Cheesy Hashbrown Breakfast Casserole is one of my favorite easy breakfast casserole recipes, and I’ve tried quite a few! Although this recipe is traditionally served for breakfast, we often have it for dinner at my house – you just can’t go wrong with three kinds of cheese in the same dish! This easy breakfast casserole recipe is one that my whole family absolutely loves and we make it quite frequently.

What type of meat can be used in breakfast casserole?

We usually make this breakfast casserole recipe with sausage but you can also use bacon or ham or all three if you’d like! You can even leave the meat out and add more vegetables. Or leave the veggies out and just enjoy the cheese! Beyond the eggs, cheese and hash browns, the recipe is very versatile and you can customize it however you would like!

Can you make breakfast casserole in advance?

I love breakfast casseroles like this one because you can assemble everything the night before, leave it in the refrigerator and then bake it first thing in the morning. This way you get a few extra minutes to sleep in and you can still enjoy a delicious breakfast! Just make sure to cover the prepared casserole with foil or plastic wrap before storing in the refrigerator.

What types of cheese are in Cheesy Hashbrown Breakfast Casserole?

This breakfast casserole recipe calls for cheddar cheese, cottage cheese and Swiss cheese. There have been times where I haven’t had Swiss cheese on hand so I’ve used more cheddar instead and I have swapped in some mozzarella before too – it’s all delicious!

What are the ingredients in Cheesy Hashbrown Breakfast Casserole?

-1 pound sausage, bacon or ham

-1 medium onion, diced

-6 eggs, lightly beaten

-4 cups frozen shredded hash browns

-2 cups cheddar cheese, shredded

-1 1/2 cups cottage cheese

-1 1/4 cups Swiss cheese, shredded (if you have sliced Swiss on hand, you can just tear it into small pieces)

How do you make breakfast casserole?

If you are using sausage as your meat, cook the sausage and onion together in a skillet over medium heat until the sausage is fully cooked. I

f you are using bacon, cook the bacon in a skillet or in the oven and then add a tablespoon of the bacon grease to the onions and cook them over medium heat for about 3-4 minutes. When the bacon is cooled, crumble it into small pieces.

If you are using ham, just make sure it is cut up into small pieces.

In a large bowl, combine the beaten eggs, hash browns, cheddar, cottage cheese and Swiss. Add in the breakfast meat and onions and stir until everything is well combined. You can just add the hash browns completely frozen, right out of the bag – super easy!

Pour the mixture into a 9X13 pan and bake at 350° for about 35-40 minutes.  Let the casserole stand for about 10 minutes before cutting and serving.  Enjoy!

Ingredients

  • 1 pound sausage you can use bacon or even ham instead
  • 1 medium onion diced (I used about 1/4 cup of minced dried onions)
  • 6 eggs lightly beaten
  • 4 cups frozen shredded hash browns
  • 2 cups cheddar cheese shredded
  • 1 1/2 cups cottage cheese
  • 1 1/4 cups Swiss cheese shredded (I only had slices so I tore them into small pieces)

Instructions

  1. Cook sausage and onion until sausage is fully cooked.

  2. Combine the remaining ingredients in a large bowl and then add the sausage/onion mixture.

  3. Pour the mixture into a 9X13 pan and bake at 350 for about 35-40 minutes.  Let the casserole stand for about 10 minutes before cutting and serving.  Enjoy!

Is breakfast casserole gluten free?

Hashbrown breakfast casserole is gluten free. Many breakfast casserole recipes use bread in them, but this recipe only requires frozen hash browns which are made out of potatoes which do not contain any gluten. This breakfast casserole s a wonderful option for those looking for gluten free breakfast recipes!

Is breakfast casserole healthy?

Breakfast casserole has 20 grams of protein per serving when made with sausage, and has a good balance of carbs, proteins and fats. This breakfast casserole recipe has less fat than others because a large portion of the cheese comes from the cottage cheese which contains less fat than other types of cheese, especially if you use a low-fat or non-fat cottage cheese.

Another way to make breakfast casserole a little bit healthier is to add vegetables. Diced peppers, broccoli, spinach, and tomatoes are all wonderful in this easy breakfast casserole recipe.

What do you serve with breakfast casserole?

Breakfast casserole is a great one-dish meal because it includes meat, potatoes and possibly vegetables all together! I usually serve breakfast casserole with some type of fruit – grapes, cantaloupe, honeydew, pineapple or any type of berry pairs very well with this easy breakfast casserole. Sometimes I just make a fruit smoothie or a green smoothie and serve that with a slice of casserole for a hearty and nutritious (and super easy!) breakfast that my whole family absolutely loves!

How do you store breakfast casserole?

Any leftovers can be stored in the refrigerator for 3-4 days after the breakfast casserole has been cooked. To reheat the leftovers, just place individual servings in the microwave for about 45 seconds or until heated all the way through.
