No Bake S’mores Bars are made with Golden Grahams, melted chocolate and marshmallows. This delicious no bake dessert recipe comes together in just a few minutes and tastes just like s’mores, without the mess or the campfire!

No Bake S’mores Bars are kind of like Rice Krispie Treats, but you use Golden Grahams cereal as the base for the recipe. Melting milk chocolate chips and marshmallows together provides a wonderful coating for the cereal that tastes just like s’mores. This dessert is so easy to make because you don’t have to bake anything – just let the bars sit for about an hour and then they are ready to eat!

Ingredients in No Bake S’mores Bars

  • 8 cups Golden Grahams cereal
  • 8 cups miniature marshmallows, divided
  • 1 1/2 cups milk chocolate chips
  • 1/4 cup light corn syrup
  • 5 Tbsp butter
  • 1 Tbsp vanilla extract

How to make No Bake S’mores Bars

Butter a 9X13 pan. You can use non-stick spray as well, but I like to use real butter when I make no bake treats. My favorite way to butter a pan is to place my hand in a plastic sandwich bag (like a glove) and put a little bit of butter on the edge where my fingertips are. Spread the butter around the bottom and up the sides of the pan until evenly coated.

Measure the cereal out and place it in a large bowl. In a medium saucepan, heat 6 cups of marshmallows, the chocolate chips, corn syrup and butter over low heat, stirring occasionally until melted. Remove from heat and stir in the vanilla extract.

Add the melted chocolate mixture to the cereal and mix until evenly coated. Let the mixture sit for a minute or two to cool a bit and then stir in the remaining marshmallows. Press the mixture into the prepared pan. Let sit for at least an hour before cutting into bars and serving. Store at room temperature.

How to make the best No Bake S’mores Bars

Here are several tips to make the best No Bake S’mores Bars. They’re simple, but effective!

  1. Make sure to not use stale marshmallows. Seriously. Recently purchased marshmallows work best.
  2. Watch that you don’t overcook. You want to heat the chocolate and marshmallow mixture over low heat just until it is completely melted.
  3. Always remember the butter. The marshmallow-butter combination helps keep the treats soft and chewy, so don’t leave it out or reduce the measurement.
  4. Don’t chill in the refrigerator. Even if you want them to set quickly, I find this just dries the marshmallow treats out more quickly.
  5. Store in an airtight container on the counter top.

S’mores Variations

If you’d like to mix up your S’mores a bit, there are literally endless combinations you can try!

First, let’s talk about the graham cracker/cookie. Here are a few different options for you: Oreo’s, Nutter Butters, Fudge-Striped Cookies, Chip’s Ahoy Cookies. I recently even saw someone making their S’mores with woven BACON if you are really adventurous!

Now, my favorite, the chocolate. Give these substitutions a try: Reese’s, Caramel Ghirardelli Chocolate squares, Rolo’s, Chocolate Chips, Skor Bar. Anything chocolate is just pure magic!

How to Make S’mores in the Oven

To make S’Mores in the oven, first line your cookie sheet with graham crackers. I like to buy the packaged square graham crackers for ease.

You can make one S’more this way or 10 on the same sheet pan!

Place marshmallows on one side of the pair of graham crackers and place chocolate on the other graham cracker, as shown above.

You can use large marshmallows or mini, it all tastes the same. 😉

Broil for 1-2 minutes. Make sure to keep an eye on them! They brown quickly!!

Remove from the oven, match a marshmallow top to a chocolate bottom and create a sandwich. Enjoy, enjoy!

  • 4 graham crackers broken in half
  • 4 large marshmallows
  • 1 hershey’s bar broken into 4 equal parts

Instructions

  • Place the graham crackers on a clean cookie sheet.

  • On half of the graham crackers, place a marshmallow.

  • On the other half of the graham crackers, place a portion of chocolate.

  • Repeat with remaining graham crackers.

  • Broil in the oven for 1-2 minutes, keep an eye on them because the marshmallows will brown quickly!

