Chocolate Cream Pie

This is a dessert that is easily “thrown together” yet looks like you baked all day. Just remember it does need 4 hours to chill before serving.

Chocolate Cream Pie Ingredients

1 ready made graham cracker crust
8 ounces soft cream cheese
1/2 cup powdered sugar
1 1/2 cups dark chocolate chips
1/3 cup heavy cream
8 ounce container of Cool Whip

    1. Prebake pie shell according to package directions.
    2. Melt chocolate and cream in the microwave gently until smooth.  Transfer 1/4 cup to a pastry bag or plastic bag to pipe on the top of the pie later.
    3.  In mixer,  beat cream cheese and powdered sugar. Add chocolate ganache and beat gently until combined.
    4. On low, beat in Cool Whip.
    5. Pour filling into crust.

Drizzle the reserved ganache on top and chill 4 hours.  Top with whipped cream and chocolate curls and serve!

Caramel Orange Sea Scallops

These caramel orange sea scallops are amazing…… cooked in a caramel sauce with fresh orange juice, white wine and some cold butter whisked in!!!  Such a fast dinner to prepare on a weeknight yet it will taste like you cooked all day! Impress your family with this…it’s a winner!

Caramel Orange Sea Scallops

Ingredients:

2 tablespoons sugar
1/2 cup white wine
1 large orange, juiced and slice some for garnish
1 lb sea scallops (GREAT from Costco)
1 tablespoon olive oil
salt and pepper
1 tablespoon cold butter

Directions:

Sprinkle the sugar into a small saucepan.

Place the pan over medium-high heat and warm the sugar until it starts to melt and color.

As soon as you see it turn brown, begin to gently swirl the pan.

When the sugar is a deep caramel color, about 3 minutes, stand back and add the white wine and orange juice.

It may bubble and spatter, so watch out.

Turn the heat up to high, stir with a wooden spoon, and boil the sauce until it is reduced by half — you should have about 1/3 cup. Pour into a measuring cup and swirl in the cold butter.  Let sit.

In same pan, heat 1 1/2 teaspoons olive oil and swirl to coat the bottom. Add the scallops (pat dry first), season them with salt and pepper, add a little more oil if needed, and cook for another 1 to 2 minutes, or until the scallops are firm on the outside and just barely opaque in the center — nick one to test. Pour on the orange caramel sauce and stir.  Serve over pasta!  Season with salt and pepper to taste!

Skinny PB&J Parfait

That’s right. It’s ‘Peanut butter jelly time, peanut butter jelly time…’

This is for those of you out there that looove peanut butter and jelly! And trust me, I know there’s a lot of you out there.

This is my fun summer twist on the classic kid friendly sandwich.

It’s super simple, easy to make, and well… it just looks impressive! 

I used a blend of fresh and frozen fruits to make my dreams come true, but you can use both or either. Whatever tickles your fancy! 

By the way, you can even make this ahead and stash it in the fridge for lunch time.

If you’ve got peanut allergies, don’t fret! I’m sure this would work with any sort of nut butter or peanut butter substitute that you would use similarly for the sandwich counterpart.

The Skinny:

Ingredients:
6 Oz. Fat Free Vanilla Greek Yogurt
2 Tbsp. PB2 Powder, Dry (Not Prepared)
1/2 C. Mixed Berries (Frozen & Thawed)
1/2 C. Mixed Berries (Fresh)
2 Tbsp. Granola

Directions:
Get a glass and set it aside.

Combine half of the yogurt with the PB2 powder. Stir until well well combined.

Combine the other half of the yogurt with the frozen berries.

I blended mine in my mini food processor. 

It’s time to layer!

Place the granola at the bottom of a glass, top with the berry yogurt, followed by fresh fruit, and finally the peanut butter yogurt.

Sprinkle a little more granola and berries on top and enjoy!
