HALLOWEEN PEANUT BUTTER COOKIE PIZZA

Halloween Peanut Butter Cookie Pizza is made with a delicious peanut butter cookie crust that is topped with marshmallows and Reese’s Pieces and then drizzled with chocolate, caramel and orange icing! The perfect Halloween dessert!

Halloween Peanut Butter Cookie Pizza is a favorite treat around our house, and not just at Halloween, although the colors work perfectly for this holiday in particular. This recipe is super easy to adapt to personal tastes, holidays, etc. so feel free to swap out the Reese’s Pieces for holiday M&Ms or even just plain chocolate chips and of course you could use any color/kind of drizzle you’d like!

I started with a peanut butter cookie crust using my absolutely favorite Peanut Butter Cookie recipe ever. I swapped out the chocolate chips in that recipe for Reese’s pieces because there is no such thing as too much peanut butter and I wanted the festive fall colors!

This recipe makes perfect cookies every single time (and trust me, I’ve made them dozens of times!), but I was a little nervous that one big cookie wouldn’t bake quite as well. I couldn’t believe how well the cookie turned out! Even when baked as one large cookie, this recipe still yielded a perfect, soft consistency and baked evenly. Plus, it is so much easier and faster than making individual cookies and waiting for multiple batches to bake!

How to make Halloween Peanut Butter Cookie Pizza

  1. With a hand mixer, cream together the peanut butter, butter, white sugar and brown sugar until blended.  Beat in the egg, milk, and vanilla.
  2. Combine the flour, baking powder and salt in a separate bowl.  Add flour mixture to the peanut butter mixture and mix together. Stir in the Reese’s Pieces, saving a few to sprinkle on the top later.
  3. Press the cookie dough into a well-greased 14″ pizza pan until the dough is evenly distributed. At this point, sprinkle the remaining Reese’s Pieces on top. Bake for about 11 minutes at 375° and then remove from oven. Sprinkle the marshmallows on top and return to the oven for about 5-6 minutes or until the marshmallows are very lightly browned. Cool completely before preparing the chocolate and orange drizzle.
  4. To prepare the chocolate drizzle, place the chocolate chips and shortening in a small glass bowl and microwave for 30 seconds. Stir and microwave at 15-second intervals, stirring each time until completely melted and smooth.
  5. To prepare the orange drizzle, stir together the powdered sugar with the water (or milk) in a small bowl until well blended and then add the food coloring, mixing until color is uniform.
  6.  Drizzle the chocolate and orange drizzles on top of the cookie. Drizzle caramel topping if desired. Sometimes I just use a spoon to drizzle, or you can also use place the drizzle mixtures into small sandwich bags, snipping a small corner at the bottom to squeeze the drizzle out of.

*Every time I have made this peanut butter cookie recipe, I have used a regular creamy peanut butter (like Jif or a store-brand alternative). Several readers have commented that the cookies do not turn out as well when using a natural peanut butter.

How do you make homemade peanut butter cookies?

Making homemade peanut butter cookies is easy! Here are a few tips to making the perfect peanut butter cookie!

  • Make sure you use softened butter – DON’T melt it! One of the most common errors in cookie making is using butter that is either really cold and hard, or using butter that is too warm and melted.
  • Most cookie recipes require that you mix the dry ingredients separately before adding the wet ingredients. This is an important step! And be sure not to over mix the dry and wet ingredients together. Just mix until combined and then stop!
  • Use regular peanut butter like Skippy or Jif. Even if you prefer a very natural peanut butter for eating, the natural peanut butters don’t work as well in this peanut butter cookie recipe.

How do you soften butter to room temperature?

The best way to soften butter is to set it out for a few hours before you make your cookies. Since most of us (or maybe just me!) aren’t that prepared or don’t think that far in advance, there are a few tricks to softening butter perfectly in just a matter of minutes. My favorite way to soften butter is in the microwave. It’s definitely fast, but you do have to be very careful not to melt it. Just put the whole stick of butter in the microwave (as long as it isn’t wrapped in foil!) and microwave for about 6-7 seconds. If the butter is still really cold, try another 5-7 seconds and check it again. You may need a few intervals, and if the butter is starting to feel soft, you can shorten the final interval to just a few seconds to make sure it doesn’t start melting.

actually prefer to use the defrost setting on my microwave – I don’t know exactly what that mode does differently, and it takes a little bit longer (closer to 30 seconds), but it seems to be easier to get the butter to soften without melting.
