Cucumber and Tomato Salad Ingredients

Here’s what you’ll need to make this simple salad:

–2 cups grape tomatoes sliced in half- in a pinch you can use any tomato, cut small and seeded

–2 cups cucumber, diced in quarters- I love using an English cucumber or those small cocktail cucumbers as I like the crunch with less seeds

–1/2 red onions, sliced

–1/4 cup fresh basil, sliced- do your best to get fresh basil! It has an incredible flavor and makes such a difference

–1/4 cup feta cheese

–3 tbsp balsamic vinegar

–1 tbsp olive oil

–salt and pepper to taste

How to make Cucumber and Tomato Salad

To make this simple salad side dish start by dicing the grape tomatoes in half and place in a salad bowl. Peel the cucumber and slice in half and then slice those halves in half again. Then slice each of those quarters into bite sized pieces.

When slicing the onions, I like to slice them pretty thin, so they don’t overpower the salad. The fresh basil is really the best part of this salad in my opinion. You can really add as much or as little as you like.

The best way to slice basil leaves is to pile the leaves on top of each other, roll them up and then slice with a sharp knife into thin strips.

In a separate bowl combine the olive oil and balsamic vinegar. Combine all the the sliced vegetables in a salad or large bowl. Pour over the balsamic and olive oil and season with salt and pepper.

Sprinkle with the feta cheese crumbles and serve chilled.

Can I make Cucumber and Tomato Salad ahead?

This salad is so easy to make ahead. I would not make it any more than 24 hours in advance of when you need it.

To make this salad ahead combine the sliced vegetables, vinegar and oil and place in an airtight container in the refrigerator until you are ready to serve. Just before serving add the feta cheese.

How to store leftovers

If you have any of the salad left over. Store in an airtight container in the refrigerator for up to 2 days. Any longer and the vinegar will begin to pickle all of the vegetables.

While I might be biased toward this recipe, I think it’s simply the best French Bread recipe ever (and trust me, I’ve been looking!) When you figure out how to make French Bread from scratch, you’ll wonder why you hadn’t tried it sooner. With soft bread on the inside and a chewy outer crust, you have the perfect classic French Bread recipe for meeting all of your bread eating needs.

There are several steps in the recipe, but they’re quick and easy!

How to Make French Bread at Home

French breads are simple by nature, but until I found this recipe on a blog called Jamie Cooks It Up I had been looking for the perfect french bread recipe. Everything was off in one way or another and seemed to be more work than they were worth.

I recommend reading the instructions a few times before starting just because there are a lot of steps and it helps you to stay focused (especially the first time you make this recipe).

The recipe for this homemade french bread is vegan but the egg wash used to help get the crust a beautiful shade of brown is obviously not. You’ll need to use cooking spray or some other vegan alternative for the egg wash.

French bread is often used as a side dish besides a hearty soup, just cut a slice and lather on some spreadable butter and you have yourself a tasty treat. You can also use it for french bread pizza instead of pizza crusts, or turn the stale loaves into bread pudding. There are a lot of great options out there besides soup and sandwiches, but eating fresh and warm French bread straight out of the oven is a good enough reason for me!

-1 cup boiling water

-1 cup cold water

-1/3 cup warm water

-1 TBSP yeast

-5 – 6 cups white all purpose flour {I used bread flour}

-1 egg

Here’s how to make this French Bread recipe:

Dissolve Yeast

Place 1 cup of hot water in the microwave for 3 minutes to get it boiling.

In another container, dissolve the yeast into the warm water (not the boiled water!) Stir it around until it is all mixed.

Combine the salt, shortening, and sugar in the bottom of your stand mixer with a fork.  {I used my whisk attachment on high. It took about a minute and was perfect.}

Next, pour the boiling water over the shortening mixture. Mix slightly to combine.

After that, pour in the cold water and turn the mixer on low.

Then pour the warm water and yeast into the mixer bowl.

Begin to add the flour, one cup at a time, until the dough pulls away from the side of your mixer. Add the dough enhancer at this time, along with the flour. The dough should be balmy but not sticky.

Then let the dough mix on high for 8 minutes.

First Rise

Turn the mixer off and remove the dough hook. Let the dough rise in the mixer for about 20 minutes. {This step can actually be skipped if you are in a hurry, but I recommend it as it allows the dough the chance to rest and improves the flavor and texture.}

Separate the dough into two parts and place them on a large jelly roll pan sprayed with cooking spray. Let the dough sit for about 5 minutes. Letting it sit will make it MUCH easier to shape into loaves.

Spread the dough out with your hands. Stretch it slightly until you have an oval about 1″ in thickness. Roll the dough up into a log shape. Take the ends of the log and fold them into the middle, with the ends touching. Turn the loaf seam-side down onto a greased pan. I used my french bread pans, but you could also use a jelly roll pan. Repeat with remaining dough.

Using a sharp knife, quickly cut 3 diagonal slits into the top of each loaf.

In a small bowl, whisk the egg until frothy. Cover the loaves with egg wash, making sure to get it in each slit.

