Reese’s Krispie No Bake Cookies are amazing. Reese’s Peanut Butter Cups.  Rice Krispies.  Chocolate.  Peanut Butter.  No baking involved. Need I say more? Seriously though, these are some of my favorite quick treats to make and they never last very long around my house. This no bake cookie recipe makes about 40 no bake cookies and the whole process only takes a few minutes. Which is a little dangerous because they are so easy to make, and so addicting to eat!

No Bake cookies are wonderful for several reasons:

  • They only take a few minutes to make! No waiting for cookies to bake and then cool before eating. I love making traditional cookies, but sometimes you just don’t have time to make the dough, bake all the cookies and let them cool. If you are making several dozen cookies, this process can take a couple of hours and sometimes I just don’t have time for that! No bake cookies do need to set up for a few minutes before they are ready to eat, but you can eat them immediately if you like them warm and gooey. Traditional no bake cookies require a little bit of boiling and take a little bit longer to make, but this Reese’s version only needs to be heated for about less than a minute – just enough to melt the peanut butter down!
  • There are only six ingredients in this particular version of no bake cookies. I love recipes that only have a handful of ingredients – so easy!
  • You can eat the batter without any worries about getting salmonella! No need to wait for cookies to bake before eating – you can just scoop the mixture straight out of the pan and help yourself to lots of “little tastes” before you even make the cookies.
  • These no bake cookies are the BEST! I have several no bake cookie recipes that are all yummy, but this chocolate and peanut butter version is my absolute FAVORITE – they are SOOO good!

What are the ingredients in Reese’s Krispie No Bake Cookies?

  • 1 cup sugar
  • 1 cup corn syrup
  • 1 1/2 cups creamy peanut butter
  • 4 1/2 cups Rice Krispies cereal
  • 1 cup chopped peanut butter cups (I use the mini ones and cut them into quarters, but you can chop up the larger ones too. )
  • 1/3 cup semi-sweet chocolate chips

How do you make no bake cookies?

  1. Combine the sugar, corn syrup and peanut butter in a saucepan. Stir until smooth over medium heat.
  2. Remove from heat and add the Rice Krispies. Stir until well combined.
  3. Add the chocolate chips and stir well. The chocolate chips will melt and coat the cereal mixture.
  4. Wait 2-3 minutes and then add the chopped Reese’s peanut butter cups. Stir gently just until evenly distributed throughout the mixture. (You want to wait a few minutes before adding the peanut butter cups because you don’t want them to completely melt into the cookies. Just don’t wait too long to add them because the mixture will already begin to set and it will be very difficult to stir! The mixture will still be pretty warm so the peanut butter cups will melt a little bit, but you want to still see larger pieces of them throughout your cookies. Don’t worry about this too much though- they will taste the same no matter how melty they get!) 
  5.  Drop rounded teaspoon sized cookies onto a cookie sheet lined with wax paper. You can use two spoons to do this, or you can use a cookie scoop – it goes so much faster this way and then all of your cookies will be exactly the same size!
  6. Let the cookies set up for about 15-20 minutes at room temperature. If you are in a hurry, you can put them in the refrigerator to set up a little bit faster.

Reese’s Krispie No-Bake Cookies are a delicious, easy, and fast treat to whip up anytime you’re craving the perfect peanut butter/chocolate fix!

Servings: 40 cookies

Ingredients

  • 1 cup sugar
  • 1 cup corn syrup
  • 1 1/2 cup creamy peanut butter
  • 4 1/3 cup Rice Krispies
  • 1 cup chopped Reese’s Peanut Butter cups chopped (I used the mini ones and quartered them but you can use any size)
  • 1/3 cup semi-sweet chocolate chips

Instructions

  1. Melt sugar, corn syrup and peanut butter in a saucepan over medium heat.

  2. Stir until smooth and then remove from heat.

  3. Add the Rice Krispies and stir to combine.

  4. Add the chocolate chips and stir until well mixed. *Wait 2-3 minutes and then add the chopped Reese’s cups, gently folding them in so that you don’t smash them too much.

  5. Drop rounded teaspoons (I used a cookie scoop) of the mixture onto a cookie sheet lined with wax paper.

  6. Let cool and then enjoy!

Recipe Notes

*You want to wait a few minutes before adding the peanut butter cups because you don’t want them to completely melt into the cookies. Just don’t wait too long to add them because the mixture will already begin to set and it will be very difficult to stir! The mixture will still be pretty warm so the peanut butter cups will melt a little bit, but you want to still see larger pieces of them throughout your cookies. Don’t worry about this too much though- they will taste the same no matter how melty they get! 

How long does it take for no bake cookies to set up?

These no bake cookies only take about 15-20 minutes to cool and set up at room temperature, but you can reduce that time by at least half if you let them set up in the refrigerator. Just make sure to remove them from the refrigerator once set – I prefer the taste and texture of these cookies at room temperature. You can definitely eat them while cold though too!

Do no bake cookies need to be refrigerated?

No, these no bake cookies can be stored at room temperature for up to a week as long as they are stored in an airtight container.

Can you freeze no bake cookies?

Yes, no bake cookies can be frozen in an airtight container for up to a month. I actually like the taste of them frozen too! Make sure that the cookies are all completely cooled and set and then freeze them individually (on the cookie sheet or a plate) for about 30-60 minutes before placing all of the cookies in the same container. You don’t want them to freeze together in one big blob!

Are no bake cookies dairy free?

Traditional no bake cookies have milk and butter in them, but this Reese’s version does not. You can also use semi-sweet chocolate chips that do not have dairy in them. Some brands have milk in them, but there are several (like Guittard) that don’t. The Reese’s peanut butter cups in the recipe do have dairy in them though, but if you have a dairy allergy you could leave those out.

What kind of peanut butter is in no bake cookies?

I usually use a creamy peanut butter (like Jif), but I have heard that crunchy peanut butter is absolutely delicious in this recipe as well! I keep intending to try using a crunchy peanut butter or even just add some chopped peanuts to the recipe to add an extra crunch to this no bake cookie recipe.