  • Match a marshmallow top to a chocolate bottom to create the s’more sandwich.

  • Enjoy while warm.

Making a S’mores Dip in the Oven

First, line base of a skillet with chocolate chips, cover with marshmallows. If you don’t have a cast iron pan, any pan/sheet will do. I’ve tried. They all work:)

Then, broil on low until the mallows are magnificently bronzy. You want them to broil low & slow so the chips get melty, too.

Chocolate for S’mores

Like I said before, different chocolate substitutions for s’mores include Reese’s, Caramel Ghirardelli Chocolate squares, Rolos, Chocolate Chips, Skor Bar.

Honestly, you could use any kind of chocolate! Usually chocolate without krispies, crackers or nougat works better.

My personal favorite chocolate for s’mores is dark chocolate, but milk or white chocolate would be delicious too.

Marshmallows for S’mores

The kind of marshmallow you use for your s’more also comes down to what you like better!

In this recipe I used mini-marshmallows, because I think they’re easier to handle and spill over the sides less, but there are many more options!

There are “Stacker-Mallows” which are wide, flat marshmallows made for s’mores. Normal marshmallows, jumbo sized marshmallows, colored marshmallows, special flavored marshmallows, etc! All these will work.

Of all the marshmallows I’ve tried, nothing beats classic marshmallows.

Making s’mores in the microwave works best if you just make one s’more at a time. Assemble the s’more with the marshmallow in between two cookies and place on a microwave-safe plate. Microwave for 30 seconds or until the marshmallow is soft and gooey.

Fudge Striped Cookie S’mores have the perfect balance of cookie, marshmallow and chocolate! Make these s’mores in the oven, microwave or around the campfire!

A couple of years ago, some friends introduced us to an ingenious way of making “s’mores”- all you need is a bag of marshmallows and a box of fudge striped cookies.  That’s it! Fudge Striped Cookie S’mores are so easy to make. The chocolate to marshmallow to cookie ratio is absolutely perfect too which is absolutely crucial for a perfect s’more!

I feel like I’m cheating a little bit in posting this as a “recipe” since it only has 2 ingredients and is so simple, but I wanted to share this idea with everyone since it has become a family tradition in our home!

I absolutely love s’mores, but I only like them when the chocolate is completely melted and that almost never happens when you roast marshmallows in the great outdoors.  You end up with a well roasted marshmallow, cold chocolate and then the graham crackers are always breaking because the chocolate is too hard.

You can make these s’mores the traditional way by roasting marshmallows over a campfire, you can make them in the microwave, or you can use an oven…all of these methods produce the same gooey, delicious results! This is hands down, the easiest way ever to make s’mores!

Ingredients in Fudge Striped Cookie S’mores

  • 6 large marshmallows (the regular large ones or the S’moreMallows)
  • 12 Fudge Stripes Cookies

How to make s’mores in the oven

Place half of the cookies upside down (chocolate side up) on a cookie sheet and then place the marshmallows on top of the cookies.  (I used parchment paper on the cookie sheet to make the clean up easier, but it will work fine without too!)

Top each marshmallow with another cookie right side up and then place in the oven at 300 degrees for about 5-7 minutes.  As soon as the marshmallows are getting soft and melted, they are ready to eat!

Place the roasted marshmallow between 2 Fudge Striped cookies and lightly press together for about 15-20 seconds or until the chocolate on the bottom of the cookies begins to melt a little bit.

What kind of marshmallows work best in s’mores?

Regular large marshmallows work very well in s’mores. Recently, I have loved using the S’moreMallows to make s’mores with and they work so well because they are flat so it makes it easier to balance the top cookie on top of the marshmallow!

If you use the S’moreMallows, just be warned that it is a lot of marshmallow and it will ooze out of the cookies quite a bit when melted. If you don’t want quite so much marshmallow, you can cut them in half. It all depends on how much marshmallow you prefer!
