Savory pie Artichokes, ricotta and speck: savory pies are always a good idea for a quick preparation using what is in the fridge, perfect for a spring picnic, for Easter Monday and there is the possibility to put in whatever we prefer. You can use the puff pastry as in this case or the shortcrust pastry.

Ingredients for a 22-24 cm cake pan

  • 5 artichokes
  • 450 grams of ricotta
  • 150 gr of cheese (Asiago or scamorza)
  • 2 tablespoons of grated Grana
  • 3 slices of speck
  • 1 egg
  • salt and pepper

Clean the artichokes: first of all we put on gloves or rub our hands with a lemon to prevent them from blackening when handling the artichokes.

We remove the hardest outer leaves, cut the outermost part of the stem so as to leave only the tender part. We cut the tips of the leaves of the artichokes that are generally harder and sometimes even have thorns. First cut the artichoke in half, remove the internal “beard” with a teaspoon, then cut the artichokes into slices and put them in water and lemon (to prevent them from blackening).

Drain and rinse the artichoke slices and put them in a pan with a little oil and half a glass of water, cook covered for 15 minutes.

While the artichokes cool, prepare the cream by placing the ricotta, egg, salt, pepper and grated Grana in a small bowl. We mix and add the speck cut into strips and the artichokes, leaving some aside.

Spelled salad: A fresh first course (or single dish), ideal for a summer lunch, topped with celery, raisins, Grana and almonds. A mix of flavors that combine perfectly with each other for a fresh and delicious dish. Also perfect for the lunch box to take to the office!

Ingredients for 4 people

  • 300 gr of pearl spelled
  • 3 sticks of celery
  • 3 tablespoons of sultanas
  • 40 gr of almonds
  • flakes of Grana Padano
  • 3-4 tablespoons of extra virgin olive oil
  • Salt to taste.

  1. We wash the pearl spelled under running water, drain and pour in boiling salted water for the cooking time indicated on the package (generally 20 minutes).
  2. Meanwhile, put the sultanas in water, soak them for 20 minutes.
  3. We wash the celery stalks and cut them.
  4. We chop the almonds coarsely.
  5. Drain the spelled at the end of cooking and give it a quick rinse under cold water.
  6. We pour all the ingredients in a salad bowl (Spelled, raisins, celery, almonds)
  7. Season with extra virgin olive oil and add the flakes of Grana Padano.
  8. We serve at room temperature or cold.

Homemade Amuchina type hand sanitizer: always needed outside the home if you need to wash your hands. In recent days, with the Corona Virus health emergency, hand disinfectants are nowhere to be found, supermarkets and various shops do not have them and whoever has them sells them at an unreasonable price! But it is possible to prepare a hand sanitizer at home with very few ingredients: on the World Health Organization website there are the quantities, the ingredients and the procedure to prepare an alcohol-based hand sanitizer (just like Amuchina gel ). The only difference is that the consistency is not gelatinous but liquid. It is important to tightly close the cap of the bottle used to avoid the evaporation of alcohol and consequently the ineffectiveness of the product.

ATTENTION: it is an alcohol-based product so all the necessary precautions and precautions must be taken:

  • Keep out of reach of children
  • do not drink the product
  • do not inhale
  • avoid contact with eyes if wash them immediately and for a long time with fresh water
  • the product is flammable, keep it away from heat sources and avoid prolonged exposure to the sun.

NOTES: I used the procedure found on the WHO website, and this product was created with the idea of ​​being used in disadvantaged areas of the world, for health workers who need more thorough disinfection. It is useful in all situations where there is no way to find soap and water

Ingredients for 200 ml

  • 166 gr of ethyl alcohol (96%) for food use
  • 8 gr of hydrogen peroxide
  • 3 gr of glycerine
  • 23 gr of distilled water (or boiled water and left to cool)

How to prepare the hand sanitizer with the official WHO recipe:

  1. If you use distilled water skip this step. If you use tap water, then bring it to a boil, turn off the heat and place it in a clean glass container (even a glass) cover it with cling film and let it cool to room temperature. Keep the water aside.
  2. Use a container practical clean for use outside the home (an emptied bottle of water, or if you prefer a spray bottle, if it had other products inside, wash it well and / or sterilize it in boiling water).
  3. Proceed with the preparation. Weigh the various ingredients and pour into the bottle that will contain the hand sanitizer beforealcohol, then thehydrogen peroxide, then the glycerine -I used a new syringe to take the 4 g of glycerin- (as seen in the video). Finally, thewater (distilled or previously boiled and left to cool).
  4. close the cap and mix the ingredients.
  5. on the WHO website we recommend wait 72 hours before use, the hydrogen peroxide is thus able to neutralize the bacterial spores potentially present in the bottle and / or in the water. I think it is a warning linked above all to the places where this hand sanitizer is most used (Africa and disadvantaged areas of the world, where perfectly clean water and products are quite difficult to find). If you are using sterile products and containers, I believe this step can be skipped.
  6. Close the bottle well because the alcohol content is very volatile, evaporating the hand sanitizer would lose its effectiveness!
