramic bowl and chocolate that’s not old. To melt 1 cup of chocolate chips I’d begin with 1 minute in the microwave. After the 1 minute, let chocolate sit for 2-3 minutes. Then, gently stir and see if chocolate begins to melt smooth. If it’s still really solid, add 20 seconds in the microwave, then let it sit again. Often chocolate looks like it’s not melted when it really is, and you don’t know for sure until you gently stir it. If your chocolate melts but it’s too thick to work with, try adding 1/2 teaspoon of coconut oil or shortening, then letting it melt and stirring it in.

HOW TO SOFTEN CREAM CHEESE

Cream cheese is easy to soften – you can set it out at room temperature or soften it more quickly in the microwave.

-To soften at room temperature more quickly, just set the cream cheese on a plate and cut into smaller pieces. The cream cheese should reach room temperature in about 15-20 minutes with this method.

-To soften the cream cheese in the microwave, remove the foil packaging and set the cream cheese in a small bowl or on a plate. Microwave for about 10-15 seconds. If the cream cheese is still cold and hard, continue to microwave for about 5 seconds at a time until the cream cheese is soft throughout. Just make sure not to microwave it too long or it will start to melt!

Raspberry Frosting

Raspberry frosting is definitely one of those frosting recipes that you probably haven’t tried before but I guarantee that you won’t turn back soon after making this recipe! Not only is it easy and delicious, but it pairs well with so many treats!

The raspberry frosting flavor actually acutely reminds me of homemade raspberry ice cream. Yes, I know. I’m drooling, too. 😉

I personally like to add this frosting on top of lemon cupcakes. The flavor combination is out of this world!

Ingredients needed to make Raspberry Buttercream

  • Butter: I use salted butter whenever I make buttercream frostings because I love the depth of flavor that the salt gives. The frosting does not taste salty, but it enhances the sweetness. If you only have unsalted butter on hand, I would strongly suggest adding a tiny pinch of salt to the recipe.
  • Powdered Sugar: This is a must for making homemade frosting, no way to substitute this one!
  • Milk: This is to thin out the frosting, if needed. I used about 1 tbsp. The fat content isn’t as important, anything from skim to whole to half n half would work well!
  • Vanilla: Just a tad!! This is what really gives it that raspberry ice cream taste.
  • Raspberry Jam: Homemade or store bought! I like to purchase the seedless raspberry jam at my local grocery store which yields in a smooth frosting without seeds.

Do I need a mixer to make homemade frosting?

Using a mixer like pictured above definitely makes this recipe much easier and much faster, although it is not required. If all you have is a electric hand mixer, you will be able to successfully make this recipe, too.

If you don’t have either of those, you can use a whisk/ silicone spatula, just make sure your butter is room temperature and soft! You will need to use a bit more milk to be able to work with the frosting, so the taste would still be amazing, it would be hard to get it to piping consistency, though.

How to make Homemade Frosting

Making homemade frosting is a really easy task with my helpful tips! Follow all of these and you will be golden!

  • Use an electric mixer, if possible.
  • Start with room temperature butter, not softened.
  • Cream the butter completely and then start adding in the other ingredients.
  • Alternate adding in the powdered sugar (1 cup at a time) and the liquid, until all of the ingredients have been added. In this case, the raspberry jam is counted as a liquid.

Does homemade frosting need to be refrigerated?

This is a question a lot of people have, the short answer is: no. The long answer is: No, because there is so much sugar in this recipe it stabilizes the small amount of milk that is in the recipe causing it to not spoil.

Once your treat is frosted, it can safely be kept at room temperature for a few days.

How to store Frosting

You can store frosting at room temperature for a few days, but if you are wanting to extend the life of the frosting to about a week or so, I would definitely recommend keeping it in the fridge. Pull the frosting out about 30 minutes prior to using to allow it to come to room temperate. You may need to whip it a little bit with you mixer to achieve the original texture.

  • cakes
  • sandwich cookies
  • brownies