Second Rise

Place the loaves in a warm 170 degree oven and let them rise for about 15 minutes.

Turn the oven up to 400 degrees and then re-set your timer for 15 minutes. {Leave the loaves in while the oven increases in temperature.}

Turn the oven down to 350 degrees and turn the pan around in the oven. Bake for another 10-12 minutes, until the loaves are a nice golden brown. If you prefer crustier loaves, mist the outside with water a few times during the final 10 minutes of baking. Enjoy!

Can French Bread Be Frozen?

Yes, you can freeze your French Bread for up to 3 months if you keep them in an airtight container or keep them well wrapped. Just thaw them at room temperature for a few hours and pop them in the oven to warm up to help recreate the fresh from the oven feel you got when they were newly baked.

How Long Will French Bread Stay Fresh?

If left at room temperature and kept well covered and wrapped, your french bread can be expected to last up to 3 days. Just make sure to keep it on the counter/room temp or in the freezer because placing your bread in the fridge will cause it to lose moisture and dry out faster.

Lemon Raspberry Muffins are one of my absolute favorite muffin recipes at my house…and we love muffins! They are delicious, but also pretty healthy with a few substitutions.  I like the lemon taste because it is very subtle, but if you aren’t a fan of lemon, it is very easy to use whatever flavor of yogurt you prefer. If you prefer a stronger lemon flavor, just add a teaspoon of lemon extract to the batter, and/or a little bit of lemon zest as well!

How do you make the best muffins?

One tip for success with muffins of nearly any kind is to only mix the batter until combined. Over mixing really affects the light, fluffy texture muffins have. Also, if you want perfectly domed muffins, increase the baking temperature 25 degrees for the first 5 minutes, then decrease temp to 400 and bake an additional 10-12 minutes.

Are lemon raspberry muffins healthy?

Muffins are generally not considered a health food, but with a few little swaps, these muffins are actually pretty healthy!

-The muffins have yogurt in them and if you use a high-protein Greek yogurt, it adds quite a bit of protein to the recipe.

-You can swap in applesauce for some or all of the oil in the recipe and the muffins are still delicious. They won’t be quite as light and fluffy, but the taste is still amazing.

-Swap in wheat flour for some or all of the white flour. The more you swap out, the more the taste and consistency will be affected.

-Leave the streusel topping off to avoid the extra sugar and calories.

6 oz lemon yogurt (I used Greek yogurt in this batch and it worked well – use whatever flavor you want!)

2 eggs

1/2 cup sugar

3/4 cup oil (I always substitute at least 1/2 of this amount with applesauce, sometimes all of it.  If you replace all the oil with applesauce, it will make them more dense and a little chewy but they are still delicious)

2 cups flour (I often replace half of this amount with whole wheat flour)

2 tsp. baking powder

1/2 tsp. baking soda

1 cup fresh or frozen raspberries (I used a 6 oz container of fresh raspberries)

  • 1/3 cup sugar
  • 1/4 cup flour
  • 2 Tbsp. cold butter

How to make Lemon Raspberry Muffins

In a large bowl, mix yogurt, eggs, sugar and oil. In a separate bowl, mix together the flour, baking powder and baking soda.

Add the dry ingredients and stir just until mixed.

Fold in raspberries and fill muffin tin cups 3/4 full.  (This recipe makes about 18 regular sized muffins.)

To make streusel, use a pastry blender or a fork to mash ingredients for several minutes, until butter is well incorporated and the consistency more like crumbles than sand.

Sprinkle topping over batter and bake bake muffins at 400° for 18-22 minutes or until a toothpick inserted in the middle comes out clean.

CAN LEMON MUFFINS BE FROZEN?

I love freezing lemon muffins! How you prepare the muffins for freezing really depends on how long you intend to keep them frozen. If you just want to freeze them for a week or two, I’d wrap them in plastic wrap or foil and place the muffins in a large freezer ziplock bag. If you want to freeze them for 2-6 months, I’d wrap them more securely, making sure each muffin is airtight by wrapping it in a double layer of foil or plastic wrap, then place it in a ziplock bag.

USING CAKE FLOUR IN BAKED GOODS

Here is a fun tip I found for future muffins I make! Did you know that cake flour is excellent for baking cakes and other baked goods that have a high amount of sugar? Try it in cupcakes, muffins, and even cookies! Why use cake flour instead? One of the reasons is that the lower protein means that the flour forms less gluten as you work with it, which in turn keeps baked goods light and airy. Who knew, right? You don’t have to use cake flour in this recipe(and many times I don’t), but it is easy to do and you may find you like your baked goods better with cake flour!

HOW DO YOU MAKE CAKE FLOUR FROM ALL-PURPOSE FLOUR?

  1. Measure out the amount needed for your recipe.
  2. For every 1 cup of flour remove 2 Tbsp of flour.
  3. Now add 2 Tbsp of Cornstarch for every 1 cup of flour. (replacing the tablespoons of flour taken out).
  4. Sift 5-6 times and it’s ready-to-use cake flour.
